The late Dorcas Reilly, a chef working in what is now called the Campbells soup company test kitchen created the original green bean casserole recipe back in 1955.

Can I Make This Recipe Ahead

This recipe is a wonderful make-ahead side dish and it also travels well! I usually prepare it a day or two before Thanksgiving to save me time on the actual day. It stores perfectly in the fridge for up to 48 hours before baking.

To make this casserole ahead:

  • Complete all the casserole steps until its time to put the bread crumbs and french fried onions on top. Save those to be added fresh, so they do not get soggy.
  • Store the prepared casserole in the fridge, wrapped tightly with saran wrap or foil.
  • Then about 30 minutes before youre ready to bake it, allow the casserole to sit at room temperature to warm up some.
  • Before baking, top it with the bread crumbs and the layer of french fried onions on top and bake according to recipe directions!

This casserole has a few more steps than the classic green bean casserole recipe thats on the back of the Campbells Green Beans can, but I promise it is SO worth it.

  • Chop your beans in half or in thirds for easier eating or leave them whole. Either approach works.
  • Even though Im a HUGE fan of mushrooms, I actually prefer green bean casserole without them so the fresh, bright green bean flavor can come to the forefront without being muted by the mushrooms. But there is a note at the end of the recipe with instructions on when and how to add the mushrooms to this dish if you prefer it that way.

Green Bean Casserole is a standard for every holiday dinner around here & many a weeknight meal too. Its one of those classics that almost everyone seems to love. Well, everyone except my 8 year old, but Im working on that haha. I had both my daughters eating vegetables at his age with no problem, but my boy? Hes a whole different case. He can eat a jalapeño but he wont touch anything else in the vegetable category unless I sneak it unnoticed into something hes already. That boy is so much his fathers son.

But we all know whats good even if the 8 year old hasnt figured it out yet. Green Bean Casserole is definitely one of my favorites & one of my daughters as well. I really havent met many folks who didnt like it.

Most versions are made with canned soup, and while those taste pretty good too Im going to introduce you to my favorite Green Bean Casserole that tastes way better & doesnt have one single can of soup in it.

Instead of using cream of mushroom soup, I saute fresh chopped mushrooms & onion on the stovetop in a little butter & make a super simple and flavorful sauce in the same pan. The fresh mushrooms add so much more fresh flavor than the canned soup, obviously.

How To Make Green Bean Casserole

  • Make the mushroom sauce: In a large pan or skillet, fry the mushrooms in a tablespoon of olive oil until golden brown. Add the garlic and cook until fragrant. Sprinkle in the flour and stir to coat the mushrooms then pour in the cream and milk. Whisk until the sauce is smooth then season with nutmeg, salt and pepper. Allow to simmer for 5 minutes until smooth and thickened.
  • Blanche the green beans: Bring a large pot of salted water to the boil over medium high heat. Trim the green beans by cutting off the tips and halving them. Add the beans to the boiling water and allow to simmer for 2 minutes then drain and rinse with cold water.
  • Prepare the topping: Melt the butter in a pan then add the bread crumbs and onions. Toast for a minute or two then remove from the heat and add the Parmesan.
  • Assemble: Place the green beans in the bottom of a casserole dish or oven proof baking dish. Pour over the mushroom sauce and top with the panko mixture. Place in the oven.
  • How long to cook green bean casserole: Bake the casserole at 180ºC/350ºF for 20-30 minutes until crisp, golden and bubbling. Remove from the oven and allow to cool for 5 minutes then serve.

    Believe it or not, soy sauce was integral to this recipe right when it was invented in the 50s. Im personally in shock that it was a popular enough ingredient back then that they included it, but it sure adds a deep layer of flavor you cant get otherwise. It blows my mind how way ahead of her time Dorcas was with her use of soy sauce, which she chose over celery salt. Was soy sauce just that common in the 50s?

    But you know, even though things can be too salty, sweet, sour, or bitter, Ive never heard anyone say something was too umami. So I included fish sauce in my version to really boost that umami off the umami chart.

    If you are really well stocked , I recommend mushroom dark soy sauce for extra mushroom flavor. It goes great with anything else youd ever want to use soy sauce for too.
