I used to buy canned mushroom soup for years and never thought about it. I enjoyed it for lunch or dinner and never thought of making it at home.

What a game-changer it is!

Not only we get rid of all those unnecessary ingredients like wheat flour, tons of added sugar, and a few more extra processed, but it is extremely easy to whip up. Id say this low carb vegetarian soup its a million times creamier and flavorful, if not even more!

  • Infuse the butter and oil over medium heat with garlic, onion, and herbs. Then sautée the sliced mushrooms for a few minutes, so they soak up all that garlic butter flavor.
  • Add white wine, broth, sprinkle with a thickener agent, and simmer for about 15 minutes. Reduce the heat and add heavy cream.
  • Optional: Puree the soup to get the desired consistency.
  • Season with salt and pepper to taste and serve with a thick buttery slice of keto bread.

    How To Make Crab Soup

    To begin, melt the butter in a medium saucepan over medium-low heat, then add the flour.

    Whisk for about 1 minute, until well blended.

    Whisking constantly, gradually add the half & half.

    Add the mustard, Old Bay, salt, and pepper. Bring to boil, whisking frequently .

    As soon as the soup starts to boil, reduce the heat to a simmer. Cook, uncovered, until thickened, about 30 seconds.

    Stir in the sherry and crabmeat. Taste and adjust seasoning if necessary.

    If the soup is too thick, add water, little by little, to thin it out . Ladle into bowls and sprinkle with chives. Serve with lemon wedges, if desired.

    When I started the keto diet creating low carb homemade soup staples was not on my radar, but after the official food boredom kicked in, I knew I had to do something to re-create my childhood favorites without sacrificing my weight loss.

    Keto Cream of Mushroom soup seemed like a logical place to start! Full disclosure: this recipe was inspired by Dinner With JuliesCream of Mushroom Soup with Buttered Crackers recipe!

    I knew if I recreated it & made it low carb & keto-friendly, I could use it in casseroles as a keto swap & liberate myself from I Cant Eat That syndrome!

    Since I dont enjoy working in the kitchen all day, I made this low carb, keto mushroom soup recipe as easy as possible without sacrificing the flavor.

    Oh, and did I mention it only has 4.4 Net Carbs?

    What Are Baby Bella Mushrooms

    Creamy Keto Mushroom Soup

    Baby bella mushrooms are Italian portobello mushrooms, smaller in size than the portobello mushrooms we have in the US. Technically, baby bellas are cremini mushrooms that have been allowed to mature longer. They have a deeper earthier flavor when compared to white button and have an added richness.

    This recipe calls for the large portobello mushrooms and the baby bella mushrooms. However, if you cannot find the baby bellas, you can substitute with white button mushrooms.

    How To Make Cream Of Mushroom Soup

    Dice the onion and slice the mushrooms.

    Add 1 tbsp of non-dairy butter. Melt the butter.

    Saute the onions and mushrooms until they are translucent and the mushrooms are browned about 10 minute on medium.

    Add 1 cup of almond milk.

    Then, add 2 cups of bone broth.

    Add 1/4 cup of almond flour and mix in.

    Bring the soup to a boil.

    Lower the soup and keep simmering until it reduces by half.

    Served with fresh cracked black pepper and if you have fresh thyme on hand, you can use it to garnish.

    Notes: You can use xanthan gum to thicken the soup quicker.

    Also, if you are using the mushroom soup where it needs to be blended, you can use an immersion blender to mix up the mushroom soup. Then use a mesh strainer or cheese cloth to remove any bits of unblended mushrooms.

    You can make this a vegan cream of mushroom soup by using vegetable broth rather than bone broth.

    Low Carb Mushroom Soup In The Instant Pot

    Put the pressure cooker on the Sauté setting. Add the onion, celery, thyme and bay leaf and cook for a couple of minutes. Add the chopped mushrooms and garlic and cook for 5 minutes until tender and lightly browned. Stir regularly.

    Pick out about ¼ cup of mushrooms and place to one side for the top.

    Pour in the chicken broth. Put the lid on the Instant Pot and seal. Select manual and set the timer to 5 minutes. The pot will take a few minutes to come to pressure.

    When the cook cycle has ended, allow the pot to sit for 10 minutes, Then turn the knob and do a quick release of the remaining steam.

    Add the cream and proceed as per recipe.

  • Prep Chop the mushrooms and melt the butter in a saucepan.
  • Saute Add in the garlic and minced onion. Saute for 2 minutes. Add in the mushrooms and cook for about 4 minutes.

  • Thicken Add in the xanthan gum and cook for about 4 minutes, consistently stirring until thickened.

    If you look into the nutritional facts table, there are 6 grams of net carbs per serving of 30 crackers or 28 grams, which can be incorporated into a low-carb diet.

    But, there are also some ingredients such as modified wheat starch, wheat flour, and wheat gluten, that are not strictly ketogenic, and therefore, the Thinables Flatbread Crackers are not keto-friendly.

    How To Make She Crab Soup

    Since I wanted this she crab soup to be fast and easy, so Ive used canned lump meat crab from the seafood counter of my grocery store, and bottled clam juice in place of fish stock. If you can find fish stock, substitute that for the bottled clam juice and chicken stock.

    Many recipes start with a thicker bechamel sauce, but I prefer a lighter soup. Rice is traditionally used in bisques as a method of thickening, which also makes this soup gluten free. Surprising, this is a very rich soup, yet uses only a bit of heavy cream at the end.

    Start with finely diced vegetables. These will be cooked and then pureed with the stock. The pureed vegetables will give the soup base flavor and body. Deglaze the pan with the white wine. Add tomato paste and stir until blended.

    Add seasoning. Old Bay seasoning will give it a bit of a kick. Add more if you like. After the vegetables are tender, remove the soup from the heat and blend the base in a blender. You can use a immersion blender, but I find that a blender makes a much smoother soup. A word of caution when blending a hot soup. Only fill the blender jar up about 1/3 of the way.

    Then cover the lid with a towel and hold the lid while blending. Hot liquids will expand, and we had many blender explosions in culinary school. Transfer the blended soup to a sauce-pan. Add the crab meat and heat it just until the soup is heated through.

    Add cream and adjust the seasonings.
