These days I dont often make a big batch of slow-simmered chicken noodle soup like my Baba did. Instead, when one of us is sick or in need of comfort, I tend to make up a quicker version.
For this soup to be done so quickly, you also have to cut the chicken into small pieces before adding it to the broth. The small pieces of chicken cook faster. Also, look for quick-cooking noodles. I went with some thin egg noodles that specified a 3-4 minute cooking time on the package. Thats what you need!
Its Best To Parboil And Rinse The Bones
When you simmer bones they release scum or impurities. If you dont get rid of this, youll be stuck with a cloudy broth. Not good. We like our soup to be as clear and clean as possible, so we add an extra step.
Add the bones to a large stockpot, cover with cold water then bring to a boil. Boil for a few minutes, and then pour the water and bones into a strainer.
Discard the water then rinse the bones to get rid of all the impurities. Also, make sure you give the pot a rinse, too there will be scum on the bottom and sides of the stockpot.

Every year we make a plethora of soups from fresh produce from the garden. Whether it is classic vegetable soup, chili, potato soup, vegetable beef, or butternut squash soup, it seems that we always have one ready to warm us up.
We love to make large batches of soup on the stove or when we have extra time and the weather cooperates, in a cast iron kettle over the firepit.
We will then freeze the extra soup in rectangular blocksfor easy storage in our deep freezer. Whenever we need a quick meal or a soup to warm our bones in the middle of winter, we will heat it on the stove and it will be ready to eat in minutes.
There is nothing better or more warming than eating a bowl of Homemade Chicken Noodle Soup, especially on a cold winter day or when you are feeling a little under the weather.
However, homemade chicken noodle soup is a little different. Cooked egg noodles dont freeze well.
Instead, we will make a large batch of the broth along with veggies and the seasonings and freeze it without the noodles. When it is time to eat we will heat the soup up and boil until the noodles are fully cooked.

How To Make The Best Chicken Noodle Soup
Weve made chicken soup for years and have tried it various ways. Weve even started from a whole chicken before.
Ill take a bowl of satisfying chicken soup any day, but this version is the one we circle back to. Its straight-forward and quick to make.
Its important to use good-quality chicken broth. While I wish we had homemade chicken broth in our freezer all the time, we dont. When reaching for store-bought broth, we go for low-sodium. We also look for a store-bought broth thats darker in color and since I know it usually has more of a backbone, I like to buy boxed bone broth .
In case you are wondering, we use Pacific Foods Bone Broth and also like the stock sold at Trader Joes.
Dont be afraid to season your soup. When it comes to soups, season early and check the seasoning often. Before we add the chicken thighs to the soup, we always check the seasoning level of the broth. If the flavor doesnt pop, add a bit more salt.
Another option is to use fish sauce. It may seem odd, but whenever were tasting something and its just missing that something something, a small dash of fish sauce fixes it. Fish sauce is a major ingredient in our Pho soup recipe.

2 lbs. boneless, skinless chicken breasts, cut into cubes |
10 cups water |
4 tsp. dried parsley flakes |
2 tsp. dried thyme, crushed |
1/2 tsp. pepper |
2 Tbsp. chicken bouillon granules |
2 cups sliced celery |
4 cups milk, divided |
Steps:
- In a large pot, add chicken, water, parsley, thyme, pepper, bouillon and bay leaves. Bring to a boil over medium-high heat. Add noodles, carrots, celery and onion return to a boil. Reduce heat and cover simmer 20 to 30 minutes or until done. Meanwhile, in a liquid-tight container, combine 1 cup of milk and flour shake well until smooth. Add to noodle mixture with remaining 3 cups milk. Continue cooking over medium heat until thickened and heated through.

- Salted Butter I like to use salted butter because that extra salt adds so much flavor, but if all you have is unsalted, thats fine too. This is used for sauteing the veggies.

- Boneless Skinless Chicken Breasts to make this recipe quicker use leftover cooked chicken or rotisserie chicken.
- Chicken Stock whether you use homemade or store-bought chicken stock youre going to need it! Use what you like best.
- Bay Leaves and Parsley Flakes the two seasonings I like to flavor this soup with.
- Soy Sauce and Pepper soy sauce is my secret weapon when it comes to this recipe. Not only does it provide good seasoning but it also adds great color and umami flavor!
- Egg, Cold Water, Salt, and All-Purpose Flour if you are making homemade noodles, these are the ingredients youll need!
How To Reheat Creamy Chicken Noodle Soup
You will want to reheat leftover soup very gently in the microwave on 50% power until its as warm as desired. Or you can do it on the stove over gentle heat.
However, any time you are reheating anything with milk/cream in it, there is the risk of it breaking or separating. This is much less likely with fattier milks such as whole milk and heavy cream. If youre using skim, 1 or 2%, there is a much greater risk it can break which is why I advise using whole milk, and the heavy cream is just extra insurance.
Even with all this fattening dairy, the soup still only has about 470 calories per bowl. I think thats great considering its more comforting than a box of chocolates.

How To Make Homemade Chicken Noodle Soup
This soup is as easy as 1, 2, 3, and while it takes a bit of time, most of the time is hands off while it simmers away!
Remove from heat and season with pepper. For a classic soup and sandwich combination serve with a grilled cheese or club sandwich.
Cooking Variations:
TIP: Pasta is cooked separately and added to this soup before serving. Egg noodles do not keep well and tend to get mushy if you have leftovers.
If you are not going to be eating all of the soup at one sitting, add pasta to each bowl and ladle soup overtop.

The Best Bones For Making Pho
We make this at least once a month and always make sure there is leftover broth to freeze for another day. While it takes a bit of time, most of that is hands-off, so lets get going towards amazing pho at home, shall we?
You cant make an excellent soup without great beef bones. So, look for knuckle and leg bones that contain marrow. We buy beef knuckles from a local Asian market and find them to be pretty inexpensive.
