  • Can I substitute another type of non-dairy milk?You could probably get away with any unsweetened and unflavored variety of non-dairy milk, although the soup won’t be quite as rich and creamy as with coconut milk.
  • Is there a substitute for the wine?You can simply leave it out and skip step 10 of recipe if you prefer.

  • Can this soup be made gluten-free? I haven’t tried making a gluten-free version, but my best advice for those seeking to try would be to use cornstarch instead of flour. Simply whisk a few tablespoons into a small cup of ice-cold water. After blending the soup , return it to the pot, place it back over heat, and bring it back to a simmer. Slowly whisk in the cornstarch mixture. Be sure to add just a bit at a time as the thickening effect can take a minute. Continue adding it until the soup is as thick as you’d like it.

Button Mushrooms Although I have used button mushrooms for this recipe but I have made this soup with cremini mushrooms and baby bella mushrooms. You can use a mix of mushrooms also for this recipe.

Onions Make sure to use either white or yellow onions for this recipe.

Garlic Use fresh plump garlic. You can use more or less quantity of garlic from mentioned in the recipe card.

Parsley It is optional to use. Adds the pretty green color to the ash color of the soup. Also it adds the delicate subtle flavor.

Butter Butter adds so much more flavor to the soup. But you can use Olive Oil as well.

Rosemary Leaves Although I have used dry rosemary leaves for the recipe, you can use fresh sprig of rosemary as well.

Corn Starch It is used in the recipe as a thickening agent. You can use All purpose flour in case you do n0t have corn starch.

Milk Although I have used 2% milk in the recipe, but you can use whole milk or cream as well in the recipe. To make it vegan, use plant based milk.

Vegetable Broth Vegetable broth adds to the flavor and depth of the soup. You can use low sodium or no sodium broth. In case you do not have broth, you can use plain water.

  • Add your olive oil into your saucepan and warm for a bit over medium heat
  • Saute 3 cups of mushrooms and 2.5 tablespoons of chopped green onions.
  • Add in your chickpea flour to thicken the sauce and whisk continuously.
  • Slowly add in the unsweetened almond milk and whisk until thickened.
  • Cook the mixture for about 15 minutes on low heat. The longer the vegan soup cooks the more it will thicken.

    One of my favorite uses for this soup is to make a healthier, gluten free and vegan green bean casserole. It’s easy to make and everyone will love the fresh, delicious flavor at your holiday meal!

    Just follow the 5 simple steps below to make your own vegan green bean casserole.

  • Preheat the oven to 400°F.
  • Boil the green beans. Bring a large pot of salted water to boil on the stove. Add 1 pound of fresh, trimmed green beans, cut in half. Cook for 5 minutes, drain, then place the green beans in an ice water bath to stop the cooking. Wait 2-3 minutes, then drain the green beans from the ice bath and transfer them to a casserole dish.
  • Add the soup. Pour the cream of mushroom soup over the green beans.
