Keto Chicken Tortilla Soup is a featured menu item on virtually every Mexican restaurant in the Southwest. As a result, there are many different versions. Most are not low carb or Keto friendly. For example, most feature corn and corn tortilla chips. But, they all do have one similarity they are all delicious! Full of carbs, but delicious. We have found a way to make our Keto version truly special. We concentrate on a traditional Mexican flavor with easily found ingredients.

Clearly, we keep ours low carb by eliminating the corn and corn tortilla chips. We use our homemade Keto Almond Flour Tortilla chips to maintain the theme. These are simple and delicious. Homemade tortilla chips can be made easily using our Almond Flour Tortillas. We also add Keto garnishes avocado and Queso Fresco. For those who would miss the corn flavor, we even added some sweet-corn extract! This soup has all the flavor, just the right blend of spices, and is loaded with tender Mexican chicken.

Can I Have An Order Of The Loaded Tortilla Soup With

This is a quick and easy recipe to make. It takes only 30 minutes to make and uses mostly pantry staples. The only ingredient that is a bit different is the use of low carb tortillas for the topping.

The soup has a mild, authentic flavor. It is a very family and kid -friendly recipe, but can easily be modified to make it more spicy. Simply add a minced jalapeño or chipotle pepper or a pinch of cayenne.

It is great for low carb diets and keto friendly. Omitting black beans and corn and the use of low carb tortillas keep this recipe at only 11 grams of net carbs per serving.

How To Make Low Carb Chicken Tortilla Soup

Spray the slow cooker bowl with non stick spray and add the chicken. I used fresh thinly sliced chicken breast, but if you are using whole chicken breasts you might want to cut them into chunks for even cooking. Add some salsa it is such an easy way of adding flavor that I’ve used before in recipes like this Nacho Dip and my Quick Bacon Jam! You just have to find one that you like that’s not too high in carbs: I recommend Green Mountain Gringo salsa which you can buy online from Netrition. Also add some chicken broth or stock to the bowl.

Cook on high for one hour. Use tongs to carefully remove the chicken, and shred it with forks.

Return the shredded chicken to the slow cooker bowl, and add additional chicken broth, shredded cheese , heavy cream, salt and pepper. Cover and cook on high for 30 minutes.

Spoon the soup into serving bowls. Cut two low carb tortillas into small strips, and divide them between the bowls. Garnish with fresh cilantro and extra cheese.

You could also add hot sauce, slices of pickled jalapeños or chopped avocado to this delicious keto chicken tortilla soup!

How To Make Tortilla Soup In The Instant Pot

  • Sauté the aromatics: For Instant Pot tortilla soup, sauté the onions in the inner pot of the pressure cooker for 2-3 minutes. Add the bell peppers and pinch of salt. Sauté for 3-4 minutes, until fragrant and slightly tender. Add the garlic, green chilies along with all of the seasonings and spices. Stir in the chicken, zucchini, fire-roasted tomatoes and chicken broth , and stir until well combined
  • Pressure cook: Place lid on Instant Pot, turn vent to SEALING position, and hit MANUAL or PRESSURE COOK / HIGH for 6 minutes. The Instant Pot will take a few minutes to reach pressure. Allow a 10-minute natural release, then do a gradual quick release to release remaining pressure.
  • Adjust seasonings: When pin drops, open lid, stir in the cilantro and lime juice. Taste and adjust seasonings to taste, adding more salt, seasonings or lime juice, to taste.
  • Serve and enjoy: When ready to serve, ladle into a bowl, garnish with more cilantro, and serve with extra lime wedges, jalapeno, diced avocado, a dollop of dairy-free sour cream / coconut cream, grain-free tortilla strips, chopped onions or other toppings of choice.

Absolutely! The only things you will need to be aware of when it comes to staying Whole30 compliant with this soup is omitting the corn and making sure your salsa does not contain added sugar.

For toppings, you can use cilantro, avocado and lime wedges to stay Whole30 compliant. If you want to just stay Paleo, feel free to add tortilla strips made from almond or cashew flour. To do this, I cut up a couple Siete Foods cashew flour tortillas into strips and then cooked them in the air fryer at 370 degrees for about 5-7 minutes and I had the perfect crispy tortilla strips that are also paleo friendly.

While you can use any Electric Pressure Cooker, I have an Instant Pot 6 qt DUO60 7-in-1. It has tons of different functions, but Ive only used the high pressure, saute, and soup functions. I dont see myself using any of the other functions, but you might find them valuable. There are many different models available with various bells and whistles, but I am a basic kind of girl, so this one works perfectly for me.

How To Fry Tortilla Strips

While the soup is cooking, fry the tortillas.

Cut the tortillas into strips using a pizza cutter. Then, heat about ¼ to ½ -inch of oil over medium heat.

Once heated, add the tortilla strips to the hot oil in a single layer. Do not overcrowd the skillet and fry in batches if needed. Fry until both sides are a deep golden brown – flipping with tongs as needed.

Set aside on a paper-towel-lined plate.

    One of my favorite things about this low-carb tortilla soup recipe is that you dont need to worry about browning the chicken first before cooking it in the pressure cooker. Some Instant Pot meat recipes call for browning the meat before cooking it, but for this recipe its not necessary.

    Ive found that most of the chicken recipes Ive made in the pressure cooker the chicken doesnt really need to be browned first. We have tried several recipes with both browning the chicken first and not browning it first, and for this type of recipe, it didnt make a difference.

    So we save the time and dont brown the chicken first, and for a lot of pressure cooker chicken recipes its an unnecessary step .
