Believe it or not this is the first time Ive ever made creamy chicken noodle soup , but now Im totally converted!

Why have it plain when you could have it creamy? Who knows why I havent made it this way before. Im so glad that changed!

You wouldnt believe how delicious this soup is! It is so hearty and comforting, and it will warm those cold days in no time. Its so good you might even want to make it once a week this Fall.

No Can Required Homemade Soups

Its hard to believe that Thanksgiving and Christmas are right around the corner. The change in weather is a bummer, but darn it am I a sucker for a good hand cutout turkey craft, plus I got the most darling copper jingle bell garland that I cant wait to hang above our stockings when the time is right.

In the meantime, Im making soups. Thick and creamy, no-can-required cream of chicken and mushroom soups that are not only gluten-free but easily made dairy-free, and concocted from 100% fridge and pantry staples. The holidays are filled with reasons to create casseroles green bean casserole and Party Potatoes Deluxe immediately come to mind which usually call for store bought, canned creamy soups. A few problems though:

  • Store-bought condensed creamy soups are usually not gluten-free, and the GF ones can be hard to find/expensive.
  • They are PACKED with sodium. Ben has to watch his sodium intake and the canned stuff is a hard no for him. Theres 36% of your daily value of sodium in 1/2 cup of the leading brand of cream of mushroom soup!
  • Even the gluten-free store-bought condensed creamy soups contain dairy, which is a no-go for my dairy-allergic dude Lincoln.
  • We are a mess.

    So we go homemade because not only is making these popular creamy soups at home a cinch, but its so much healthier and unbelievably delicious. This was the first of tens of dozens of spoonfuls of Homemade Cream of Mushroom Soup I ate straight from the jar. You guys will flip.

  • Cut the mushrooms into slices.
  • Melt butter in large frying pan. Add in onions, garlic, and mushrooms.
  • Blend in 2 T. flour and stir.
  • Add in the chicken broth and heat until slightly thickened while stirring frequently.
  • Stir cream with additional 1 T. flour and seasonings. Add in cream to soup.
  • Serve and enjoy!

    Homemade Condensed Cream Of Chicken Soup

    This recipe is an updated version of a recipe I posted way back when I started RecipeTin Eats. The previous recipe was written starting with a homemade condensed cream of chicken soup thick and gloopy like Campbells soup in a can.

    I went through a phase when I made homemade condensed soup which I would then keep for a few days then later use to make a soup or casserole. However, I found that I havent made condensed soup in years, mainly because it can only be kept for a few days so it kind of defeats the purpose of that recipe. But in case you want it, Ive kept it to get the recipe for the homemade Cream of Chicken Soup!

    With just 395 calories for a meal size bowl, this cream of chicken soup recipe is healthier than most creamy soups because its made without cream. Its far healthier than canned lower in sodium, preservative free and other artificial additives.

    And you can tell the difference with just one spoonful. It tastes so much better than canned, its almost a joke!

    I know Ive included croutons here, but nobody would ever say no to a side of crusty bread for dunking! Here are some of my favourites.

    Can You Freeze Homemade Cream Of Chicken Soup

    Yes! To freeze, allow the soup to cool completely and then store in a freezer-safe container for up to 2 months.

    To use, remove from the freezer and allow to thaw in the refrigerator overnight. Then, allow to reach room temperature prior to using, or defrost in the microwave on 50% at 20-second intervals, stirring between each interval.

    How To Make It

    Melt butter in a saucepan over medium heat. Let it fully melt and begin to foam. This allows the water in the butter to cook off which will create a smoother consistency.

    Gradually sprinkle in the flour and whisk continuously for 3-5 minutes to cook off the raw flour taste. It will become the consistency of wet sand.

    Remove from heat. Add 1/3 of the chicken broth, whisk well. Whisk in 1/3 more, until combined. Finally, whisk in the rest. Temper the milk by microwaving it for 45 seconds, slowly add it to the saucepan and whisk to combine.

    Add the seasonings. Add to medium-high heat to thicken it back up.

    Whisk continuously as it increases in temperature and reaches near-boiling point. It will become very thick. Remove from heat immediately once its thickened. It will thicken even more as it sits.

    PRO TIP: Run the mixture through a fine mesh strainer to make it super smooth, just like a can of condensed soup.

    This strainer is also a perfect tool for making homemade chicken stock, or to run oil through if you want to reuse it after making a batch of fried chicken or french fries. Its a great investment in the kitchen.

    How To Make Cream Of Chicken Soup

    HEAT. In a medium saucepan set over medium heat, add the butter. Once melted, add the flour and whisk to combine.

    THICKEN. Cook for about 1 minute, then slowly pour in the chicken broth, whisking as it thickens. The slower the better.

    WHISK. Slowly add the milk and continue whisking. Bring the mixture to a gentle boil.

    SEASON & SIMMER. Add the garlic powder, salt, pepper, onion powder, parsley, paprika, and chicken. Let simmer for 6-8 minutes until thickened.

    COOL. Remove from the heat and let cool. Use in recipe or store in an airtight container in the refrigerator for up to 5 days.
