One of the great things about this casserole, and other casseroles in general, is that they can be made ahead of time. By mixing up the ingredients the day before, you can save yourself time when youre throwing a holiday meal or dinner party.

To make ahead: I love that this broccoli and cheese casserole can be assembled in advice, then popped into the oven right before youre ready to serve it. There are two ways you can do this. The first is to make and bake the casserole a day ahead of time. Cool, cover tightly with foil, and store in the fridge. Reheat, covered, at 350F until hot and bubbly. The second way is to prepare the casserole and refrigerate it unbaked until you are ready to bake. Then, bake at 350F until hot and bubbly.

To freeze: Bake the casserole and let it cool completely. Wrap the cooled dish with plastic wrap and/or foil, and freeze. To thaw, place in the refrigerator overnight. Bake the thawed, uncovered broccoli casserole in a 350F degree oven for 20 minutes, or until its hot in the center.

To reheat in the oven: Place the casserole in a 350F degree oven until hot and bubbly.

This gives you the option to make this soup on the spur of the moment if you like. Can I tell you some of our best family gatherings have come as a result of serving this soup on the fly? So you have options, my friend.

To make your keto broccoli cheese soup on the stovetop, just chop your broccoli florets into small 1/2 1-inch pieces and then toss all the ingredients minus the cheddar cheese and allow the soup to come to a medium simmer.

I also recommend that you slice the cream cheese into 1-inch pieces so that it melts faster. As the soup begins to simmer make sure that you are stirring on a regular basis.

Once the broccoli gets tender about the 15-minute mark you can then add your shredded cheddar cheese. After you add your cheese you need to keep a closer eye on your soup making sure to stir it often so that the cheese does not stick to the pot.

Another option is to use your immersion blender once the soup is finished. This produces a creamy soup without the chunks of broccoli. Its a good way to hide the veggies from your children for those with picky eaters.

Then simply ladle your soup into individual bowls and top with a little extra cheese if you prefer.

Traditionally, the soup is thickened by starch from potatoes or with flour. Although, I believe the flour wouldnt be a an issue in net carbs the issue is how fast it will absorb into your bloodstream causing a spike in your glucose reading. I would argue the fat would slow it down but that isnt the point of this post. No need to worry in this recipe because it is keto friendly at only 8g net carbs per serving of about a 4 ounce bowl.

1. In a 3-quart pot on medium heat, melt the butter. Add onions and garlic and stir for 30 seconds. Add broccoli, chicken broth , and pepper, and cook until the broccoli is tender .

2. Turn the heat down to low. Use an immersion blender to purée half the broccoli, or just mash with the back of a spoon until half the broccoli is crushed.

3. Turn up the heat to medium, add in cream cheese and stir to melt the cream cheese into the soup.

4. When the soup boils, turn down the heat, and in a slow steady stream, add the heavy cream.

5. Add in cheddar cheese a handful at a time to keep the cheese from clumping. Stir until the cheese has melted.

6. Add hot sauce, and serve.

  • Use xanthan gum or glucomannan. I sometimes use these low carb thickeners in recipes, but I usually try to avoid them because they are entirely natural ingredients. A bag usually goes a long way as you need as little as 1/4 or 1/2 tsp of xanthan gum to thicken this entire recipe.
  • Psyllium husk powder Youll need a little amount to thicken the entire pot of soup. Psyllium husk contains mostly fiber, has no taste and may help digestion.
  • Use more cheddar cheese Adding more cheese will increase the thickness.

  • Make sure the temperature is not too hot. This is super important! The heat should be very low when adding the cheese. If its too hot, the cheese can seize and clump.
  • The broccoli florets should be small. The cheese tends to stick to larger pieces more.
  • Use pre-shredded cheese OR add a de-clumping agent. The recipe works best with pre-shredded cheese that comes in a bag. If you shred a block of cheese yourself, or if your shredded cheese already seems clumpy to begin with, toss it with a little arrowroot powder or cornstarch first, before adding to the soup.
  • Add only a little cheese at a time. If you dump all the cheese in at once, it will clump more.
  • Stir, stir, stir! Keep stirring as you add the cheese.
  • Backup plan #1: Puree it! If all else fails, just throw the soup in a blender .

    Use an immersion blender to blend the soup. You can also transfer the soup to a food processor or blender or use a hand masher. Let the soup cool some before using a food processor or blender.

    Grate the white cheddar cheese and stir into the soup until melted. Serve and top with grated yellow cheddar.
