In a large stockpot, melt butter over medium heat.
Add celery and onion and cook in the butter until softened.
Add the garlic powder and paprika.
Add the broccoli.
Pour over the stock.
Cover and simmer until broccoli is tender .
If you want your soup chunky, remove about a cup of broccoli with a slotted spoon and set aside. To make the soup extra thick, before adding the cheese I ladle out stock until it just covers the broccoli.
Reduce heat, and add the cheese.
Allow cheese to melt into the soup.
Using a stick blender, blend until smooth.
Stir in the broccoli that was removed earlier. Serve and enjoy.

Can You Buy Keto Broccoli Cheese Soup
The only keto-friendly brand that I have found is Kettle & Fire. It is tough to find in stores, but you can get it from Amazon. I have tried it, and while it isn’t as good as homemade, it is delicious, and I try to keep it in my pantry at all times. It has saved me when the fridge and freezer are bare, and the only thing I am seeing is my kids’ snacks.

How To Make It
Saute the onions. Melt the butter over medium-high heat in a large soup pot. Once the butter is melted, add the onions and cook for about 4 to 5 minutes are until they are softened. Add in the garlic and cook for one more minute.
Cook the soup. Reduce the heat to medium and pour in the chicken broth and heavy cream. Mix together and bring the soup to a simmer.
Blend it. Add 1/2 of the broccoli and let cook for 10 minutes, then use an immersion blender to blend the soup.
Add the cheese. Add the cheddar cheese stirring until the cheese is fully melted and smooth.
Finish it up. Add the remaining broccoli and continue to cook over low heat for 20 minutes until the broccoli pieces are tender.

I love being able to freeze soups, it really comes in handy when you need a quick meal and you dont feel like cooking.
Instructions: To freeze your homemade broccoli cheddar, let it cool completely first. Then transfer it to either Ziploc bags, or freezer containers, then pop into the freezer.
I personally like using Ziploc bags because the store nice and flat in the freezer and dont take up too much space.

Now, Ill show you my step-by-step process for how to make vegetable soup on the stove. Its super fast!
To start, saute some onions and bell peppers in olive oil until they are nice and soft. The onions should start to brown a bit. Feel free to saute to your liking! I like them nice and browned, to the point where the onions are starting to caramelize.
Add the minced garlic and saute for a minute longer, to let the flavor develop.
Add the rest of the soup ingredients cauliflower, green beans, canned diced tomatoes, broth and Italian seasoning. Stick a couple bay leaves in there, too, along with salt and pepper.
PRO TIP: You can use any broth you like! I prefer the flavor of chicken broth, which saves on carbs, but if thats not a big deal, vegetable broth makes this a low carb vegetarian vegetable soup recipe .
Bring the soup to a boil, cover, and simmer for 10 to 20 minutes, until the veggies are soft. I love that this is so quick!
