When my body is tired and achy, or Im feeling a bit under the weather, I always throw together a big pot of this Homemade Chicken Noodle Soup. The aroma that fills my house as it cooks is absolutely soothing to the soul, and the from scratch flavor just cant be beat. Theres no bouillon here folks, because this chicken broth is the real deal. But dont worry, despite being made from scratch, this surprisingly simple and easy recipe makes the BEST homemade chicken noodle soup with very little hands-on time!

Herb Packed Chicken Noodle Soup

Chicken Noodle Soup is healthy, satisfying, and tastes incredible. All those bits of fresh herbs, carrot, celery, and onion are a great source of vitamins C and K, as well as other antioxidants and minerals. A delicious way to load up on nutrients and increase hydration.

With Thats Tasty fresh herbs, this recipe comes together quickly and easily, so you and the family have more time to savor the flavor.

Ingredients Needed To Make This Recipe

We will be using a long list of veggies paired with a bunch of seasonings for a soup full of flavor and heartiness! The veggies are flexible, so feel free to mix and match amounts and types if youre trying to use up what you already have.

  • Chicken: Start with 1 whole chicken. It should be around 3.5 to 4 lbs and will contribute to 10 1 cup servings of soup!
  • Butter: Next, you will need 2 tbsp of butter. You can use olive oil if preferred.
  • Veggies: For the veggies, prepare the following: 1 large onion, 5 stalks of celery, 5 large carrots, and 2 large parsnips. These load up the soup with bulk and flavor!
  • Garlic: Season the soup by including 5 cloves of minced garlic. If you dont have fresh cloves, you can use 1 1/4 teaspoons of garlic powder.
  • Chicken broth: Bulk up the soup and add liquid with 4 cups of chicken broth.
  • Water: Do the same with water, and add 8 cups.
  • Seasonings: Seasonings are everything in chicken noodle soup! Add 1/4 cup of fresh, chopped dill, 1/4 cup of fresh, chopped parsley, 2 tsp of celery salt, and 1 tsp of pepper.
  • Lemon juice: 2 tsp of lemon juice will add a dash of zingy flavor.
  • Salt & pepper: Add extra salt and pepper to taste after simmering. I typically find that another 1/2 tsp or more of each does the trick!
  • Egg noodles: As for the noodles, use 10 oz of your favorite egg noodles.
  • Corn or peas: Last but not least, include 1 cup of either frozen corn or frozen peas!

  • Cook the Chicken: In a large soup pot, combine water, Chicken Broth, and salt. Bring to a boil then add chicken thighs and cook uncovered 20 minutes.
  • Saute Veggies: In a large skillet saute onion and celery in oil until golden then add to the soup pot
  • Add Noodles and Veggies: Add 1/2 lb pasta and sliced carrots to the pot and cook 15 min at a low boil.
  • Shred Chicken: As the pasta cooks, remove thighs from the pot and shred with forks , then add the chicken back to the pot.

    If you have time on your hand and you are ready to try something new, we have the perfect way to make homemade chicken noodle soup. Some good chicken soup traits include a comforting smell, variety of flavours and a balance of noodles, chicken and vegetables.

    Start by getting a soup pot and placing it over medium heat. Add in either butter or oil to brown the chicken. For the chicken pieces, the best flavour is provided by the thigh pieces but breast pieces can also be used. After the oil has simmered or butter has melted, put the chicken in it and cook it until the skin has browned.

    Mix in chopped onions and garlic and cook it for some minutes. Take carrots and cut them into round shapes. Next, take celery and slice it thinly. Add these in the pot along with either fresh or dried thyme leaves. Sauté these vegetables for a few minutes.

    Add chicken broth and to add colour to the soup, mix in some turmeric as well. Cover the pot with its lid and let the soup simmer. If I dont have chicken carcasses, I simply make Boiled Chicken giving me a rich flavorful broth as well as tender and juicy meat to add to the soup. The flavor of a homemade chicken broth tastes best in this recipe but store bought works if its all you have on hand!

    I always start with onion/carrot/celery but you can really use any vegetables in this recipe. If youre using frozen veggies, just cook them for a minute or so longer so they have the chance to cook properly.

    When making homemade chicken noodle soup, I most often use leftover chicken that I already have on hand but you can use rotisserie chicken or even quick poached chicken!
