Why We Love This Classic Cheesy Hash Brown Casserole

Hash brown casserole is a big hit in our household. Its the most asked for a side dish to serve on Easter, Thanksgiving, and Christmas Eve. There is just something so festive and comforting about sharing a warm, delicious casserole loaded with creamy potatoes and cheese!

Our love of this hash brown potato casserole recipe began at a Christmas potluck many years ago. Someone brought this wonderfully cheesy dish and it was love at first bite. She called it a copycat Cracker Barrel hash brown casserole recipe. I asked for the recipe and over a decade later, Im sharing it with you here.

Although we call it hash brown casserole, some know this potato dish as funeral potatoes. According to Southern Living, funeral potatoes are a potato-based dish in casserole formthe ultimate comfort foodthat is usually served hot at potlucks. Its a widespread tradition to serve them at gatherings held after funerals, hence the name.

By any name, it is impossible to resist the cheesy potato goodness in this casserole. You only need one bowlto make it in under an hour with a handful of pantry staples like frozen shredded potatoes, cream of chicken soup, and simple spices. Plus, as we might have mentioned, plenty of cheese!

How To Make Hash Brown Casserole

Preheat the oven to 375°F and coat a 9×13″ baking dish with cooking spray.

Combine the hashbrowns, sour cream, soup, chopped onion, cheese, and four tablespoons of melted butter, garlic powder, salt, and pepper in a large bowl. Stir well and then spread the mixture in the prepared casserole dish.

Place the rest of the butter and all of the corn flakes in a saucepan. Heat them over medium heat and saute them for three to five minutes or until the cornflakes are lightly golden.

Sprinkle the buttered cornflakes over the casserole and then cover the baking dish with foil. Bake the casserole for 35 to 40 minutes. Uncover it in the last five to ten minutes of the baking time so that it can brown on top.

How Do You Make Hash Brown Casserole From Scratch

Make Your Own: Cracker Barrel Hashbrown Casserole

This HashBrown Casserole recipe is easy to make without any chopping! Heres how withstep by step photos and instructions:

Step 1 Make Sauce: Melt butter in a very large skillet or Dutchover medium heat . Whisk in flour then cook,while stirring for 2 minutes. Turn heat to low then gradually whisk in milk and1 ½ cups chicken broth. Whisk cornstarch with remaining chicken broth and addto skillet followed by Dijon, Worcestershire sauce, chicken bouillon and allspices/seasonings.

Step 2 Thicken Sauce: Bring sauce to a simmer, whisking constantly,until thickened.

Step 3 Add Cheese: Remove from heat and whisk in cheddar untilmelted followed by Gruyere cheese until melted. Whisk in sour cream until blended.

Step 4 Add Hash Browns: Stir in defrosted hash browns untilcompletely combined.

Step 5 Transfer to Dish: Transfer hash browns to prepared baking pan and spread into an even layer. Evenly top with 1 cup shredded cheddar. Combine Ritz with melted butter and stir with a spatula until evenly coated. Sprinkle evenly over cheese.

Step 6 Bake: Cover with foil and bake at 350 degrees for 40minutes, uncover and bake an addition 15 minutes or until hot and bubbly andcheese is melted. Turn oven to broil and broil until topping is golden.

This cheesy HashbrownCasserole is super convenient to double when making so you can serve one fordinner now and have one for later. It is best frozen before it is baked.

  • Make and assemble according to directions up to thepoint of baking. You can add the topping if you want the casserole 100%assembled OR for crispier topping, store it separately and add rightbefore baking.
  • Let casserole cool completely .

Hash Brown Potato Casserole Recipe

  • Frozen cubed home fries or hash browns, thawed
  • Butter, unsalted
  • Kosher salt and fresh ground pepper, to taste

Topping Ingredients

  • Crushed butter crackers or corn flakes
  • Butter, unsalted


The first step in making this Hash Brown Casserole is to preheat the oven and coat a 9 x 13 inch baking dish with butter or cooking spray. In a medium stockpot, melt the butter over medium heat.

Once the butter has melted add the diced onions and cook until softened. Then add the minced garlic and cook for 1 minute, or just until fragrant. Be sure not to cook the garlic too long or let it turn brown because it will become bitter tasting.

Next, add the flour and whisk. Cook for an additional 2-3 minutes. While whisking, slowly pour in the broth and milk.

Continue to whisk until the mixture is thickened, about 6-8 minutes. Season with salt and pepper, to taste. Remove the pan from the heat.

Add the thawed potatoes to the saucepan with the sauce and stir. Then add the sour cream, cheese, and diced green onions. Stir until well combined.

Pour the coated hash brown potatoes into the prepared casserole dish. Smooth out the potatoes so that they are in an even layer. Set the dish aside and prepare the topping.

Hash Brown Potato Casserole is a fabulous potatocasserole recipe. It has lots of hash browns in a creamy sauce of cream of mushroom soup, sour cream, and rich cheddar cheese, then sprinkled with sour cream and onion potato chips to give it a little more zip. Its amazing with the luscious interplay of flavors. Its also fairly quick and easy to make too. Its one of our favorite holiday side dishes.

One holiday my daughter-in-law brought this casserole for dinner and it is a keeper! Im not claiming this is low in caloriesits rather more of a comfort foodbut it sure is delicious. While I received this recipe from my daughter-in-law, it is all over the Internet in many versions. Perhaps this is a recipe from Ore-Ida Potatoes, but I really have no idea who created the recipe. This is the version we like.

When I first posted this recipe in June of 2012, and then reposted the pictures in November 2013, my camera is just a cheap iPhone quality so the pictures were blurry, grainy, not properly positioned or presented, and dark and dreary. Pretty bad, huh?

Its amazing this recipe had any pins, yet it did. I recently remade this recipe for a Christmas party , and redid the pictures which depict this casserole in a much better light. ha, ha!

How To Make The Best Hashbrown Casserole

This cheesy hashbrown casserole is something that anyone can make! Its so easy but turns out perfectly every time. Your friends and family wont be able to resist the creamy, cheesy goodness.

  • Preheat Oven, Prep Baking Dish: Preheat oven to 350° Fahrenheit. Spray a 13×9 baking dish with non-stick cooking spray and set aside.
  • Combine Hash Browns, Cheese, and Seasonings: In a large bowl, mix together the frozen hash browns, onion powder, dried thyme, salt, pepper, and 1 cup shredded cheese.
  • Prepare Soup Mixture: Add the butter and cream of chicken soup to a medium saucepan. Heat and stir the mixture over medium-high heat until the butter is melted. Remove the saucepan from the stove, and stir in the sour cream.
  • Pour Over Hash Browns: Pour the soup mixture over the hash brown mixture and mix until incorporated.
  • Transfer to Pan and Bake: Pour the mixture into the prepared pan and sprinkle with the remaining 1 cup of cheese. Bake for 1 hour or until hot and bubbly. Serve immediately.

    You can cook your chicken any way youd like for this dish. A lot of people like to cook theirs in a slow cooker and shred it. You can also roast a bone-in chicken and then remove it from the bone after cooking. Or you could bake it or even pan fry it. This is a great recipe for any leftover chicken you may have! In fact you can also use leftover turkey for this dish too!

    But we also love to get a Rotisserie Chicken from the store and use that. It makes it so easy! If you see them on sale, get several, remove the chicken from the bone and freeze it. It is perfect for casseroles!
