Is Tofu Low Carb
Yes, unflavored, plain tofu that is not breaded and fried is very low in carbs and gluten-free. We used the firm or extra firm organic tofu for this recipe.
I also used tamari sauce in the recipe instead of soy sauce to keep this soup gluten-free.
This recipe was inspired by my Keto Instant Pot Thai Shrimp Soup which is also a yummy low carb Asian-inspired soup.

Keto Hot And Sour Soup Recipe With Vegan Option
- 1½ teaspoons Lakanto Golden Sweetener
- 1 teaspoon fresh ginger, peeled and grated
- 1½ cup fresh bean sprouts, rinsed
- 1 large egg, lightly beaten
- 1 green onion, thinly sliced
In a soup pot, heat oil over medium heat. Add mushrooms and garlic, and lightly sauté, about 2-3 minutes. Add ginger, paprika and cayenne and stir fry until fragrant, around 1-2 minutes.
Reduce heat, add broth, glucomannan , sweetener, tamari soy sauce, rice vinegar, and white pepper, stir to combine.
Simmer uncovered, over medium-low heat, until done, stirring occasionally, about 10-15 minutes. Taste and add salt to your liking.
Stir in bean sprouts and tofu and heat through. Serve garnished with green onions.

With all the recent cold weather, I wanted a hearty, yet filling vegetarian keto soup to warm my cockles and decided to throw together this tofu hot and sour soup. The glucomannan bulks up the soup, adding fibre but without all the carbs that corn starch brings, and the rice vinegar combined with the golden monkfruit sweetener makes it sweet and sour without the sugar.

This is a recipe for a relatively low carb Hot and Sour Soup that is made in one step in your Instant Pot or Pressure cooker. Do you have ANY idea how many carbs are in a restaurant-style hot and sour soup? 10 gms. In one little cup. And who drinks 1 cup of soup? Not me, that’s who!
So I wanted to make it but of course, I want this to be as streamlined as possible while still being a low carb hot and sour soup recipe. There’s one particular ingredient in there that gave me pause though, which was woodear fungus. Those are the black mushrooms that are in a typical hot and sour soup.
Traditionally they require soaking for 20 minutes to soften them. But surely if you’re cooking this in a pressure cooker, you shouldn’t have to do that should you? Wouldn’t the pressure cooker take care of this for me?
I decided to find out. So I threw in dried, non-reconstituted mushrooms along with some pork and decided to give it a shot.
Guess what? It works. You do not have to pre-soak the dried mushrooms before cooking your soup!
To no one’s surprise, I definitely added a lot of pepper to mine I hope you try this and like it. Full of protein, low carb, and full of taste, and pretty much one step.

If you are using dried shitake mushrooms then all you need to do is add the amount you need to a bowl and pour over a little boiling water to cover them and let them soak for about half an hour and then you can remove and slice them.
If you have fresh mushrooms them simply clean them off as needed with a dry paper towel and slice them.
I honestly think this soup is SO much tastier with homemade chicken broth. You can make broth really easily on the stove or in your pressure cooker, I have directions for both. As the broth forms the base of the soup you really want broth that is packed full of flavor for a great end result.
Add your chicken broth to a large pan along with the chicken breasts, diced dried red chilis, coconut aminos, fresh ginger, and garlic and let it simmer for around 15 minutes or until the chicken breast is cooked all the way through.
Take out the chicken breast from the broth and shred it with a couple of forks, if its fully cooked this should be easy to do.
Return the shredded chicken to the soup pot along with the rice vinegar, toasted sesame oil, baby bella mushrooms, shiitake mushrooms, bamboo shoots , and white pepper and simmer for about five more minutes.
The fun part is adding the egg!
Serve it hot with thinly sliced scallions on the top.

These days I make a delicious keto version at home that is low in carbs by leaving out the bamboo shoots and swapping the tofu for a bit of chicken.
