Butternut Squash And Sweet Potato Soup
This easy-to-make butternut squash soup with sweet potatoes, apples, and warm spices tastes like fall in a bowl.
This easy-to-make butternut squash and sweet potato soup is one of my favorites, and I serve it every year for Thanksgiving. The hardest part of making it is wrestling with the butternut squash, so, to make life easy, I call for pre-cut squash from the produce department. Anytime youre selecting pre-cut produce, make sure its fresh I always grab a package from the back of the shelf, as those tend to have later expiration dates.

Enjoy a creamy, luxurious tomato basil soup without the guilt! There is no cream, sugar, or any unnecessary additives in my Tomato Basil Soup! Plus, the secret ingredient makes this soup so so good!
What you WONT find in this homemade tomato soup is a bunch of cream or sugar.
I havent been able to get this creamy, luxurious, sweet, and comforting soup out of my mind for weeks. Tomatoes are still hanging around my farmers market, and Im taking advantage! I cant wait to make tons of salads, soups, and other goodies with them before we go into the deep freeze of winter.
If youve been following LSJ since the beginning, you know Ive done a tomato basil bisque in the past. My ashamed self is admitting to you that I had to put cream in it to make it taste as good as it did last time. In my defense, I did make that soup when the tomatoes werent quite at their best. Which meant less natural flavor and that means I needed extra herbs to help make the tomato flavor a little noticeable. But never, ever, ever again.
I cant wait to make a big batch of this every week to have on hand for lunches and midday snacks. Yes, tomato soup is perfect with a little bit of grilled cheese when you need a little something to nibble on. Not to mention that its exactly what you need if youve caught the early fall sniffles.

What Are Sloppy Joes
If you havent had this childhood classic, sloppy joes are a loose meat sandwich that are served on a bun. The meat is cooked in some sort of sauce, which gives it the sloppy part of the title.
It is said that the sandwich was named when a chef named Joe added a tomato sauce to a loose meat sandwich. It was a hit, and now people have been enjoying these sandwiches for decades.
The original sloppy joes are made with a tomato sauce, like this recipe. But there are a lot of different variations these days.

Tools Used To Make This Soup:
- Herb Scissors These sharp scissors make garnishing your dishes with herbs so easy! I used this to cut the basil and look how perfect those ribbons look!
- Wolf Gourmet Blender This blender is amazing! It is a power house that can blend anything. I love it and use it for everything from smoothies, to soups, to dressings. It is the same quality as a Vitamix or Blendtec, if not better.
- Immersion Hand Blender This hand blender is great for sauces, soup, and also has attachments to whisk and froth.
- Garlic Press Fresh garlic tastes best and this is the garlic press I use. I love how easy it is to use and clean.
- Peeler This is my favorite peeler! It works great for vegetables, fruits, and parmesan cheese.

How To Make Chilled Creamy Tomato Basil Soup
Begin with the garlic. Place each clove underneath the flat side of a chefs knife and smash it with the palm of your hand the peel will come right off. You dont want to chop the garlic because it will burn if the pieces are too small.
Next, roughly chop the onions and carrots.
Cook the onions, garlic and carrots in olive oil until softened and just starting to brown, about 15 minutes.
Add the tomatoes, water, orange juice, sugar and salt.
Toss in some fresh basil leaves.
Then cover and simmer for about 25 minutes.
Purée the soup using a hand-held immersion blender until completely smooth.
Stir in the cream. Dont worry theres only a third of a cup in the whole pot. A little goes a very long way!
Finally, chill the soup in the refrigerator until very cold. Ladle the soup into bowls and top with fresh chopped basil, or garnish with whole basil leaves if desired. Enjoy!
Ingredients For Creamy Tomato Soup:
- Tomatoes This recipe calls for canned whole peeled plum tomatoes but fresh will work too. Be sure to prep them by peeling and coring.
- Onion I love cooking with sweet onion which is especially good in this soup.
- Garlic A must have when cooking with tomatoes!
- Tomato Juice This can be found in a can next to the tomatoes or in bottles in the juice aisle. I like to use regular V8 tomato juice.
- Chicken stock Use stock or water with bouillon.
- Brown Sugar This helps to cut the acidity of the tomatoes.
- Baking Soda Since tomatoes have a lot of acid, adding baking soda, a base, helps to neutralize the acidity.
- Heavy Whipping Cream Makes the soup delicious and creamy. For a lower fat option, use half-and-half or fat-free half-and-half.
- Butter Makes the soup creamy, velvety, and neutralizes the acidic tomatoes.
- Basil Fresh basil leaves are best. They can either be pureed up in the soup or served on top and stirred in.
- Parmesan Parmigiano Reggiano is the best quality parmesan. Use a vegetable peeler to create thin shaved pieces.

The Color Of The Soup Was The Same Nostalgic Orange
However, to me, the extra effort the soup required me to make simply didn’t pay off. The soup was watery and I still managed to find small tomato clumps floating in my soup, despite vigorous stirring.
It tasted pretty one-note and could have used some seasoning or basil. However, it did have a nice tangy flavor balanced out by sweetness, which made it more enjoyable.
While Cambell’s tomato soup is undeniably classic and inexpensive I’d probably only choose it if there were no other options. It doesn’t taste homemade, just nostalgic.

After Cooking The Soup For A Few Minutes It Was Piping Hot
The color of the soup was the same nostalgic orange-red shade I remembered from my youth. The consistency was odd it was simultaneously watery and clumpy.
As the soup was cooking, I had attempted to use a whisk to completely combine the condensed soup and the water, but nevertheless found tiny clumps of tomato paste floating in my soup.
A Comforting Easy Soup Recipe
Soup recipes bring me right back to my childhood, and this Copycat Campbells Tomato Soup is now one of my family favorites!
Especially our little guy. He loves tomato soup. Even if theres more stuff in it than just plain tomatoes like our Beefy Tomato Soup recipe. But most of all he loves eating soup with a piece of bread or a cracker instead of a spoon, no utensils required.
Its one of the few meals that we dont have to sit and say take a bite every couple of minutes. Its not that hes not a good eater he just gets very distracted unless its something hes really into eating.
So then we remembered those famous Campbells soup recipes we had growing up, and wanted to recreate a homemade version. Forget what you remember because this Copycat Campbells Tomato Soup recipe is going to blow the old memories away!

How Do You Make Sloppy Joes
Step One: Brown the Meat
Start frying the ground beef in a large skillet. Once it is broken into pieces, stir in the mustard, brown sugar, minced onion, Worcestershire sauce, seasoned salt, and black pepper.
Step Two: Make the Sauce
Fry the ground beef until it is browned and drain off the extra grease. Return to the burner and add tomato soup, ketchup, and water.
Step Three: Simmer
Stir and simmer over medium-low heat until thickened.
Step Four: Toast Bun
If you have time, toast the buns before making the sandwiches and it brings them to a whole new level!
I made these sloppy joes on Saturday morning so that they would be ready to serve for lunch. I finished up about 10:00 AM and my kids were all hanging around the kitchen wanting to eat them for breakfast!
Luckily, I made extra and my kids were about to have one and I still had enough for the volunteers. Since I discovered that all three of my kids love these sandwiches, this Easy Sloppy Joes Recipe is going into our regular menu rotation.

The Tricky Thing I Find With Condensed Soup Is Making Sure The Base And Water Are Well Incorporated
When I first added the tomato soup into the pot, it looked unappetizing and similar in consistency to ketchup.
Though it’s still easy to make, the extra step of adding water set this soup apart from the ready-to-heat canned soups I tried. I had to stir the soup the entire time it was heating up in order to remove the small clumps of tomato paste.
Chicken In Tomato Sauce With No Breading Or Noodles
This needs to be breaded to be close to Chicken Parmesan. This is just chicken fried with soup. It also needs noodles. You could throw the noodles into the pan with the sauce and cook them that way before adding the chicken. Overall I think this might be an okay recipe, but its about as close to Chicken Parmesan as any other random pasta dish that has tomatoes and chicken.
