How To Make Vegan Cream Of Celery Soup

Homemade Condensed “Cream” of Celery Soup ~ Dairy Free, Gluten Free, & Vegetarian

This is truly a simple soup. Simply heat a soup pot over medium heat and throw all the vegetables in – celery, a diced onion, garlic and potatoes – along with the vegetable stock, cashews and spices.

Bring to a gentle boil then reduce heat and simmer until the veggies are tender. About 15 minutes.


Stir in some fresh parsley. Remove from heat and puree.

I like to puree my soup in a blender. I find I get the creamiest and smoothest texture using a high-speed blender. I use Blendtec. A high-speed blender is definitely an investment, but worth it as it will last a lifetime.

If using a blender, you will need to blend the soup in 2-3 batches. Do not overfill your blender with hot soup! And make sure the blender is vented. Most blender lids have some vents built-in. Place a kitchen towel over the vents of the blender so you don’t get splashed by hot soup and to protect yourself from hot escaping steam.

You can also use a hand-held immersion blender or a regular blender.

TIP: If using a hand-held blender or regular blender make sure you slice your celery thinly. The fibrous ribs in celery may not break down as well with a lower-powered blender, so make sure you slice the celery thinly to get a smooth soup. If you are using a high-speed blender, I don’t find being this precise is necessary.

A Few Tips To Help You Pick Fresh Celery For This Soup:

Make sure that the celery has sturdy, upright stalks. The stalks should snap easily when you pull them and not bend.

The leaves on the celery stalks should be crisp, fresh. and green not yellow or brown.

Make sure to wait until you need to use the celery to chop it up. Celery loses nutrients the longer it sits after it is chopped, so best wait. With that said, try to use up celery that you bring home from the store, within 5-7 days.

How Is This Soup So Creamy

This celery soup gets its creamy and thick texture from a can of cannellini beans. No cream or any sort of milk. After sauteing all the ingredients together, I added them to a blender. After a few whirls, this creamy, thick soup was the result.

This week, temperatures are supposed to drop into the upper 40s here in Covington, Georgia. Which makes it the perfect time to dig out the thick sweaters and enjoy big bowls of this vegan celery soup. Though, if I am going to be honest, I started making soup when the lows dropped down into the 70s

Do keep in mind that celery and beans are filled with fiber. So, balancing a bowl of this soup off with some roti, naan, or crusty bread would help cushion the effects of all that fiber.

I have made this celery soup with potatoes and some cashew milk instead of beans. However, in my humble opinion, I prefer the taste of this soup with beans. Cannellini beans are mild and let the taste of the celery and other ingredients shine through.

How To Make This Creamy Dairy

With only a few ingredients, this soup is easy to make: chop the veggies in pieces, cook, and puree with an immersion blender or in a regular blender. Thats it! A big batch of nourishing and satisfying soup is ready.

The soup also stores well: you can store it a few days in the fridge, or freeze portion-wise for a later use.

Notice that the fresh parsley is added in the end, after cooking the celery and the leek. There are a few reasons for this. First of all, fresh parsley just tastes so much better than cooked parsley. As the herb is mild, we want to get all the taste out of this seasoning, and since fresh parsley has more taste than cooked parsley, well add it in the end, just before pureeing the soup.

Moreover, fresh parsley provides beautiful, green color for the otherwise pale soup. And last but not least: cooking destroys some important nutrients, so as we want to keep the soup as nourishing as we can, we dont cook the parsley but use an ample amount of fresh parsley that is super-high in nutrients.

I went through my idea list and found a draft for a soup containing leek and fennel.
