How to make Gluten Free Cream of Mushroom Soup

Easy recipes are the best kind of recipes! Follow these instructions to make this simple soup.

Cook the Bacon: In a dutch oven on medium heat, sauté the diced bacon until crispy. Use a slotted spoon to remove the crispy bacon, but leave the bacon fat in the dutch oven.

Sauté Aromatics: Add the butter, carrots, and onions then sauté until translucent. Add the garlic and cook for 30 more seconds. This will prevent it from burning.

Add Flour: Stir in the gluten-free all-purpose flour.

Add Broth & Simmer: Add the chicken broth, potato chunks, and salt. Bring the mixture to a boil, then reduce the heat. Let the mixture simmer until the potatoes are fork tender. Stir the mixture occasionally to prevent the bottom from burning.

Add Milk & Cheese: Stir in the milk, cream, and parmesan. Let it cook for 3 more minutes so the cheese can melt.

Blend & Serve: Use an immersion blender to blend the soup to desired thickness. For a chunky soup, leave some potatoes and veggies unblended. Serve and add your favorite toppings!

How To Make Vegan Cream Of Mushroom Soup

Chop your veggies. Start by mincing your mushrooms and onions. Since Im not a huge fan of mushrooms, I decided to mince mine in the food processor, but you can chop them to whatever size you prefer. I did the mushroom in there, too, since it was already out.

Sauté the vegetables. Heat a large saucepan to medium high and add some olive oil . Add the mushrooms, onion and garlic and sauté until soft and translucent. This should take about 5 minutes.

Make the roux. Sprinkle the flour, salt, pepper and thyme, and stir to coat the vegetables until a paste forms.

Add the liquid. Whisk in the mushroom stock and almond milk, until smooth.

Let it simmer. Bring the liquid to a boil and then reduce the heat to let the soup simmer until it reaches the consistency youre going for. If youre making this as a substitute for condensed soup, youll want to let it simmer a bit longer.

Making gluten free cream of mushroom soup is quick and easy.

It takes less than ten minutes, and you only need a few ingredients.

To make gluten free cream of mushroom soup you’ll need:

  • Oil or butter. I used olive oil because it adds a subtle fruity flavor, and is a healthy cooking oil. If you are making your gluten free cream of mushroom soup with dairy, butter should be your first choice.
  • Mushrooms. I used plain white mushrooms and chopped them finely. If you prefer, you can use sliced mushrooms or coarsely chopped mushrooms.
  • Gluten free flour. The gluten free flour acts as the thickener to make the gluten free roux. I used my gluten free flour blend, but you can use just rice flour, or any gluten free flour blend in your pantry. You’ll have best results if you use a gluten free flour that doesn’t have xanthan or guar gum in it.
  • Broth. I used beef broth because I wanted my gluten free condensed cream of mushroom soup to be very meaty. If you prefer, you can use a chicken broth or vegetable broth. To make it vegan, use a vegetable broth.
  • Milk. I used an unsweetened plain coconut milk this time, but I’ve used unsweetened plain almond milk in the past. You can also use dairy milk, or lactose free milk. As long as you don’t use a sweetened vanilla flavored milk, you should be set.
  • Salt and pepper. Essential if you don’t want your soup to taste bland.

No Dairy Creamy Chicken Potato Soup

4 medium red potatoes2 tablespoons garlic confit6-8 cups organic chicken broth1 cup onion1-2 teaspoons sea salt1/2 teaspoon freshly ground pepper4 large carrots3 cups rotisserie chicken2 cupsfrozen corn

Instructions

  • Combine the potatoes, garlic, chicken broth, onion, sea salt, and pepper in a large pot. Cook over medium heat, stirring frequently, until boiling.
  • Use your hand held blender on the soup, until it is smooth and creamy. You can also do these first steps with a Nutribullet on the heat setting, then transfer to a pot.
  • Keep the soup over low heat and add the remaining ingredients. Simmer covered until you are ready to eat it. Serve warm and garnish with herbs. Enjoy!

Here are three tried and true substitutes for the famous Campbells concoctionA basic white sauce will stand in every time. Its the baseline sauce for the good life-if you can master it, then substitute it in recipes calling for Cream of Mushroom soup, you can live without the Campbells version in any recipe.

    Number One: Recipe for Homemade Cream of Mushroon Soup: Much richer than the mock version, but the mock one is pretty good as a stand-alone dish. If you have company coming or dont particularly care about the calorie count, this is delicious.

    Its hard to believe that Thanksgiving and Christmas are right around the corner. The change in weather is a bummer, but darn it am I a sucker for a good hand cutout turkey craft, plus I got the most darling copper jingle bell garland that I cant wait to hang above our stockings when the time is right.

    In the meantime, Im making soups. Thick and creamy, no-can-required cream of chicken and mushroom soups that are not only gluten-free but easily made dairy-free, and concocted from 100% fridge and pantry staples.
