How To Store And Freeze Beef Stroganoff

Beef stroganoff will keep for three to four days in the fridge if it’s in an airtight sealed container. You can also freeze beef stroganoff for up to three months if it’s in a sealed container, but that’s best done if you leave out the egg noodles and just freeze the stroganoff itself. Noodles in a sauce tend to become mushy when defrosted. Reheat the stroganoff gently in the microwave or over low heat on the stovetop.

How To Make Easy Beef Stroganoff With Cream Of Mushroom Soup And Ground Beef

Making this dinner recipe is actually easy. All you need is a skillet pan with high sides and a pot to boil the egg noodles in.

Start Water Boiling For Pasta : I like to put my pot of water onto the stove top before I start browning the ground beef. This way, by the time the time the ground beef mixture is cooked and simmering, it’s time to add the noodles into the boiling water. This way it’s all done at the same time.

Cook Ground Beef : Brown and crumble the ground beef, onion, and seasonings until beef is no longer pink. Drain the excess grease/liquid from the pan.

Add Stroganoff Ingredients : Add the brown gravy mixed with water, sour cream, and cream of mushroom soup into the cooked ground beef. Stir and let it come to a low boil. Once boiling, reduce heat to medium-low and let it simmer for 10 minutes while the egg noodles cook.

Cook Egg Noodles : Once the meat is simmering throw the egg noodles into the boiling water and cook according to package instructions. Drain the noodles but do not rinse them.

Combine : Add cooked egg noodles and dried parsley into the creamy stroganoff mixture and stir it up. It’s ready to serve!

Tips From The Betty Crocker Kitchens

  • tip 1 Sprinkle with finely chopped fresh parsley for a bright finish.
  • tip 2 Beef sirloin steak is more tender than other cuts of beef that are used for stews. Cooking the beef in butter until browned, results in the best flavor. Then the very low heat of the slow cooker keeps the meat tender.
  • tip 3 With the slow braising of the stroganoff, the cream cheese creates an instantly smooth sauce, that combined with the sour cream stays thick and rich.
  • tip 4 Its easier to cut the beef into clean slices when its partially frozen for about 1 hour.
  • tip 5 To save precious minutes in the morning, use minced garlic in a jar. You could also cut up the beef the night before and refrigerate.

How To Thicken The Sauce

The flour and cornstarch already included in this beef stroganoff recipe are in place to thicken the sauce. However, if its still not thickened to your liking, you have a couple of options:

  • Cook for a bit longer with the lid off so some of the liquid can evaporate.
  • Mix in extra sour cream or cream cheese. This should help to thicken the sauce, but may also make the sauce a bit too tangy so adjust the seasonings if necessary.
  • Add a touch more flour and/or cornstarch. Start with a very small amount and as more as needed. You can always add more but you cant take any out.
  • Keep in mind that the sauce will thicken as it sits and the noodles will help soak up the liquid.

How Do I Keep Sour Cream From Curdling In Beef Stroganoff

To prevent sour cream from curdling add it in at the end after youve removed the pan from the stove. You can also add some beef stroganoff to the sour cream to heat it up. After that, stir everything together. If you will be reheating it the next day just heat it through. Try not to overcook it so the sour cream doesnt curdle.

Tips For The Best Beef Stroganoff Casserole Recipe

    Pin on cassaroles
    • Salt the pasta water really well! This is your one chance to season the noodles themselves and add flavor to your stroganoff, so don’t be shy.
    • Boil the noodles according to the package instructions for al dente pasta. Don’t cook them for too long, since they will continue to bake in the oven and you don’t want to end up with mushy noodles.
    • Start with room temperature sour cream. Cold sour cream will not blend as easily into the sauce. Also, when you put cold sour cream in a hot oven, it may “break,” resulting in an undesirable texture. Finally, I recommend using full-fat sour cream, which is less likely to curdle when heated.
    • Bake the casserole for about 20 minutes, or just until all of the ingredients are warmed through. You don’t want it to get too hot and bubbling, or the sour cream may “break.”
    • For a smaller family, cut all of the ingredients in half and bake the casserole in an 8 x 8-inch dish.
    • If you prefer, you can make the beef stroganoff casserole without mushrooms. Omit them entirely, or add more flavor to the stroganoff with a little bit more onion or other diced vegetables of choice .

How To Cook Easy Beef Stroganoff

It is quick and simple to make this dish in the comfort of your own kitchen. The secret to a tender dish is in the cut and quality of the beef. While tenderloin is the best that you can use, beef sirloin is recommended for budget reasons. Using tough cuts of meat will increase the cooking time and can produce a different outcome.

Start by combining the sliced beef with salt and pepper. Let the meat absorb the flavors of the seasoning for around 10 minutes, and then add flour.

The beef needs to be prepared by pan-frying. Melt butter in a pan and add a bit of oil. You can use canola or olive oil. Adding oil increases the smoke point of the butter. This prevents it from getting burnt quickly. Cook the beef until it turns light brown. Remove it from the pan afterwards and put in a clean plate.

Continue cooking using the remaining butter and oil. You can add more butter if needed. Saute the onion until it gets soft and add mushrooms. Put the beef back into the pan. This cooks for around 1 to 2 minutes.

The sauces goes into the pan next. Add cream of mushroom soup and beef broth. Stir and adjust the heat to medium. Cook until the sauce reduces to half. We are almost done, hurray! Finish it by seasoning with salt and pepper. Dont forget to stir-in the sour cream afterwards. Top it over egg noodles or rice.

Make this beef stroganoff for your family. They will love it!

What Cut Of Meat To Use

You have a few different options for the cut of beef to use for beef stroganoff.

    • Round Steak. This is the cut I chose to use for this recipe. Its not the most tender, but it is the most affordable.
    • Sirloin Steak. This cut is slightly more tender, but a tad more expensive.
    • Ribeye Steak. Ribeye steak is the most expensive of the three but also the most tender. If you want to splurge, feel free. However, I like to think of beef stroganoff as a quick, affordable comfort food which is why I tend to stay away from the more expensive cuts of meat.

I grew up eating stroganoff with round steak, so the slightly chewier/tougher texture doesnt bother me. If you want to spend more money on a nicer cut, go for it! The choice is yours.

Making The Easy Ground Beef Stroganoff

beef stroganoff recipes with sour cream and cream of ...

Easy Ground Beef Stroganoff is made with things I bet you have in your cupboard! You need ground beef, egg noodles, sour cream, cream of mushroom soup and some seasonings! That is it!

If you hate canned creamed soups this recipe is not for you! There are quite a few recipes that I use the canned creamed soups in, and I love how fast I can throw a meal together with them. Not to mention they give it great flavor! This recipe calls for it and its downright delicious!

I put my egg noodles on to cook first, I only use 1/2 lb, so half the bag of egg noodles. Then while the pasta is boiling and cooking I brown my ground beef, in a large skillet, then rinse it and drain it. Then the ground beef goes back into the same skillet.

SIDE NOTE: It is totally a personal preference on if you need to rinse your ground beef. Most people just drain their meat and dont rinse it because they worry the lose all the flavor when they rinse it. I just feel better rinsing itweird, I know.do as you wish.

Next, I add my can of cream of mushroom soup, sour cream and seasonings.

You can easily adjust the seasonings to your liking.

Last, add in the cooked egg noodles once they are done and drained.

I always salt and pepper to taste, then let it warm a bit longer, then taste and adjust again once all the flavors have warmed and come together!

Easy as that, and in under 30 minutes you will have a hot, delicious meal on the table that everyone will like!

How To Make Ground Beef Stroganoff:

Bring a pot of water to boil and begin to cook egg noodles according to package directions. In a large skillet over medium high heat, brown ground beef along with the onions and garlic until thoroughly cooked. I like to leave chunks of ground beef and not break it up too small.

Drain ground beef to remove excess grease from pan. Put pan back on stove over medium heat Add butter to pan and let it melt.

Then add flour to pan, stir and let it absorb butter.

Now add beef broth and whisk vigorously to remove any lumps, turning the heat up to high, bringing it to a boil for 2-3 minutes until you see it thicken slightly.

Bring temperature down to medium and whisk in sour cream and cream of mushroom soup. Stir until mixture is thoroughly incorporated. Add salt & pepper. Keep tasting mixture until it is seasoned the way you like. I probably use a good teaspoon and half or more of salt and pepper. If it gets too thick on you, just add a tad more beef broth.

Add ground beef back to mixture. Stir and then allow to simmer for about 5 minutes.

    Serve over egg noodles.
