- Cream: Half and half, heavy cream, light cream or thickened cream all yield similar results, however heavy cream adds richness.
- Flour: We need flour to create that delicious, creamy texture mushroom soup is loved for. You can leave it out and use cornstarch if you wish. I recommend 2-3 tablespoons cornstarch mixed with 1/4 cup water . If unsure about quantities for your liking, add the cornstarch slurry in tablespoon increments, stirring in between, until youve achieved your ideal texture.

I find it very hard to buy certain things pre-made. Like, it hurts. It feels wrong to purchase something thats full of strange, unpronounceable ingredients when it can so easily be made at home.
For many years I thought canned, condensed soup was one of those things that just had to be bought. Sometimes, foods are so processed that theyre very difficult to reproduce at home. And some are so labor-intensive that they arent worth it. But faced with using a can of soup that listed MSG as one of the ingredients, I decided to try making it myself.
You guys, its so easy! Granted, it will take more effort than pulling the lid off of a can, but theres just something satisfactory about making it yourself. Plus, you can control everything that goes into it.
Here are the simple ingredients youll need: mushrooms , garlic, onion, cream, chicken broth , flour, salt and pepper.
And I cant believe I almost left out butter!
First of all, chop up all your veggies. You want the mushrooms to be diced fairly small. Ive also chopped them using a food processor, but that makes them a little too fine for my taste.
Melt the butter in a skillet.
Add the mushrooms and onions. Sauté until tender, about 8 minutes.
Season to taste with salt and pepper.
Add the garlic and cook for 2 minutes.
Add the flour and cook for 2 more minutes.

You might have heard of Chef John and his popular Youtube channel Food Wishes, and you can also find this recipe in video form there if you want . This is a simple but delicious mushroom soup that is the pure essence of mushroom.
As the name suggests, this is a creamy soup too, and the cream is a huge part of what gives it its great flavor, so dont skimp! Its also an easy dish to prepare, so it wont cause you too much trouble if youre tired after an evening of work.
Choosing The Best Mushrooms
As mentioned, you want your cream of mushroom soup to taste like mushrooms. We love using a variety of fresh mushrooms.
Here a some of our favorites to use:
- Baby portobello
EXPERT TIP: We use a combination of any of the mushrooms listed above. We typically go with fresh mushrooms, but if you want to try dried mushrooms, then youll need to re-constitute them in warm water for about 20 to 30 minutes. The soaking liquid can then be substituted the vegetable broth called for in the recipe.
Youll want to start the flavor profile by sautéing chopped onions and garlic.
Next, its time to add in the mushrooms.
EXPERT TIP: After cooking over medium-high heat, the mushrooms will begin to exude liquid. They will seem dry at first, but be patient, as they soften, they will no longer look and feel dry. This typically takes about 5 to 10 minutes, depending on the size of the mushroom pieces. After they have softened, we like to take a slotted spoon and remove about 1 cup of the cooked mushrooms to use later as garnish.

What Goes In Mushroom Soup
So, we had a little debate in the office with smooth vs. chunky mushroom soup and, in the end, landed somewhere right in the middle. Though a lot of the team voted on a chunky soup, in testing the bigger chunks that were less consistent throughout, it was sort ofupsetting? Is that an okay word to use? . But the blended, totally smooth also left us wanting just a little more.
So we compromised with a super-thin slice on everything. After it all cooks and softens, youre left with these little slivery buttery bits of mushroom and garlic throughout to bring a nice bit of even texture to the whole thing but nothing overly slippy, chewy oryou know, upsetting.
We also found that an old halfsies take on the mushroom choice was just right. All button wasnt quite enough richness of flavor, full baby bella felt like a traipse along the forest floor. Though were not necessarily opposed to that, and you could certainly go that route if you stan earthy flavors, we loved it right in the middle. Rich, savory, complex goodness.
