Creamy Chicken Noodle Soup Recipe

If Im being completely honest, this Creamy Chicken Noodle Soup recipe leaves classic chicken noodle soup in the dust. Heres why Im slightly obsessed:

This recipe delivers all the cozy comfort of classic chicken noodle soup AND THEN SOME because its creamy! Creamy soups warm you from the inside out in ways brothy soups can only dream of. Every spoonful of this recipe is a warm, aromatic, creamy symphony finished with a crescendo of complex, nutty nuances of freshly grated Parmesan. Its comfort food at its finest.

Too often creamy soups are bland and boring not this recipe! The Creamy Chicken Noodle Soup is seasoned to perfection with adept Italian seasonings and my secret ingredients of chicken bouillon, ground cumin and red pepper flakes which really make it sing. The bouillon delivers all the flavor of cooking a whole chicken and using homemade chicken stock without any of the work!

This recipe is all made in one pot even the noodles! This means you only have one pot to wash! Many Creamy Chicken Noodle Soup recipes have you simmer the soup in one pot and make a roux in another then add it to the soup but theres no need for that! We make the roux directly in the soup pot at the start of the recipe to give our soup body then make the soup creamier at the end by whisking half and half with cornstarch which is added directly to the soup. Now we have luxuriously rich, creamy, hypnotic broth without dirtying any more dishes winning!

  • Refrigerating Rooster Noodle Soup: Because the soup sits, the noodles take in the soup broth. When reheating, add a splash of additional rooster inventory or when you dont have any, water.
  • Freezing Rooster Noodle Soup: The noodles dont fare too nicely when frozen. In the event you plan on freezing the soup, take away the portion of soup you intend to freeze earlier than including the noodles. Freeze the broth, rooster, and greens. When you find yourself able to reheat the soup, add dried noodles to the soup and simmer till carried out.
  • Seasoning the Soup: In the event you really feel the soup is lacking some zing, add a bit extra salt. You may also add a pop of taste with a squeeze of recent lemon juice, a splash of fish sauce or Worcestershire sauce.

Note that I used spiral noodles in this recipe because I think that it is more available elsewhere compared to egg noodles, which is the traditional ingredient for this soup. The spiral noodle is a type of pasta known as Rotini. The egg noodles, on the other hand, are made from unleavened flour that was rolled, flattened, and cut into pieces. If both ingredients are not available you can always use elbow macaroni.

How To Meal Prep

This soup is great for meal prep! It stores super well I just recommend storing the noodles separate from the soup or the noodles will get too soggy. Store the soup in an airtight container in the refrigerator for up to 5 days. To reheat the soup, I recommend heating the soup and then pouring over the cold noodles to heat the noodles.

Also, a good amount of black cracked pepper or crushed red chili flakes to kick up the spice if you like heat.

How To Make Chicken Soup

We start this soup with a simple Soffritto . Also know as the holy trinity of cooking. A simple combination of three aromatics:

  • Onion
  • Carrots

The three are sautéed together to provide the flavour base for this soup.

For a hearty and flavourful soup, Chicken Thighs or Legs are ideal. The darker meats along with the bones provide a stronger taste compared to white meat , creating a richer broth with plenty of flavour. Add them in along with your broth after your soffritto is done.

Crushed Bouillon is an optional add in and go in along with your broth providing a lot of flavour. If you dont have access to bouillon, use regular stock powder or omit!

Simmer until the chicken is falling off the bone and cooked through, then shred chicken with forks and throw the meat back into the soup.

Boston Market’s Soup Was The Priciest And The Most Filling

Thai Chicken Noodle Soup

Since Boston Market specializes in family-style meals, we had a feeling that the chain’s chicken noodle soup would be delicious with a homemade feel.

Exceeding our expectations, the soup which only comes in one size and cost $4.49 before tax was brimming with large pieces of pasta , chunks of dark meat chicken so sizable they could be eaten with a knife and fork, and chopped carrots that retained a pleasant amount of crunch.

Some diners might be intimidated by the uneven noodle-to-chicken ratio, but the pasta and the poultry were equally enjoyable. Although the broth was on the salty side, in our opinion, it tasted homemade.

How To Make Homemade Chicken Noodle Soup:

Make Homemade Chicken Stock ahead of time using a rotisserie chicken, or choose a good brand of store-bought chicken stock.

Sauté veggies. Add butter, diced celery and carrots to a large stock pot over medium-high heat. Sauté for 3 minutes. Add garlic and cook for another 30 seconds.

Add chicken stock or broth. Season the broth with salt , pepper, and a tiny pinch of rosemary, sage and crushed red pepper. I may add another small spoonful of better than bullion chicken or chicken bouillon powder as well, if needed, to taste.

Add noodles and boil. Once boiling, add noodles and cook just until noodles are al dente. If using store-bought noodles, be cautious not to overcook them! Remove the soup pot from heat as soon as the noodles are just barely tender, as they will continue to cook off of the heat.

Add chicken. Add chicken meat from the rotisserie chicken. Taste the broth again and add more seasonings, if needed.

Serve. I love to serve this healthy soup with this easy No Knead Bread or homemade rolls!

Can I Use Dried Herbs In Place Of Fresh

If you dont have fresh herbs on hand dried herbs will work great too. The general rule is to use 1/3 the amount listed of dry herbs in place of fresh.

You can also swap out the herbs I use here for some you may like better . Other good options would be basil, oregano, marjoram, an Italian seasoning blend, or even fresh dill.

Initially, we were excited about this soup because its noodle shape was so unique in comparison to the others, and the vibrant colors of the carrots were appealing. Unfortunately, the taste of this soup landed it near the bottom of our list. We might’ve loved the noodles, but that was it. Sometimes, things look better than they tasteand that was definitely the case here.

Eat This, Not That! Verdict

“The noodles? Fantastic. But the broth tasted like the cardboard box it came out of,” one editor said. Another thought it “tasted more like carrot noodle soup than chicken noodle. Very blah.”

One editor “liked the noodles, but sadly, the taste and flavor were severely lacking.” “Where was the chicken?” another taste-tester asked. Apparently, they got spoonfuls of only carrots and noodles.

“The noodles were fun, but that’s the only redeeming quality. The taste was nonexistent,” another individual said.

What You Need To Make Easy Chicken Noodle Soup

  • Broth or stock: Although they are slightly different, both chicken broth and chicken stock work in most soup recipes. You may use either homemade or store-bought, however, the key to any good chicken noodle soup is having a delicious broth. Typically made by simmering chicken in water with fresh herbs or spices, traditional chicken broth for chicken noodle soup is clear and light.
  • Vegetables: The most common vegetables included in classic chicken noodle soup here in the US include a mixture of onion, celery, and carrots .
  • Herbs: In this version, I left things super simple and only added a touch of fresh chopped parsley after the soup was finished cooking. Other popular herbs, dried or fresh, include oregano, rosemary, and thyme.
  • Noodles: Traditionally egg noodles are added as they have a higher egg to wheat ratio and, typically, hold up a little better in steaming bowls of hot chicken soup.
  • Chicken: In this recipe, bone-in chicken pieces will be simmered in water until cooked. This will make the base chicken stock. The cooked chicken will be removed, the meat will be shredded from the bones, and the meat will be added back to the soup toward the end of cooking.

What Can I Add To Soup For More Flavor

Our recipe sticks to classic ingredients and flavors, but that doesnt mean there arent things you can add to make it your own:

For a creamy chicken noodle soup, add 2 to 4 tablespoons of heavy cream, half-and-half or whole milk.

Add three to four lemon slices for a lemon chicken soup similar to this Lemony Chicken and Vegetable Soup.

Add three or four slices of lime, swap the parsley for fresh cilantro, and then add diced tomatoes and cubed avocado for Mexican-style chicken soup. You can even add diced corn tortillas as we do for this tortilla chicken soup.

Add a teaspoon of toasted sesame oil and a few dashes of fish sauce for an ultra-satisfying, umami-packed soup.

Swirl in fresh spinach or kale at the end of cooking for more of a vegetable-heavy soup.

Swap the noodles for potatoes, winter squash, rice, quinoa or grains. Add hearty veggies to the pot along with the onions and carrots. When it comes to rice and grains, add them already cooked.

Swap the noodles for tortellini I love using cheese-filled pasta when making this veggie tortellini soup.
