How to Make Tomato Soup | Easy Homemade Tomato Soup Recipe

Yes you can, although I havent tried it yet so cant give you too many specifics. You are going to want to roast your tomatoes. Take about 3 and ½ pounds fresh tomatoes, roughly chop, drizzle with olive oil and salt and pepper, and roast on a pan for about 30 minutes at 450. Then broil for a minute to give them char, and use the tomatoes in place of the canned tomatoes in this recipe!

For Slow Cooker Tomato Soup:

    Can I Boil Fresh Tomatoes

Add a little water to the pot, about 1/4-inch worth. Cover and bring to a boil, then reduce heat to medium, and continue to cook, covered, until the skins burst and loosen from the fruit enough to slip them off once cooled. People apply this same method to the oven, slowly roasting the tomatoes instead of steaming.

    Canned Tomatoes Are Best

While fresh ripe summer tomatoes can make a lovely tomato soup, when it comes to mastering classic tomato soup, canned is best. Canned tomatoes provide a consistent soup whether youre making it October or January. You can use whole canned tomatoes or even canned diced tomatoes for making this soup in a pinch, but Ive found crushed tomatoes have the right amount of acidity and flavor and dont require as much blending time.

Rach uses fresh tomatoes and a handful of pantry staples to make this warm weather version of tomato soup

If you don’t have fresh tomatoes, you can use canned tomatoes insteadjust swap in two large 28-ounce cans or three 15-ounce cans.

Rach likes to pair this soup with a grilled cheese sandwich, and she’s made two to celebrate warm weather:

    • 5 to 6 large tomatoes
    • 2 tablespoons extra-virgin olive oil
    • 2 tablespoons butter
    • 2 medium or 1 large Vidalia onion, chopped

    • 2 cups homemade or store-bought vegetable stock or chicken bone broth or stock

Can You Add Cream To Tomato Soup Without Curdling

Yes, just keep the heat low! I always add the cream after the heat has been turned off entirely. To avoid curdling on any soup recipe, do not let soup made with dairy come to a rolling boil! A very low soft simmer is fine. But an angry rolling boil will curdle your soup faster than you can say lumpy.

My sister Nikki told me the other day that she was in a hurry to get the last remaining vegetables in one of my creamy soups softened, so she brought it to a boil. She called me, laughing, to confess. The entire soup curdled. So just remember, to all the Nikkis out there in a hurry, no rapid boils for soups with milk or cream in it. Think low and slow.

Tomato Paste Substitute From Tomato Sauce

Canned tomato sauce can be transformed into a substitution for tomato paste in a relatively short amount of time. Start with plain tomato sauce if possible.

Pour a small can of tomato sauce into a saucepan and bring it to a brisk simmer over medium heat. Simmer, stirring constantly, for about 7 minutes, or until reduced by about two-thirds. Use a splatter screen to avoid a mess from the bubbling as the mixture thickens.

You should have about 3 ounces of tomato paste from an 8-ounce can. You can also use a larger can of tomato sauce, but you will need to cook the mixture for longer to reduce by at least two-thirds.

This recipe calls for heavy cream which is optional. I dont generally add the cream, however, sometimes tomatoes can be very tart so the addition of extra cream can help smooth out the flavor.

What Does Tomato Paste Do In Soup

Tomato paste is widely used in Italian dishes. It is used to inexpensively thicken, color, and enrich the flavor of tomato sauces and other semi-liquids such as soups and stews. Be careful not to add too much, which can result in an overpowering tomato flavor or give the sauce too much of an acidic edge.

    Ingredients For Tomato Basil Soup

Since this is a tomato-based soup, it is important to offset the acidity with some key ingredients. We use a combination of cream, parmesan, and a little sugar to balance the soup.

    • Butter use unsalted butter to sautee onions
    • Yellow onion it seems like a ton of onion but it dissapears into the soup adding a balanced sweetness
    • Garlic youll need 1 Tbsp minced from about 3 cloves
    • Crushed tomatoes with their juice, preferably San Marzano tomatoes
    • Chicken stock for the best flavor use homemade chicken broth
    • Basil chop and add 1/4 cup fresh basil, plus more to serve. Basil leaves are easily bruised so chop by stacking a bunch of leaves then roll them into a log and cut into thin strips.
    • Sugar Its just 1 Tbsp, but necessary to combat the tomato acidity.
    • Black pepper start with 1/2 tsp and add more to taste
    • Whipping cream adds a creaminess to the soup and offsets acidity.
    • Parmesan cheese adds saltiness to the soup and balances acidity. Adding parmesan adds enough salt and I usually dont add more.
