Ive been on a major soup-making kick lately. I love making soup because its easy and makes enough for plenty of meals to come. Planned leftovers are my friend. My soup recipes are usually done in about a half hour and this chicken tortellini soup is no exception.
I used my Easy 30-Minute Homemade Chicken Noodle Soup as the base and swapped out egg noodles for cheese tortellini. It has all the comforting qualities you want in classic chicken noodle soup but with the unexpected twist of cheesy, tender tortellini.
Theres sweet Vidalia onions, carrots, celery, thyme, oregano, and parsley to add texture and depth of flavor amidst all the juicy chicken and tortellini.

While I recommend making these fresh each time because the total time is so little, you can make egg noodles ahead of time. To do that, you will want to freeze the noodles.

Can This Soup Be Frozen
Yes, this soup can be frozen for up to 3 months in a freezer safe, air tight container. Again, I would wait to add the noodles if you are going to freeze this soup as they will soak up the broth.
When ready to serve, defrost the soup out in the refrigerator, reheat on the stovetop and add in the dried noodles to cook to your preference.
Tips For Making Chicken Tortellini Soup
To save time, use store-bought rotisserie chicken or leftover chicken that you have on hand. Of course you can roast or pan sauté chicken, if you prefer.
Make sure to salt your soup to taste. I use low-sodium chicken broth and add a bit of salt to my soup so I can control the overall salt level. The saltiness of the chicken broth, rotisserie chicken, and tortellini all vary, as do personal preferences, so salt to taste.
Lastly, if at any time while making the soup the overall liquid level is lower than you like and you prefer more broth, adding a cup or two of extra chicken broth or water is okay.

Theres a little trick that makes this soup delicious in such a short time. It has to do with butter.
My Babas chicken soup contained a bit of rendered chicken fat which gave it a rich full flavor. I never have rendered chicken fat on hand. Instead, I saute the onions and carrots for this soup in butter. The butter flavor adds so much richness to the soup.
The butter also makes up for something. When doing a slow-simmered soup, all kinds of flavor gets extracted from the chicken. The fat and cartilage doesnt have time to render and deepen the flavor in the same way. The butter helps a lot with this. The result is a rich and flavorful broth that you would swear had taken hours to make.

For a creamy chicken noodle soup, add 2 to 4 tablespoons of heavy cream, half-and-half or whole milk.
Add three to four lemon slices for a lemon chicken soup similar to this Lemony Chicken and Vegetable Soup.
Add three or four slices of lime, swap the parsley for fresh cilantro, and then add diced tomatoes and cubed avocado for Mexican-style chicken soup. You can even add diced corn tortillas as we do for this tortilla chicken soup.

What Kind Of Chicken To Use For Chicken Noodle Soup
If youre doing the slow-simmered method for chicken soup, then you want to either use a whole chicken, or chicken pieces. I find that the chicken leg quarters are usually very reasonably priced.
You simmer the chicken with other flavorful ingredients for a long time . Then remove the chicken and let it cool. Then separate out the meat from the fat and the skin. Add the meat to the soup and discard the rest.
For the quick chicken soup below, I buy boneless skinless chicken thighs. Boneless and skinless is really helpful because you dont need to ever spend time removing skin or bones. Using thighs instead of breasts adds a ton of flavor, and the chicken is so moist in the soup.
You can use chicken breast if you really love it and thats your thing, but it wont be nearly as good.
The Secret Is In The Stock
The key is homemade stock made from chicken parts or a whole chicken. The rich gelatin from the chicken bones, cartilage, and tendons is good for you, and one of the reasons why homemade chicken stock is so beneficial.

Weve made chicken soup for years and have tried it various ways. Weve even started from a whole chicken before.
Ill take a bowl of satisfying chicken soup any day, but this version is the one we circle back to. Its straight-forward and quick to make.
Its important to use good-quality chicken broth. While I wish we had homemade chicken broth in our freezer all the time, we dont. When reaching for store-bought broth, we go for low-sodium. We also look for a store-bought broth thats darker in color and since I know it usually has more of a backbone, I like to buy boxed bone broth .
In case you are wondering, we use Pacific Foods Bone Broth and also like the stock sold at Trader Joes.
Dont be afraid to season your soup. When it comes to soups, season early and check the seasoning often. Before we add the chicken thighs to the soup, we always check the seasoning level of the broth. If the flavor doesnt pop, add a bit more salt.
Another option is to use fish sauce. It may seem odd, but whenever were tasting something and its just missing that something something, a small dash of fish sauce fixes it. Fish sauce is a major ingredient in our Pho soup recipe.

I have tested both thin and thick egg noodles, and I tell you with confidence, you want them about as thick as you see here. The thinner noodles are more like store bought pasta, but they dont cook as well in a soup.
Roll out the dough into as much of a rectangle shape as you can manage, and then cut it into thin strips. From there, cut the the other direction, to make smaller more bite sized noodles, like in the first image you see here.

Adding Homemade Egg Noodles To Soup
If you want to add these great noodles to homemade soup, there are a few things to consider.
- If the recipe calls for frozen egg noodles, you can use fresh just consider that they will need to be added to the recipe just before serving. The fresh noodles will cut a lot of time off of the soup as the cook quickly. The amount of stock/broth used can be kept the same as fresh egg noodles absorb a lot of stock.
- Consider keeping a batch of these noodles in the freezer for making soup in the future. It will cut some time off of your soup making.
How Chicken Noodle Soup Got Its Name
Campbells had a canned condensed soup called Noodle with Chicken Soup. Weird, right? That soup with that weird name was around for awhile but never became popular. Then a radio announcer made a mistake on air and called it Chicken Noodle Soup. People suddenly got excited about this new soup with its cool new name and sales skyrocketed. The name stuck and came to be applied to canned versions and homemade versions alike.
