    This veggie soup has lots of possible variations. Here are a few of my favorites:

    Add more protein by adding cooked or canned beans white beans, chickpeas, and black beans would be excellent.

    For a soup with pasta, add pasta about 10 minutes before the soup has finished cooking. Try adding tortellini like in this tortellini soup.

    Make it creamy and add a splash of cream, milk, or unsweetened dairy-free milk like coconut. You can also stir in a little bit of unsweetened yogurt or sour cream. We do something similar in this creamy veggie soup as well as in this broccoli cheddar soup.

    We love the combination of ground fennel, garlic, and red pepper flakes, but you can use other spices. Try Italian seasoning, Zaatar spice blend, Cajun seasoning, an Indian spice blend like curry powder, or chili powder .

  • Sauté onions and garlic in a non-stick pan for about 2-3 minutes.
  • Add chopped tomatoes, tomato puree, spinach, carrots, vegetable stock and salt, mix and simmer for 5-7 minutes.
  • Its time to pop in barley and macaroni and simmer for another minute.

    1 To make Hotel-style Vegetable Soup take 2 tbsp of chopped beans, 2 tbsp of chopped carrot, 2 tbsp of chopped cabbage, 2 tbsp of chopped capsicum, 2 tbsp of chopped cauliflower, 2 tbsp of chopped tomato, 2 tbsp of chopped onion, 1 inch of grated ginger, 5 chopped garlic cloves.

    2 Now, place a pan on medium flame, add 1 tbsp of butter, and melt well.3 After butter melts, add grated ginger, chopped garlic and saute well.

    4 Now add one bay leaf, chopped onion and fry until translucent and stir continuously.5 After onion turns translucent, add chopped carrot, cabbage, beans, capsicum, cauliflower, mix everything well and saute on low flame.

    6 After vegetables turn soft, add chopped tomato, 1 tbsp of green peas, 1 tbsp of sweet corn, 1 tbsp of spring onion greens and mix everything well and saute.7 Now add 1/2 tsp of pepper powder, salt as per taste, and mix well.

    8 Now add 4 cups of water and mix well.9 Now, close the lid and cook for 3 minutes on a medium-high flame.10 Now, take 1 tbsp of cornflour, add water, mix well, and prepare a slurry.

    11 After 3 minutes, remove the lid and, little by little, add the prepared slurry, mix well, and cook for 2 minutes.12 After 2 minutes, add 1 tsp of lemon juice, spring onion greens, chopped coriander.

    13 Now turn off the flame, and your vegetable soup is ready to serve.14 Now your Vegetable soup is completely ready, and you can enjoy it.
