When they were still among us, his mom would make a buffet of all the classic stuff-Swedish Meatballs,Swedish Potato Sausage, Brunabunerrice pudding with lingenberries,limpa bread caraway cheeseon and on,for Christmas Eve dinner. I have a few of her recipes, but her Swedish Meatball recipe was not real specific.I found this recipe in a cookbook,365 Ways to Cook Hamburger and Other Ground Meats and they are truly good. The husbamd likes them even better than Moms!

How To Make Them

Start by gathering a bag of frozen meatballs and other ingredients. For kitchen equipment, all you need is a 2 quart sauce pan and a wooden spoon. How much easier could it be?

  • Add the cream of mushroom soup to a large saucepan, along with the other sauce ingredients.
  • Add a bag of frozen meatballs.
  • Stir them in and make sure they are covered with the sauce.
  • Cover the pot and bring to a low simmer until the meatballs are cooked through.

    • In a large non-stick skillet, roast the bread crumbs over medium to medium-high heat, stirring constantly. Bread crumbs are done when darker in color and smell toasty. That takes about 2-3 minutes. Transfer to a large mixing bowl.

    There is a rule of thumb I use for salting food. I cook with unsalted butter and generally unsalted stock. I add Worcestershire a teaspoon at a time to taste. Why?

    Worcestershire isnt just salt, its UMAMI. It gets you to where you need to go with seasoning WAY FASTER and WAY TASTIER then salt.

    How To Make Crock Pot Swedish Meatballs:

    In a 5-6 quart slow cooker, mix cream of mushroom soup with beef broth, onion soup mix and steak sauce. Stir well.

    Then add in frozen meatballs.

    Cover and cook on low for 6-8 hours or on high 3-5 hours.

    When meatballs are ready, stir in sour cream.

    At this time, put a pot of water on the oven to boil for your egg noodles Drain noodles well when done.

    In a small bowl, combine soup, water and sour cream set aside. In medium bowl, mix thoroughly beef, bread crumbs, onion, and egg. Shape mixture into 20 meatballs. In 10-inch skillet over medium heat, in hot oil, brown meatballs a few a time until thoroughly cooked and no longer pink. Spoon off fat. Stir in soup mixture. Reduce heat to low.

  • This is not one of those slow cooker recipes that can be cooking all day long and kept on the warm setting for a couple of hours. I have found that once you add the evaporated milk be ready to eat it soon after. The longer the meatballs sit in the slow cooker, the thicker the sauce gets, and you wont have the super smooth silky gravy sauce like you did before.
  • I think its best to use evaporated milk because it makes the sauce so smooth! I tried using sour cream, which is the normal ingredient in Swedish meatballs, but I found that it takes forever for it to mix into the sauce and when it does you end up with these small white chunks of sour cream in your sauce. I prefer a smooth gravy sauce which is why I think its best to use evaporated milk.

    How To Make A Swedish Meatball Recipe

    To learn how to make a Swedish Meatball recipe, the first thing is to gather all your ingredients.

    In a large bowl combine the hamburger, diced onion, egg, ketchup, crackers that have been crushed along with half of the salt and pepper.

    Using your hands, mix all the ingredients together until combined.

    Next, form the burger mixture into balls about 1 ½ inches with the palm of your hands.

    Brown the shaped balls using the method of your choice. I prefer not to use any extra grease or fat when browning.

    Use a hot sauté pan or my favorite, a George Forman griddle. Brown 1 2 minutes on each side. Do not crowd the pan and work in batches if need be.

    In another bowl, combine the cream of mushroom and the water along with the remaining salt and pepper.

    Add a layer of the cream of mushroom mixture to the bottom of the slow cooker. Place all your browned meatballs on top of the cream of mushroom mixture.

    Coat the remaining cream of mushroom mixture over top of the browned meatballs.

    Cook on medium to medium high for at least 4 hours but you can slow cook on medium for 10 hours. Stir every so often if possible.

    Swedish meatball recipes are all over the internet. Most are very similar, all but for the spices that I incorporate directly into the meat mixture. Bold nutmeg and sweet-scented allspice balance everything in addition to salt and pepper.

    AND, I make a point to dust the final product very lightly with a combination of the two just before serving. To me, the nutmeg and the allspice are what breathe life into these beautiful little meatballs with sauce.

    And the Swedish meatball sauce or gravy? I know I will be asked if it can be made without heavy cream or with sour cream, or even cream of mushroom soup. The answer is probably, but not here.

    There is something special about Swedish meatballs with cream of mushroom soup. The depth and richness of mushroom soup takes meatballs to the next level that cant be replicated by other ingredients. Whenever possible, I make my own cream of mushroom soup, but a can of store-bought soup will do the trick. A cup of the soup is enough for this recipe but you can easily add another half a cup if you like.

    To introduce some color and acidity, and more flavor, I like adding a tablespoon or two of Worcestershire to the mushroom sauce, but thats totally optional in this recipe.

    The trick to making the Swedish meatballs more flavorful is to roast bread crumbs before mixing them with ground meat. Very few recipes that Ive seen recommend doing and thats a big omission. Seriously, follow this tip and you will understand what I am talking about. It only takes a few extra minutes.

    How To Make Swedish Meatballs With Frozen Meatballs

    Frozen Meatballs – Yes you could of course make your own but that kind of defeats the whole purpose of this recipe being easy. I have to put a shoutout to the best frozen meatballs ever here and those are the Costco ones. They sell a giant bag of Italian style meatballs that are so delicious. The membership alone is worth it just for those meatballs. Or just pick up a bag from the grocery store. Any kind of frozen meatball works here Italian style, homestyle, etc.

    Beef Broth – I have tested the recipe with full salt beef broth and it was too much salt when combined with the condensed soup and gravy packet. Use the 50% reduced sodium beef broth. But of course, as always, use regular beef broth if that’s what you prefer.

    Cream of Mushroom Soup – I don’t even like mushrooms but I love this ingredient in these meatballs. The whole point of Swedish meatballs is that creamy gravy sauce and the cream of mushroom soup adds creaminess and rich flavor with the mushrooms.

    Brown Gravy Packet – Adds tons of flavor with just one packet.


    Garlic Powder

    Evaporated Milk – I wanted to add some type of creamy element. Sour cream is the usual ingredient in a Swedish meatballs recipe but I find that it makes the sauce chunky with bits of sour cream instead of smooth. The evaporated makes the sauce so smooth and creamy.
