How To Thicken The Roux Without Superfine White Rice Flour

I really recommend using Authentic Foods brand superfine white rice flour. Vitacost also has a superfine white rice flour that has a relatively fine grind, too.

If you dont have a truly superfine white rice flour, you can try using arrowroot in its place. You can also try using tapioca starch/flour, but it may make the sauce gummy so try using 20 grams instead of 30.

If you use too little thickener in your soup, you can continue to cook the soup over medium-low heat to thicken it further. The more water that evaporates, the thicker the soup will be.

This simple but flavorful chickpea vegetable soup, is a Moroccan inspired recipe. Its a hearty and delicious meatless soup thats naturally gluten free and vegan too. Its packed with plant-based protein and will keep you full for a while.

This chickpea vegetable soup starts out just the way many soups do with onion, garlic, carrot, sauteed just a bit before adding the rest. You can either use canned chickpeas or boil dry chickpeas the day before, its up to you.

The aromatic spices including cumin, turmeric, coriander and ginger provide warmth to the recipe. And the tomatoes gives it a pleasant sourness which brings the flavor to the next level.

I usually like to soak and then simmer a large pot of chickpeas and reserve a small portion for the soup and the rest goes to freezer.

Then I cover the beans with several inches of water, and bring everything to a boil. I let them simmer for aprox. 2 hours, until tender. Some say changing the water after bringing to a boil can reduce the gassy effects of fresh beans making the beans easier to digest. To boost their nutrition sprouting the beans before cooking is another option.

Easy gluten free cream of chicken soup to substitute for canned condensed cream of chicken soup in all of your favorite recipes. It takes only 10 minutes to mix this up on the stove, and it is creamy and delicious. It is also delicious by the bowl.

  • 3 tablespoons Butter, Or olive oil
  • 3 tablespoons Rice Flour
  • ¾ cup Chicken Broth, Or vegetable broth
  • ½ cup Milk, Dairy or non-dairy

How To Make Gluten Free Vegan Cream Of Mushroom Soup

The only animal products in this soup recipe are the dairy. Theres butter, and evaporated milk, and youll have to replace them bothbut its really easy.

How to replace the butter in this soup

To replace the butter, I always recommend vegan butter instead of Earth Balance buttery sticks. But I think you could actually use Earth Balance here, too.

Earth Balance will add more moisture, though, and more color. You should allow the roux to cook lower and slower, so it doesnt burn but the moisture cooks off.

How to replace the evaporated milk in this soup

To replace the evaporated milk, Carnation makes a small carton of nondairy cooking milk that has reduced moisture. Theres also evaporated coconut milk made by a company called Natures Charm that might be worth trying.

I dont recommend using regular nondairy milk, unless youre willing to reduce it separately in a saucepan first over very low heat. Otherwise, youll really just water down your soup.

Instead of evaporated coconut milk, you can try using light coconut milk in the can. Its really just coconut milk with added water.

  • Brown Beef: Add ground beef and chopped onion to a large skillet over medium high heat and cook until no pink remains and onions are soft . Drain any excess grease.
  • Mix Together Ingredients: Add all ingredients to the slow cooker and stir to combine.
  • Cook: Cook on low for 6-8 hours or high for 3-4 hours.
  • Serve: with chopped cilantro, avocado, or your favorite corn chips.
  • How to Make Instant Pot Taco Soup:

  • Brown Beef: Select the Saute button the Instant Pot with the Normal temperature setting. Once the Instant Pot reads Hot add ground beef and chopped onion and cook until no pink remains and onions are soft . Drain any excess grease.

    The secret to making a dairy free cream of mushroom soup is using coconut cream instead of heavy cream. And to make it gluten-free, wheat flour is replace with either arrowroot powder or glucomannan as the thickener.

    To start, melt the butter flavored coconut oil in a large saucepan or skillet. The mushrooms and onions are added next and sautéed for 5-7 minutes, until onions are translucent.

    Garlic is then added and cooked for another minute or two. The chicken broth is stirred in next and then the mixture is brought to a boil.

    Once boiling, the arrowroot powder is whisked in. Then the soup is allowed to simmer until the liquid is reduced by about half.

    When reduced, about of the mixture is processed in a blender until smooth. That mixture is then placed back into the pot, continually whisking in coconut cream until smooth.

    • Tortilla I used Udis Gluten Free large plain tortillas. Theyre dairy, soy, and nut free too. I only needed one large tortilla to make enough for our 4 servings of soup, but if youre doubling or tripling the recipe, youll want to do the same with the tortilla strips. Note: these tortillas freeze well, so I put the leftover tortillas in the freezer so I can pull them out, thaw, and make tortilla strips again the next time we want this soup!
    • Chicken Broth- Be sure to use a chicken broth that is clearly labeled gluten-free, or use your own homemade chicken stock. I use Pacific Foods Organic Chicken Broth. If you opt for a low-sodium version, be sure to taste your finished soup to make sure you dont need to add a bit of salt for flavor.
    • Diced Tomatoes I prefer the petite diced tomatoes over the regular sized chunks. You can also use a can of petite diced with jalapeño instead of plain to give this soup some kick!

    This is truly a 30 minute meal! I was running a stop watch while I cooked and prepared to serve. Even with writing the recipe down and adjusting seasonings as I worked, I still got it done in 30 minutes!

    CORN STARCH OR POTATO STARCH

    A type of sweetener made from corn.
