Campbell Soup Co American Heart Association Sued Over Health Claims
A Calif. woman is suing Campbells over heart-healthy claims in soup products.
Campbell Sued Over Heart Healthy Label
Campbell, based in Camden, N.J., has been making soups since 1869. While it owns a number of brands, such as Pepperidge Farm and V8, its famously known for its cans of soups.
Dozens of Campbell soups have a Heart-Check label, certified by the American Heart Association to be heart-healthy, as listed in the organizations website.
Kerry OShea, a resident of Huntington Beach, Calif., in Orange County, is the named plaintiff for the lawsuit, which she and her attorneys hope to expand as a class action. The lawsuit was filed with the U.S. District Court of New Jersey on Tuesday.
Adam Levitt, OSheas attorney and partner with Grant & Eisenhofer, said, What we hope to accomplish is first of all to obtain compensation for our client and other class members for the purchase of Campbells products that were falsely represented to them, and we also want to send a message to corporate America that mislabeling and misrepresenting product qualities just isnt the right thing to do.
OShea declined to comment.
None of Campbells AHA-certified products meet the AHAs own noncommercial dietary and nutrition standards because those products sodium levels 410 milligrams per serving, or between 820 and 1,025 milligrams per unit far exceed the AHAs low-sodium threshold of 140 milligrams of sodium per serving, the lawsuit states.
Bar Harbor Clam Chowder
Sodium content: 390 mg per 3/4-cup serving
Eating more seafood to support heart health is a recommendation that experts can stand behind. Seafood like clams provide nutrients like omega-3 fatty acids, vitamin B12, and seleniumnutrients that support heart health in various ways.
Bar Harbor Clam Chowder is loaded with real fresh clams, potatoes, and other simple ingredients. Following the USDAs tip to eat seafood twice a week to help prevent heart disease just got a whole lot easier!
How Can I Make Canned Soup Healthier
If you love the convenience of canned soup, here are a few ways to spice up the nutritional value of your quick meal:
- Choose healthier canned soups. Look for low-sodium, low-fat, organic soups featuring beans, vegetables, and lean protein that provide at least 10% of your daily fiber.
- Add fresh or frozen vegetables to increase the fiber, vitamins, and minerals. If you use frozen vegetables, choose plain varieties without added salt, preservatives, or sauce.
- Toss in spices instead of salt to punch up the flavor of low-sodium soups without increasing the salt content.
- Look for cans labeled BPA-free. Steel bottles or cans generally dont contain BPA, while many aluminum cans and bottles do. You can tell if a can is steel or aluminum by looking at the cans label. The labels are typically glued onto steel cans, but the labels on aluminum cans are sprayed on most of the time.
Because there are so many different types of soup, the calorie and nutrition content can vary tremendously. Be sure to scan the nutrition label for more information.

Storing Leftover Chicken Noodle Soup
We love making a big pot of chicken soup and enjoying it throughout the week. Keep in mind, if the soup is stored too long, the noodles will turn mushy. If storing longer than 1-2 days, its best to store the soup and the noodles separately and recombine right before serving.
- Refrigerated: Cool the soup completely and store covered in the refrigerator. Once noodles are in, the soup should be enjoyed within 2 days. The soup will keep up to a week if you store the noodles separately and combine when reheated.
- To Freeze: If you plan to freeze the soup, wait to add the noodles when you reheat the soup. Chicken soup can be frozen up to 3 months.
- Reheating: Recombine noodles and soup in a pot or microwave-safe bowl and heat to the desired temperature on the stovetop or in the microwave. If using uncooked noodles, reheat on the stove until the mixture boils and noodles are tender.

The Best Bones For Making Pho
We make this at least once a month and always make sure there is leftover broth to freeze for another day. While it takes a bit of time, most of that is hands-off, so lets get going towards amazing pho at home, shall we?
You cant make an excellent soup without great beef bones. So, look for knuckle and leg bones that contain marrow. We buy beef knuckles from a local Asian market and find them to be pretty inexpensive.
Substituting store-bought beef broth for this homemade beef broth just wont cut it. We know our process takes longer than some, but trust me, this homemade pho broth has so much more flavor. You wont regret it.

Is Chicken Noodle Soup Really A Remedy For Colds And Flu
Chicken soup, including chicken noodle soup, has always been believed to possess restorative health qualities. The earliest reference we know of that describes chicken soups healing qualities is from Sephardic Jewish philosopher Maimonides who described it as a treatment for leprosy, asthma, and malnutrition. While these claims may seem a bit far-fetched today, there has been a lot of anecdotal evidence to suggest that chicken soup helps with colds and flu.
In the 1990s, a researcher from the University of Nebraska Medical Center, Dr. Stephen Rennard, took it upon himself to research these claims, using his grandmothers chicken soup recipe as his guide, and his findings confirmed that chicken soup does indeed have healing properties. Specifically he found that the ingredients in chicken soup have an anti-inflammatory effect on the body: He found they inhibited the movement of white blood cells which decreased mucous production, reduced inflammation, and boosted the immune system, thereby aiding the body in fighting off infection. Chicken soup also contains a number of vitamins, minerals, and electrolytes.
In addition the gelatin created by the bones in the chicken has a lot of nutrients that boost liver function and detoxification, help build bone and cartilage, and improve digestion.
So besides being some of the best comfort food out there, chicken noodle soup really is very good for you too!
Easy Chicken Tortilla Soup Recipe
When I see chicken tortilla soup on a restaurant menu, I get excited. Theres something about the slightly spicy broth with tender chicken, the corn and black beans, juicy tomatoes, creamy avocado, and those addictively good tortilla strips on top that I cant resist.
Rather than making a trip out for it, you can make Mexican tortilla soup at home in 30 minutes and its easy. So many ingredients get tossed into the pot all at once and before you know it this hearty, comforting soup is ready. And it tastes better than my favorite restaurant version.
My family loved this easy tortilla soup and I love that its ready so quickly and with very minimal effort. And its better than from a restaurant.
It makes enough that I stashed half in the freezer for those nights when I just want to pull something out of the freezer for dinner. And with winter cold and flu season around the corner, soup is perfect.

The Best Canned And Boxed Soups To Take Nutrition Up A Notch
Though a can or box of soup can certainly be an easy meal on its own, you can also toss in other ingredients you have at home to make your soup even more interesting, nutritious and filling. Here are some ideas using soups you can find on your next grocery haul:
- Add spinach to Amys Organic Light In Sodium Lentil Soup before you heat it up, and then top with feta or parmesan cheese.
- Make a DIY soup with Pacific Foods Organic Low Sodium Vegetable Broth by tossing in frozen tortellini along with frozen spinach or kale, and then bringing the soup to a boil.
- Heat up Campbells Well Yes! Lightly Salted Santa Fe Vegetable Soup and top it with avocado slices and a dollop of Greek yogurt. If you want some crunch, crush a few tortilla chips on top.
And dont forget that the plant foods in canned soup count toward your daily veggie requirements, so if youre low on fresh veggies, have some soup at the start of your main meal.
Quick Chicken Noodle Soup Version
If you dont have time to make the ultimate version that involves a low and slow cooking time, you can make a quick version by using a good quality chicken broth and either using pre-cooked shredded chicken breast or, for more flavor, rotisserie chicken. Its not quite as healthy as the low and slow simmered version, but nevertheless delicious!

Option #: Goat Cheese And Arugula Pizza
Pizza? Well, you may be surprised and skeptical about this recommendation. However, lets look at things reversely. If you consider this goat cheese and arugula pizza as the main dish, and the chicken noodle soup stays more on the side, then things start to line up nicely.
Goat cheese and arugula pizza is a simple, pesto-based variation of regular Italian cuisine. You will need 20 minutes to serve this pizza with your hot bowl of soup.
The rich flavor of goat cheese cut in thin coins, the green taste of arugula, and the herbal aroma of garlic and olive oil are the perfect combination when put together. Everything tastes even better with the crust edges and crunchy texture of the pizza itself. At the end of the day, it is a very balanced dish to serve with chicken noodle soup.
I know that you all have busy lives. So, I always try to find the shortest video illustration to give you a quick but comprehensive look at the making process of these recommended dishes. Here is another one that you should refer to:
Healthiest Beef Stock: Kitchen Basics Original Beef Stock
A staple for French onion soups, beef stock is a tricky product to purchase. Thats because store-bought versions are littered with flavor-enhancing chemicals and not much beef. For example: Knorrs Beef Stock Concentrate contains inflammatory palm oil, four versions of MSG, sugar, two types of gums, and carcinogen-containing caramel color.
If you dont have time to make a stock at home , go for Kitchen Basics Original Beef Stock, which contains real beef stock rather than just beef flavor, vegetable stock, honey, salt, and spicesmuch simpler than Knorrs. Plus, its a surprisingly great source of protein!

Why Should You Buy Low
If you have ever eaten a salty dinner and woken up with bloated sausage fingers, you already know the effects that eating too much sodium can immediately have on your body. Aside from unpleasant bloat, eating too much sodium puts you at risk for developing serious medical conditions, like high blood pressure, heart disease, and stroke, according to the Center for Disease Control and Prevention.

However, the majority of adults in the US eat more sodium than they shouldan average of more than 3,400 mg each daywith more than 70 percent coming from processed food and restaurant meals according to the report.
