A proper gluten free broccoli cheddar soup is a beautiful thingand it is not cheese fondue. Does it sound like taking a spoon to a heaping bowl of warm, melted cheese might be a delicious experience? Please for the love of Mike take my word for it: its not delicious past the first bite. This gorgeous, creamy broccoli cheddar soup is, indeed, soup. It can be ladled into a bowl quite easily, and delivered to your mouth spoonful by spoonful without a fuss. And itll fill you up without making you feel ughstuffed.

It starts the way all good creamy soups start, with a roux. And its that roux that does most of the thickening for us, not the cheese. A roux is just a fat-and-flour mixture that thickens liquids, and I like to start the roux in this soup with butter. You can start yours with an equal amount of extra virgin olive oil, though. No problem.

A note about the broccoli: I believe that the very worst thing you can do to broccoli is to overcook it. So to save the broccoli from that fate, I dont cook it in the soup. Instead, I blanch the broccoli very quickly in some stock, juuuuust until it turns bright green.

Recipe Step By Step Directions:

Step 1: Wash the tomatoes and remove the green stem. Cut up the tomatoes on a cutting board.

Step 2: Add the tomatoes and garlic to a high-speed blender, food processor, or Vitamix. Pulse the tomatoes for 15 seconds until they are a smooth consistency. If you are using a Vitamix, you can put the whole tomatoes in without the stems.

Step 3: Pour the mixture into a large pot. Add the chicken stock, onion powder, salt, and pepper. Cook over medium heat. Bring to a boil and then reduce the heat to simmer for 10 minutes.

Step 4: Add the cheese and cream and stir with a wire whisk to mix them in. The cheese will melt into the soup making this creamy soup full of flavor. Cook on low heat for an additional 5-10 minutes.

Serve hot. Top with shredded fresh basil and popcorn or these homemade Gluten Free Croutons.

As I mentioned earlier, my kids love having this soup with grilled cheese sandwiches to dip in. The soup gets even better the next day as flavors mesh together!

Broccoli Cheese Soup In An Instant Pot / Pressure Cooker

You could also convert this stove top recipe into a recipe for your Instant Pot.

For a pressure cooker: Add the olive oil, onion, chicken broth, salt, black pepper, and broccoli to the slow cooker. Stir, place on the lids, and set the pressure cooker on manual, high pressure, for 5 minutes. Release the pressure naturally, then open the lid.

Add the heavy cream, cream cheese and shredded cheese, and stir until smooth.

If desired, puree part of the soup, or add the optional xanthan gum.

    The great thing about this soup is that you dont need many special ingredients to make it. You will need a gluten free flour but other than that everything else in this recipe is pretty basic. You will need:

    • broccoli
    • milk
    • cheese

    For the vegetables, you need them to be fresh. I used four whole cups of broccoli in this recipe so you need a few crowns to get started. The carrots can be either sliced or shredded like the matchsticks you can find at the store. You can use whatever type of onion you prefer. I like sweet onions so that is what I used in this recipe.

    Now you do need to use a gluten free flour for this recipe. I like the Krusteaz all purpose gluten free flour blend because its easy to use and cooks up just like regular flour.     You can use whatever type of butter and chicken broth that you prefer. I would suggest unsalted if you are going to add salt to the soup, but if not, salted butter will be just fine.

    While this soup has several steps, it comes together in about 30 minutes and isnt very hard to make.

    Here are the steps for making this recipe :

  • First, prepare the broccoli .
  • Preheat your oven to 350 degrees F and spray or brush some oil on a cookie sheet or baking pan.
  • Wash the broccoli and cut into 1 inch florets. Toss the florets with the olive oil and some salt and pepper.
  • Spread out onto the oiled cookie sheet and roast in the oven for 10 minutes.
  • Stir the broccoli around turning them over, then return to the oven for another 10 minutes.
  • While the broccoli is cooking, start making the soup base:
