Cover and bring the chicken soup to a boil. Turn down the heat and allow this chicken soup to simmer for two hours.

After the chicken cooks in the soup for 2 hours, remove the chicken to a separate pan so the bones don’t all fall apart in the soup.

• Chicken stock: choose a low-sodium broth to have better control over the seasoning. Next to homemade, my personal favorite store-bought brand is this one.
• Chicken thighs: Youll need 2 pounds boneless, skinless chicken thighs. The dark meat is very tasty, holds up best in soup and doesnt become dry like the breast meat.

GrandmasChickenSoup.com is the brainchild of siblings David Poritzky of Boxford, and Betsy Maselek of Marblehead. The cooking is handled by David, 34, a chef, caterer and owner of Davidâs World Famous, a Woburn restaurant located in a corporate office park, that features fresh sandwiches and soups. His older sister, Betsy, 40, controls the sales and marketing.

“We have been eating our bubbyâs original chicken soup recipe for our whole lives, and have been selling her chicken soup for years. After doing extensive research, I discovered that the only type of soup you could order online and have delivered is Legal Seafoodâs chowder. There is no one shipping homemade chicken soup. David and I have always wanted to do an Internet business together. We already had the product â this seemed like a natural offshoot,â explains Betsy.

Ive fallen hard for my electric pressure cooker. Im so glad I invested in one a few years ago.

Now I use it to make so many dishes Id usually slow-cook, like creamy pasta fagioli and a rich Sunday-style meat sauce for pasta.

Forget about simmering a chicken all day in a large soup pot. If you have a pressure cooker or Instant Pot, this soup is even quicker to make.

Chicken thighs are tasty and dont dry out when theyre slow-cooked or pressure cooked the way chicken breasts can. Thats why they are my first choice to use in soup.

Freezing Chicken Noodle Soup

Note: If you intend to freeze the soup, leave the pasta out until after its thawed. Cooked pasta will absorb the broth and get soggy.

• Portion the soup intofreezer-proof containers3/4-full to allow for expansion and allow to cool completely.
• Fasten the container lids securely. Mark a piece of masking tape with the date and place in the freezer. Store for up to 2 months.
• Thaw overnight in the refrigerator or use the defrost setting on a microwave.
• Cook the noodles and add to the thawed soup after reheating.

What started in the small kitchen of the Poritzky family in Massachusetts, became a considerable success that dazzled Boston, New York and Atlanta, among other areas.In 2004, Janice Poritzky, a loving grandmother of seven and a spectacular cook, began spreading her divine recipes across the nation, offering a taste of her Jewish essence.
