Cook the Bacon: In a dutch oven on medium heat, sauté the diced bacon until crispy. Use a slotted spoon to remove the crispy bacon, but leave the bacon fat in the dutch oven.

Sauté Aromatics: Add the butter, carrots, and onions then sauté until translucent. Add the garlic and cook for 30 more seconds. This will prevent it from burning.

Add Flour: Stir in the gluten-free all-purpose flour.

Add Broth & Simmer: Add the chicken broth, potato chunks, and salt. Bring the mixture to a boil, then reduce the heat. Let the mixture simmer until the potatoes are fork tender. Stir the mixture occasionally to prevent the bottom from burning.

Its easy to freeze cream of mushroom soup. Let the soup cool completely before placing it in a freezer-safe container and freezing it. Leave about an inch of space between the soup and the containers lid when filling it.

The milk can separate from the rest of the liquid, but it should return to normal upon thawing and reheating it. You can also not add the dairy or non-dairy milk, simply add it in when youve reheated the soup.

Tips For Making Your Mushroom Soup

There are so many ways beyond this basic recipe to make your Low Sodium Cream of Mushroom soup. One is you use sliced or pre-sliced mushrooms. I prefer mine in smaller diced pieces. Or you could dice up some onion along with pre-minced garlic to replace the onion and garlic powder. If youre making a plain mushroom soup I would do this. You can also add more mushrooms if you prefer.

Sometimes when I make this Ill make a larger batch when I know I will be making a few meals in the future. I then pour it into a large muffin tin and then freeze it. When frozen simply pop them out and put them into a Ziploc bag and put them back in the freezer.

Then you can put it in a pot on low and unfreeze and warm it up. It may separate a little, but just stir it back up a bit and walah! You can then use it as a soup or incorporate into another dish.

This recipe makes a little over 2 cups of sauce, equating to about 20 ounces. If the recipe youre making calls for one 10.5-ounce can of condensed cream of mushroom soup, measure out about 1 ¼ cups of this dairy-free cream of mushroom soup and proceed as normal.

If the recipe calls for two cans of soup, simply measure out 2 ½ cups , or 620 milliliters.

    Heat the avocado oil over medium-high heat in a large skillet. Add the onion and sauté, stirring occasionally, until the onion is translucent, about 5 to 8 minutes.

    Stir in the mushrooms and garlic and cover the skillet with a lid.

    Cook, stirring occasionally, until the mushrooms have leached out much of their water, about 8 minutes. Remove the lid and continue cooking until most of the liquid has evaporated.

    Pour in the canned coconut milk, dried oregano, nutmeg, and sea salt and stir well. Bring the mixture to a full boil, then add the flour and whisk well.

    Continue cooking and whisking, leaving the mixture at a full boil, until it thickens to the same consistency as a very creamy soup.

    Remove the cream of mushroom soup from the heat and set aside to allow it to cool.

    Once cool, either use the soup in a recipe, or transfer it to a jar. Seal and refrigerate for up to 1 week.

    Do note that the cream of mushroom soup becomes thicker as it sits. For most recipes calling for a can of condensed cream of mushroom soup, you will want the mixture to be very thick. Allowing it to boil long enough to thicken and also allowing it to sit and cool is what will give it that thick consistency.
