My mother, Christene Kirchner, and her sister Lois Epps use to make an easy chicken and rice dish for a quick summer meal. It was one of those Campbells soup casserole dishes that were everywhere in the 1950s.
Early in my married life, I started making this dish but it never seemed to come out right, the rice was either too hard or too soft. Until I discovered I could make this dish hands free and almost perfect is my Instant Pot.

Use Condensed Soup If You Can Get It
So for these photos, I used a different manufacturers can of cream of chicken soup for these pictures. .
However, the soup I used here was not condensed so the sauce is slightly different and less thick than usual. So as I mention in the recipe, if you use a non-condensed can of soup, you may want to thicken the sauce before serving, using the optional cornflour mentioned in the recipe.
So my recommendation is, if you can get your hands on some Campbells condensed cream of chicken soup, please do use that. It is just better, and will give you a thicker and tastier sauce in your casserole! Their soups really are the best!
Chicken and rice casserole
I have used chicken breast in this recipe, but if you wish you can also use chicken thighs and cook the chicken on the bone if you prefer. It is up to you.
The secret to getting the nice fluffy rice in the photos is to rinse and soak your rice before you cook it. Check out some tips in my pilau rice recipe, just leave out all the added ingredients and add only a pinch of salt, but follow the same process of rinsing and soaking.

If you remember you mixed the raw rice with Campbell Cream of Mushroom Soup, then the same can full of milk, layer this in a 13 x 9 casserole pan, my favorite is here and put the chicken on top. You bake covered with aluminum foil in the oven at 350° for one hour then remove the foil and bake 15 minutes more. Most of the time when I made the rice was crunchy which happened one night when we had my best friends over for a dinner party.

How To Make Canned Chicken Noodle Soup Better
Campbells canned chicken noodle soup already tastes wonderful. However, if you feel something is missing then you can try adding some ingredients to bring out more flavor. Try herbs. Melt a little butter in a nonstick pan on low heat and add your favorite herbs. It can be rosemary, sage, dill, parsley, etc. Saute them for about 30-40 seconds and add them to your bowl of soup. Give a good stir before consuming. Herbs not only enhance the taste but they hold great properties that benefit health.
If it is your cheat day then instead of herbs you might want to shred a cube of your favorite cheese before heating the canned chicken soup. You can use mozzarella cheese, as it thickens the broth as well as adds a cheesy flavor to the canned chicken noodle soup.
