How Do You Make Gluten Free Cream Of Chicken Soup
First, saute your chicken in the oil or butter.
Even if you uare using already cooked chicken, this will help to flavor your cream of chicken soup.
Add your gluten free flour to the oil and chicken to make a gluten free roux.
Stir the gluten free flour into the fat and cook until it starts to turn golden and smells slightly nutty.
Youre still making a blonde roux, and not cooking it to a dark brown color.
You want your gluten free roux to have lots of thickening power , while taking advantage of the flavor that you get from toasting the flour.
Cooking the flour keeps your cream of chicken soup from tasting like a floury paste.
Then add the broth and milk and bring it to a simmer.
Let it simmer until thickened,
It will thicken up even more as it cools.
Now your gluten free condensed cream of chicken soup is ready to use in all your favorite recipes!

Notes On Ingredients For This Gluten
- Tortilla I used Udis Gluten Free large plain tortillas. Theyre dairy, soy, and nut free too. I only needed one large tortilla to make enough for our 4 servings of soup, but if youre doubling or tripling the recipe, youll want to do the same with the tortilla strips. Easy, since they come 6 to a package! Note: these tortillas freeze well, so I put the leftover tortillas in the freezer so I can pull them out, thaw, and make tortilla strips again the next time we want this soup!
- Chicken Broth- Be sure to use a chicken broth that is clearly labeled gluten-free, or use your own homemade chicken stock. I use Pacific Foods Organic Chicken Broth. If you opt for a low-sodium version, be sure to taste your finished soup to make sure you dont need to add a bit of salt for flavor.
- Diced Tomatoes I prefer the petite diced tomatoes over the regular sized chunks. You can also use a can of petite diced with jalapeño instead of plain to give this soup some kick!
This is truly a 30 minute meal! I was running a stop watch while I cooked and prepared to serve. Even with writing the recipe down and adjusting seasonings as I worked, I still got it done in 30 minutes!

Most soups you find in a can are full of additives that you wouldnt use at home. These include things like maltodextrin, monosodium glutamate , and sugar.
Another thing to avoid is BPA which is an endocrine disruptor. However, you wont see that listed as an ingredient, it comes from the can itself.

Is Potato Soup Healthy
I wouldn’t recommend to anyone to eat potato soup 3 meals a day every day, however, it can be part of a balanced nutritious diet. The dairy products in the soup, cheese and heavy cream, provide calcium and vitamin D which are important nutrients for bone and heart health. Potatoes are also packed with nutrients and vitamins that are vital to our health. They have vitamin C, vitamin B6, potassium, and fiber! Again, I wouldn’t recommend anyone use potato soup as their sole source of nutrition, but it has health benefits and when enjoyed in moderation can be part of a healthy diet.
My family and I indulge in Gluten-Free Potato soup once in a while, and it is worth it every single time!
Can I Make The Soup In The Instant Pot
You can also make this soup in a pressure cooker. I find it much easier to make the soup on the stovetop, but I do also love my Instant Pot.
Turn your Instant Pot to the saute setting. Add the olive oil, garlic, carrots, and celery and saute for 3 minutes until the vegetables soften.
Stir in the gluten-free chicken broth and the seasonings. Add the diced chicken pieces. Close the lid and set the Instant Pot to the Soup setting and set the timer to 7 minutes.
Once the Instant Pot cycle is complete, wait until the natural release cycle is complete, which is about 10 minutes. Carefully unlock and remove the lid from the instant pot.
Add the gluten-free noodles to the soup and set the Instant Pot to the saute setting again. Cook for another 8-10 minutes uncovered, or until the noodles are cooked. Turn off the Instant Pot by pressing the cancel button and stir in the lemon juice.

Does Regular Cream Of Chicken Soup Contain Dairy And Gluten
YES! Regular canned condensed cream of chicken soup has cream and butter and wheat flour . Those are the easy ingredients to understand! Theres also modified food starch which could contain gluten, and whey, which is most likely dairy based.
Plus, regular canned cream of chicken soup falls into the category of foods that I believe people should avoid simple because it has several ingredients that are highly processed and are hard to understand.
Smooth Or Chunky Soup
I have a texture snob in my house so I am very aware of this controversy. I personally love a thick, chunky soup. but this one can easily be pureed. If you plan to puree it, I recommend leaving some of the broccoli in bigger pieces. Youll remove the bigger pieces before blending and save for garnish. The remaining will be pureed with the cooked soup,

How To Thicken The Roux Without Superfine White Rice Flour
I really recommend using Authentic Foods brand superfine white rice flour. Vitacost also has a superfine white rice flour that has a relatively fine grind, too.
If you dont have a truly superfine white rice flour, you can try using arrowroot in its place. You can also try using tapioca starch/flour, but it may make the sauce gummy so try using 20 grams instead of 30.
If you use too little thickener in your soup, you can continue to cook the soup over medium-low heat to thicken it further. The more water that evaporates, the thicker the soup will be.
What Can You Use Soup Mix For Besides Soup
If you love to cook, chances are soup mixes are a staple in your pantry. Aside from soup, they make wonderful seasoning for different types of dips. It is most often used in spinach dips, which can be served with crackers, breads, or a whole bunch of colorful vegetables. It can also be used as the base for a sauce to serve over top of your favorite pasta dishes. Of course be sure to read the ingredients list on the back of products to make sure they are all gluten free before consuming.

Why Should I Make My Own Spice Mixes
As someone who cannot eat gluten, I learned that many spice blends and flavoring mixes contain gluten.
Making your own mixes allows you to control everything that goes in, so youll know that its safe for you and your family to eat, and that kind of peace of mind is priceless.
Speaking of price, making your own spice and soup mixes will save you money too. The markup on pre-mixed spices is can be significant.

What Ingredients Do You Need You Make Gluten Free Cream Of Chicken Soup
Making cream of chicken soup gluten free is quick and easy.
It takes less than ten minutes, and you only need a few ingredients.
To make gluten free condensed cream of chicken soup youll need:
- Oil or butter. I like using olive oil because it adds a subtle fruity flavor, and is a healthy cooking oil. If you are making your cream of chicken soup with dairy, butter should be your first choice.
- Cooked, shredded chicken. Leftover rotisserie chicken, or even drained canned chicken will work! You can also chop up some raw chicken and cook it until golden brown right in the pan.
- Gluten free flour. The gluten free flour acts as the thickener to make the gluten free roux. I used my gluten free flour blend, but you can use just rice flour, or any gluten free flour blend in your pantry. Youll have best results if you use a gluten free flour that doesnt have xanthan or guar gum in it.
- Broth. I used chicken broth however, if you prefer you can use vegetable broth.
- Milk. I used an unsweetened plain coconut milk this time, but Ive used unsweetened plain almond milk in the past. You can also use dairy milk, or lactose free milk. As long as you dont use a sweetened vanilla flavored milk, you should be set.
- Salt and pepper. Essential if you dont want your soup to taste bland.

Can I Make Vegan French Onion Soup
Of course you can. You can do anything you want and I would be the last to stand in your way. Gluten-free French onion soup is actually perfect for converting to a vegan recipe. Simply substitute the beef stock for vegetable stock, butter for margarine and top with vegan cheese. The broth will be a bit lighter in color but you’ll still get that beautiful umami flavor from all those deeply caramelized onions. So go for it. It will be great.
