  • 2tablespoonvegan butter or olive oil
  • ¼cupdiced onion
  • 1cuplow sodium vegetable broth
  • 1cupalmond milk
  • ¼cupregular or gluten free all purpose flour
  • 24ozcooked cut green beans
  • ¼cupfried onions

Cream of Mushroom Vegan Green Bean Casserole

  • Preheat oven to 350
  • Bring a medium saucepan with vegan butter to medium heat. Once warm, add the onion and garlic. Cook for 2 minutes until the mixture is golden and fragrant. Add the mushrooms and cook for 5-7 minutes until the mushrooms are lightly browned.
  • Once the mushrooms are brown, pour in the vegetable broth, almond milk, and pepper. Bring to a boil and then remove from heat.
  • Sprinkle in ¼ cup flour and immediately use an immersion blender to blend the ingredients together until creamy.
  • Pour the green beans into a 9×11 casserole dish and then pour the cream of mushroom soup over the green beans. Sprinkle the fried onions over the top and cover the dish with foil. Bake in the oven for 15-20 minutes. Remove the foil and return the casserole to the oven for another 10-15 minutes. Serve immediately.

Canned soup can be a no-no on the keto diet, because of some are made with milk, adding carbs. Surprisingly, canned soup can also be high in sugar. Instead of making a homemade mushroom soup , I used a mix of cream cheese and sour cream. It created a really creamy base for this green bean casserole instead. Mushrooms are also added which, when combined with the cream cheese give the idea of mushroom soup.

Can Cheesy Green Bean Casserole Be Prepared Ahead Of Time

This casserole can be made up to 24 hours before serving. Instead of baking it, cool the casserole completely, cover it with foil or plastic wrap and store it in the refrigerator.

Then when you are ready to bake it, let it sit at room temperature before baking. Add an additional 10-15 minutes to the bake time to make sure the casserole is heated through.

When preparing our Thanksgiving menu, I like to make note of the recipes that I can make ahead of time. This one is always on the list.

What Can I Use Instead Of Almonds For Toppings

If you don’t want or like almonds you can crush up plain pork rinds and sprinkle them over the top and then bake as accordingly. The pork rinds are low in carb and will give you a nice crunch factor that you want. If I was swapping out almonds I would do the hint below OR Mix melted butter into crushed pork rinds and parmesan. WAIT. Did I forget to say bacon? Bacon or ham to fancy it up would taste fantastic on top.

HINT– if you miss the French Fried Onions for the topping simply slice a small shallot VERY thinly, in small pieces, dust with almond flour and crushed pork rinds. Pan fry or bake on 400 degrees for a few minutes to brown and get crispy.

Last year my goal was to make the entire Thanksgiving menu from scratch. Usually I dont have such ambitious goals but I was having a moment.

This Green Bean Casserole is kind of my compromise. I didnt make the crispy fried onions from scratch because why. Like really why when I can buy them and they taste better.

But the homemade cream of mushroom soup is actually so easy. Its just a basic bechamel sauce: a roux mixed with milk. My husband said this is the best green bean casserole hes ever had, the star of the show. We have it at the holiday table every year.

This is a weird year and just about everyone knows that this Thanksgiving wont be a normal thanksgiving with lots of friends and family. Green Bean Casserole is a classic Thanksgiving side dish that everyone loves! Fresh green beans mixed with homemade cream of mushroom soup and topped crunchy french fried onions then baked until golden and bubbly makes the perfect accompaniment to any holiday meal.

I didnt have Green Bean Casserole for the first time until I was 13 or 14, when a family friend from America came to visit us for Canadian Thanksgiving. They wanted to share a dish for dinner, and this was it. They used canned green beans, a can of cream of mushroom soup and a whole heap of french fried onions. It was absolutely delicious, and I think I asked my Mom for it at least once a week for the next few months.

We continued making Green Bean Casserole this way, and Mom still does, and its still the classic comfort food I remember as a kid, and love to this day. But, classic Green Bean Casserole is not healthy. It has a lot of processed ingredients in it, sometimes giving it thatcanned taste. I wanted to change up the recipe to make it a little healthier. I still use the french fried onions, but I now use fresh green beans and Homemade Cream of Mushroom Soup.

What really makes Green Bean Casserole shine is fresh green beans. Tim and cut green beans into thirds, and cook for 5 minutes in boiling salted water. Drain, and set aside to cool. To make Thanksgiving, or any meal prep easy, you can cut and blanch the green beans up to a week in advance.

Gather Your Ingredients For Healthy Green Bean Casserole

To make this healthy green bean casserole, start by gathering the ingredients. You will need yellow onions, olive oil, breadcrumbs, flour, salt, green beans, unsalted butter, baby bella mushrooms, pepper, vegetable broth, minced garlic, and parmesan cheese.

And while you’re in prepping mode, go ahead and preheat the oven to 425 F and spray a large baking sheet with nonstick cooking spray.

Soy Sauce Vs Fish Sauce

Believe it or not, soy sauce was integral to this recipe right when it was invented in the 50s. Im personally in shock that it was a popular enough ingredient back then that they included it, but it sure adds a deep layer of flavor you cant get otherwise. It blows my mind how way ahead of her time Dorcas was with her use of soy sauce, which she chose over celery salt. Was soy sauce just that common in the 50s?

But you know, even though things can be too salty, sweet, sour, or bitter, Ive never heard anyone say something was too umami. So I included fish sauce in my version to really boost that umami off the umami chart.

If you are really well stocked , I recommend mushroom dark soy sauce for extra mushroom flavor. It goes great with anything else youd ever want to use soy sauce for too.

How Do You Reheat Green Bean Casserole

My favored way to reheat the green bean casserole is by adding a little butter and cream or almond milk and then using the oven. You can of course pop it in the microwave for a quick reheat. If using the oven- 350 degrees for about 20 minutes. Mix. Then add more Parmesan cheese to the top, finish for 10 minutes. To make this a full meal way to use leftovers, add some chopped turkey or ham before reheating. Just check to see if the dish is warmed all the way through and serve it up. Yum.

  • Fresh Green Beans: I make my green bean casserole with fresh green beans. I get these washed and trimmed from the market. Then, I steam them in the microwave until they are tender.
  • Braggs 24 Herb Sprinkle Seasoning: this is the same seasoning from above
  • Mozzarella Cheese: I use low moisture shredded cheese, but you can use cheddar cheese, Monterey Jack or shredded cheese blends like Italian Blend cheese.
  • French Fried Onions: These add a bit of a crunchy texture to the dish, but, if you want to make green bean casserole without fried onions, then you can use the cheese and nut topping from my other recipe.
