I also ordered the calamari as part of my Create a Sampler Italiano platter, and it was served with a sprinkle of herbs of top and a generous portion of the spicy ranch for dipping.

I thought the calamari was perfectly deep-fried the bits tasted tender without being rubbery, which was a huge plus in my book.

Im not exactly sure whats in the breading, but I loved that it tasted pretty light. It made the deep-fried dish taste more delicate and sophisticated instead of heavy.

At $11.99 this appetizer was pricier than most of the other offerings so Im not sure its worth that much unless youre a big fan of calamari and you dont want an appetizer thats too heavy.

Ive made it before but its been a while and now I just tend to use the store-bought varieties, as I find they work well in most recipes. Lets prep everything we will need for the recipe.

TIP: You can prep the veggies and chicken the night before for busy weeknight dinners.

Place your matchstick carrots in a bowl and set aside.

Next, thinly slice your celery and set aside.

Grab your chicken, I prefer to use chicken fillets, but you can use boneless skinless chicken breast as well.

Cut your chicken into bite-size pieces and set aside.

Fresh ingredients make me happy!

Roughly chop your spinach and set aside.

Finely chop your onion and mince your garlic.

I hate chopping onions and mincing garlic so I use frozen prechopped onions and frozen crushed garlic cubes!

Heat your olive oil in a large, tall pot over medium-high heat.

Add in your celery, onion and carrots and sauté for 5 minutes.

Next, add in your garlic and sauté for another 2 minutes.

Pour in your chicken stock, thyme and nutmeg.

Next, add in your chicken and stir.

Bring the soup to a boil, then reduce your heat to medium-low, cover and simmer for 12 minutes.

While the soup is simmering measure out 2 cups of heavy or table cream.

I use either or, but I had table cream in the fridge today so that is what I used.

Empty your two packages of gnocchi into a bowl, separate all the pieces and set aside.

In a small pot over low heat, warm up your cream.

Mix it until fully combined and no lumps.

    • Close your lid. Pressure cook for 15 minutes.
    • When the cooking cycle ends, do a natural release for 15 minutes.
    • Remove your lid. Remove your chicken from the pot and place it into a bowl so that it can be shredded. I like to use my handheld mixer for this but you can also use two forks to shred your meat.
    • Turn your pot onto saute . Add the shredded chicken back in.
    • Add in the grated Parmesan cheese, stir to combine and allow all of the cheese to completely melt down.
    • Add in your cooked pasta and stir to coat the pasta completely.
