Alton Brown French Onion Soup Recipes

10 sweet onions or a combination of sweet and red onions
3 tablespoons butter
10 ounces canned beef consume
10 ounces chicken broth
10 ounces apple cider
Bouquet garni thyme sprigs, bay leaf and parsley
1 loaf country style bread
Ground black pepper
1 cup grated Fontina or Gruyere cheese

Steps:

  • Trim the ends off each onion then slice from end to end. Remove peel and finely slice into half moon shapes. Set electric skillet to 300 degrees and add butter. Once butter has melted add a layer of onions and sprinkle with a little salt. Repeat layering onions and salt until all onions are in the skillet. Do not try stirring until onions have sweated down for 15 to 20 minutes. After that, stir occasionally until onions are dark mahogany and reduced to approximately 2 cups. This should take 45 minutes to 1 hour. Do not worry about burning.
  • Add enough wine to cover the onions and turn heat to high, reducing the wine to a syrup consistency. Add consume, chicken broth, apple cider and bouquet garni. Reduce heat and simmer 15 to 20 minutes.
  • Place oven rack in top 1/3 of oven and heat broiler.
  • Cut country bread in rounds large enough to fit mouth of oven safe soup crocks. Place the slices on a baking sheet and place under broiler for 1 minute.
  • Season soup mixture with salt, pepper and cognac. Ladle soup into crocks leaving one inch to the lip. Place bread round, toasted side down, on top of soup and top with grated cheese. Broil until cheese is bubbly and golden, 1 to 2 minutes.

In case you havent picked up on the theme, we are talking about a French soup. What type of bread are the French famous for? Thats the right, the baguette. The baguette is that lovely French bread with the perfect crust and chewy inside that cant be duplicated.

The bread accomplishes two things when used in French onion soup. For starters the crust holds up to all the moisture and you can still get a bit of crunch out of it while the inside soaks up the broth without falling apart completely. It also provides a nice raft for all the gruyere cheese youre going to melt on top.

If youre living the low carb life and looking for a keto French onion soup recipe youll have to eliminate the baguette and potentially the bread all together.

Should You Use Red or White Wine for French Onion Soup?

Traditionally French onion soup recipes call for dry white wine. Id go for a Chardonnay or Pinot Grigio that can balance the beef broth and gruyere cheese.

As youll see below there are a few celebrity chefs whove taken liberties with the French onion soup recipe. Tyler Florence uses red wine which will give your soup a completely different flavor profile.

In addition to wine there are additional boozy notes including sherry wine, cognac or brandy. Ive actually used bourbon in the past and it was quite tasty.

What Cheese Is Used For French Onion Soup

There have been many variations on this classic soup but one thing is for sure. If you want to make a traditional French onion soup youve got to use Gruyere cheese. Its one of the meltiest of the cheeses and compliments the onions in such a way I wouldnt substitute it.

Gruyere is a hard yellow swiss cheese that is sweet and slightly salty. Its made from cows milk and is typically aged for 6 months or longer.

Gruyere can be a bit on the pricier side so there are some substitutions that can be made if you must. Swiss cheese would be the closest substitute but you could also use other melty cheeses such as mozzarella or muenster cheese.

How I Tested The Soups

Each recipe was tested on the same day and compared in a side-by-side taste test. I followed each recipe exactly as written and tried to keep all outside variables to a minimum. I garnished each with their suggested toppings and didnt take any liberties. I wanted it to be a fair test.

I also grabbed a few friends to taste them to see what they thought. At the end of the day we all shared the same opinions and the results quickly became clear. The winner has become my new go-to French onion soup recipe.

This recipe for french onion soup is one of my all-time favorite comfort food soups.

There is something about French Onion Soup that makes me smile it is rich, buttery, and a tiny bit sweet all topped with melty gooey cheese and a slightly crunchy piece of bread.

Its rich, salty, full of sweet and salty onion flavor and the cheese and bread on top are heavenly.

I never really put in the time making French Onion Soup at home I made Alton Browns recipe once in college and remembered I really liked it, but when I went back to make it again recently I didnt have all the ingredients he called for so I decided to make some tweaks and come up with my own spin off his Good Eats classic.

I was really inspired by a recent trip we took over Christmas to Western Germany, which included a day trip to Strasbourg France.

Strasbourg is such a lovely city full of both German and French architecture and while Strasbourg gives those visiting France some delicious German offerings, wed been dining on schnitzel and spaetzle for a week already, and went straight for the French food during our visit, including having some delicious onion soup!

How I Chose My Four French Onion Soup Contenders

Because there proved to be so much variation in the toppings, I looked for recipes that were fairly traditional when it came to the soup itself.

The first recipe I settled on was from . Her version is a very classic interpretation of French onion soup, down to the melty Gruyère and toasted bread. The second recipe I picked was from Ina Garten. Her recipe is pretty standard but swaps out the Gruyère for shredded Parmesan and ditches the toasted bread altogether. It seemed like a bold choice, but Inas recipes are always a hit, so I was confident it would taste delicious even without the cheese and bread.The third recipe I landed on was from Alton Brown. His recipe uses unfiltered apple cider to make the broth, and I was curious to see if it would make the soup too sweet. Ive seen apple brandy used to make French onion soup, but never apple juice.The last recipe I picked was from Serious Eats. Its made with several different types of onions instead of just yellow, and gets finished with a dash of fish sauce to amp up the savoriness. I was curious to see if the fish sauce would make the soup taste fishy, or if it was one of those clever ingredients that adds a rich depth of flavor without knowing its there.

Best Broth For French Onion Soup

With the onions caramelized, the next step is to add the liquid and simmer it all together. I start with some sherry, since I love that nutty, oxidized flavor with the caramelized onions. You could also use vermouth or white wine, and some folks even use red wine or port. Take your pick they’re all good.

Next comes the stock, which is the second most important component of the soup. Traditionally, the stock of choice for French onion soup is beef stock, but beef stock is very time-consuming to make at home, and store-bought versions are so terrible, they’re not worth considering.

Chicken stock is therefore your best option, and it produces absolutely wonderful results. By far the best you can do is homemade chicken stock. Use good caramelized onions and homemade stock, and you’ll have a soup that won’t even need the cheese to be delicious.

If you don’t have homemade stock on hand, store-bought can work well, though it’s worth paying attention to the brand. I used multiple types in my testing, and the results ranged from great to horrendous. Take a look at our chicken stock taste test for some recommended brands.

A few sprigs of thyme and a bay leaf elevate the soup even more, but I take it a step further, adding a splash of fish sauce for complexity and depthdon’t worry, it won’t taste fishyand a hit of cider vinegar to balance some of that oniony sweetness.

Finishing French Onion Soup

With our building blocks in place, the final step is fixing up the bowls for serving.

I start by buttering warm croutons and rubbing them with garlic.

Then I spoon a little of the soup into each bowl. I set a crouton on top and top that with cheese.

Then I ladle in the bulk of the soup, nearly filling up each bowl. I add another crouton on top of that.

And finish it with a very generous grating of Gruyère cheese. I broil the soups until the cheese is melted and browned in spots, then top each one off with a garnish of minced chives, for a little hit of fresh onion flavor to play off the deep sweetness of the cooked onions.

Each spoonful should be a mix of melted cheese, broth, tender onions, and bread. Aside from the time it takes, it couldn’t be easier, or more satisfying.

In order to convert this soup to vegetarian youll have to eliminate the beef broth all together. The question is whether or not plain old vegetable broth will do this soup justice.

I havent tried it yet but after checking out Vicky and Ruth of May I Have That Recipe, mushroom broth seems poised to emulate the richness of traditional French onion soup.

There are other elements you will have to change if you truly want to go vegan or vegetarian. Butter is a common component which can easily be substituted for vegan butter.

Make Ahead French Onion Soup

French Onion Soup isnt just my favorite because its easy and so delicious its also pretty easy to make a huge batch and freeze for later!

To freeze French Onion Soup, follow these tips:

  • Make soup as directed until bread and cheese additions.
  • Remove from heat and let cool completely.
  • Portion soup into servings youd like to serve later
  • Ladle portioned soup into ziploc freezer bags.
  • Lay bags flat on a baking sheet and place in freezer until set about 4-5 hours.
  • One soup bags are set , you can move them off the baking sheet and around the freezer wherever you have room.
  • To reheat, let soup thaw fully in refrigerator OR place frozen soup in a large pot with 2-3 cups beef stock and bring to a slow boil.
  • Have a couple cups of stock on hand just in case you need to thin the soup a bit I tend to lose some liquid when freezing and reheating so adding some liquid back helps a lot!
  • Continue with steps below to add crouton and cheese and serve.
