Keto Broccoli Cheese Soup | Easy Low Carb Broccoli Cheddar Soup Recipe

One of the great things about this casserole, and other casseroles in general, is that they can be made ahead of time. By mixing up the ingredients the day before, you can save yourself time when youre throwing a holiday meal or dinner party.

To make ahead: I love that this broccoli and cheese casserole can be assembled in advice, then popped into the oven right before youre ready to serve it. There are two ways you can do this. The first is to make and bake the casserole a day ahead of time. Cool, cover tightly with foil, and store in the fridge. Reheat, covered, at 350F until hot and bubbly. The second way is to prepare the casserole and refrigerate it unbaked until you are ready to bake. Then, bake at 350F until hot and bubbly.

To freeze: Bake the casserole and let it cool completely. Wrap the cooled dish with plastic wrap and/or foil, and freeze. To thaw, place in the refrigerator overnight. Bake the thawed, uncovered broccoli casserole in a 350F degree oven for 20 minutes, or until its hot in the center.

To reheat in the oven: Place the casserole in a 350F degree oven until hot and bubbly.

Keto Bacon Broccoli Cheese Soup

This keto bacon broccoli cheese soup is delicious and the whole family will enjoy! Perfect for these cold wintery days.

Broccoli Cheese Soup is one of my favorite soups, but its typically high in carbs. Like everyone else, I am trying to cut back on the carbs and unnecessary ingredients. I may have cut out the carbs in this soup, but I certainly didnt cut out any flavor!

Easy Keto Broccoli Cheese Stovetop Option

Keto broccoli cheese crockpot soup

What is great about this recipe is that you can also make it in under 20 minutes from prep to bowl if you opt to make it on the stovetop.

This gives you the option to make this soup on the spur of the moment if you like. Can I tell you some of our best family gatherings have come as a result of serving this soup on the fly? So you have options, my friend.

To make your keto broccoli cheese soup on the stovetop, just chop your broccoli florets into small 1/2 1-inch pieces and then toss all the ingredients minus the cheddar cheese and allow the soup to come to a medium simmer.

I also recommend that you slice the cream cheese into 1-inch pieces so that it melts faster. As the soup begins to simmer make sure that you are stirring on a regular basis.

Once the broccoli gets tender about the 15-minute mark you can then add your shredded cheddar cheese. After you add your cheese you need to keep a closer eye on your soup making sure to stir it often so that the cheese does not stick to the pot.

Another option is to use your immersion blender once the soup is finished. This produces a creamy soup without the chunks of broccoli. Its a good way to hide the veggies from your children for those with picky eaters.

Then simply ladle your soup into individual bowls and top with a little extra cheese if you prefer.

Is Broccoli Cheese Soup Keto

Traditionally, the soup is thickened by starch from potatoes or with flour. Although, I believe the flour wouldnt be a an issue in net carbs the issue is how fast it will absorb into your bloodstream causing a spike in your glucose reading. I would argue the fat would slow it down but that isnt the point of this post. No need to worry in this recipe because it is keto friendly at only 8g net carbs per serving of about a 4 ounce bowl.

How To Make This Broccoli Cheese Soup Recipe

1. In a 3-quart pot on medium heat, melt the butter. Add onions and garlic and stir for 30 seconds. Add broccoli, chicken broth , and pepper, and cook until the broccoli is tender .

2. Turn the heat down to low. Use an immersion blender to purée half the broccoli, or just mash with the back of a spoon until half the broccoli is crushed.

3. Turn up the heat to medium, add in cream cheese and stir to melt the cream cheese into the soup.

4. When the soup boils, turn down the heat, and in a slow steady stream, add the heavy cream.

5. Add in cheddar cheese a handful at a time to keep the cheese from clumping. Stir until the cheese has melted.

6. Add hot sauce, and serve.

Here is another recipe that my family has been making for years. Maybe your family has their own version, too? I must say, though, this Broccoli Cheese Soup is nothing like my family has made. This one is keto and low carb friendly!

How To Thicken A Low Carb Soup

To me, this soup has the perfect thickness. If you want a way to thicken your soup that doesnt involve tons of carbs, here are few ways:

  • Use xanthan gum or glucomannan. I sometimes use these low carb thickeners in recipes, but I usually try to avoid them because they are entirely natural ingredients. A bag usually goes a long way as you need as little as 1/4 or 1/2 tsp of xanthan gum to thicken this entire recipe.
  • Psyllium husk powder Youll need a little amount to thicken the entire pot of soup. Psyllium husk contains mostly fiber, has no taste and may help digestion.
  • Use more cheddar cheese Adding more cheese will increase the thickness.

Instructions For Keto Broccoli Cheese Soup That Tastes Good

Its insanely easy to prepare such a delicious easy broccoli cheddar soup recipe, and all you need to do is to gather all the ingredients, chop the vegetables into small pieces, grate the cheddar and follow a few more steps until you get the perfect soup.

  • In a medium pot melt the butter. Saute the onion and garlic for 2-3 minutes.
  • Add the water, heavy whipping cream, and broccoli florets to the pot. Let it simmer for 15-20 minutes on medium-low or until the broccoli is tender.
  • Remove from the heat. Add salt, pepper, chili powder, nutmeg, and the sharp cheddar cheese. Stir well until the cheese is melted and incorporated.
  • Serve hot garnished with some extra cheese!
  • I tend to avoid using storebought chicken broth or vegetable broth when making soups at home. They usually contain way too much salt, and while thats not a huge issue, it interferes with the taste of the final product.

To make this easy broccoli soup I used only water as the liquid, and trust me, its the best way. Youll enjoy the flavors of matured cheddar cheese that perfectly matches the creaminess of the whipping cream.

    Tips For Creamy Clump

Following all of these tips will ensure you do NOT have a clumpy cheesy soup!

  • Block cheeses that have been shredded by hand work best. There are additives in pre-shredded cheeses that may cause it not to melt thoroughly. Freshly shredded cheese ensures that all the pieces of cheese are the same size and melt evenly.
  • Let your cheese sit out and come to room temperature before adding to soup to prevent sudden temperature change, which can cause the cheese to get clumpy and stick together.
  • Turn down the heat when adding the cheese.*
  • Add a little bit of cheese at a time and stir each time before adding more.

Do you like your broccoli soup super smooth or with chunks of broccoli? You actually have 3 options there:

Creamy Keto & Low Carb Broccoli & Cheese Soup

Im thrilled that so many of you are making this easy broccoli cheese soup recipe! Along with my bacon wrapped asparagus, low carb cheesecake, and fathead pizza crust, its one of the most popular ones on the blog.

That being said, I also want to address any issues some people may be having. I truly want this to be your ultimate go-to broccoli soup recipe. So if youre having trouble , read these tips for best results.

For anyone that has problems with clumping during the cheese melting process in their broccoli cheddar soup, I have a few tips!

  • Make sure the temperature is not too hot. This is super important! The heat should be very low when adding the cheese. If its too hot, the cheese can seize and clump.
  • The broccoli florets should be small. The cheese tends to stick to larger pieces more.
  • Use pre-shredded cheese OR add a de-clumping agent. The recipe works best with pre-shredded cheese that comes in a bag. If you shred a block of cheese yourself, or if your shredded cheese already seems clumpy to begin with, toss it with a little arrowroot powder or cornstarch first, before adding to the soup.
  • Add only a little cheese at a time. If you dump all the cheese in at once, it will clump more.
  • Stir, stir, stir! Keep stirring as you add the cheese.
  • Backup plan #1: Puree it! If all else fails, just throw the soup in a blender .
  • And if you want a super thick broccoli soup, see the section above on ways to achieve that.

How To Make Broccoli Cheese Soup

Ready to see how to make broccoli cheese soup without added carbs or weird ingredients? Its super simple, just a few easy steps:

    • Saute garlic in a large pot or Dutch oven. It takes about 45-60 seconds, until fragrant.
    • Add chicken broth, heavy cream, and chopped broccoli. Simmer until the broccoli is tender, about 10-20 minutes.

TIP: The simmer time will vary depending on the size of your florets. Smaller florets = faster simmer time.

    • Add the shredded cheddar cheese gradually, stirring constantly, and continue to stir until melted. This will help thicken the soup.

TIP: Avoid having the heat too high when adding the cheese or after, to avoid seizing. See more tips about how to make broccoli cheese soup perfectly, without carbs and without clumping, below.

OR, go with my preferred method to avoid clumping altogether

    • Puree the broccoli into the soup along with the cheddar cheese using an immersion blender. I like to remove about 1/3 the florets using a slotted spoon first, so that you can toss the florets back in afterward and have some broccoli pieces in your soup.

TIP: The more broccoli you leave in before pureeing, the thicker your broccoli soup will be. The cheese helps thicken your broccoli cheddar soup, but the pureed broccoli florets will, too!
