    I mentioned above that for a quick soup, you want a quick-cooking noodle. There are fine egg noodles at the grocery store . The fine egg noodles cook in 3-4 minutes.

    Any pasta shape with a similarly short cooking time will work for your quick chicken soup. If youre not making a quick soup and dont care about the time, then Id go with wide egg noodles for sure. Theyre my favorite and dont take that much longer to cook.

    I stopped eating canned soups years ago because, really, who needed all that sodium? Nowadays, there are many low-sodium varieties and they can be handy when you need a fast fix. We tested some of the most popular chicken noodle soups see how they ranked.

    Well be honest homemade is the only way to go, but sometimes you need a convenient pick. For consistency, we tested low- or reduced-sodium varieties of plain old chicken noodle soup. Each was scored from 1 through 5 based on flavor, ingredients and nutrition info. We paid especially close attention to the sodium amounts. The daily recommendation for sodium is 2,300 milligrams . That means a soup with 470 milligrams of sodium contains about 20% of the daily recommendation .

    Prices ranged from $1.25 to $1.50 per serving. All cans indicated that they served about 2 but ranged in size from 14.5 to 18.5 ounces, so the bigger cans give you a bit more for your money.

    You simmer the chicken with other flavorful ingredients for a long time . Then remove the chicken and let it cool. Then separate out the meat from the fat and the skin. Add the meat to the soup and discard the rest.

    For the quick chicken soup below, I buy boneless skinless chicken thighs. Boneless and skinless is really helpful because you dont need to ever spend time removing skin or bones. Using thighs instead of breasts adds a ton of flavor, and the chicken is so moist in the soup.

    You can use chicken breast if you really love it and thats your thing, but it wont be nearly as good.

Fortunately, removing the bones and skin from the chicken is a breeze when its time to shred it. Its pointless to remove them since the chicken flesh is practically coming apart.

    Storing Leftover Chicken Noodle Soup

    We love making a big pot of chicken soup and enjoying it throughout the week. Keep in mind, if the soup is stored too long, the noodles will turn mushy. If storing longer than 1-2 days, its best to store the soup and the noodles separately and recombine right before serving.
