For The Cream Of Mushroom Soup

  • Saute minced mushrooms and minced shallot in extra virgin olive oil in a small saucepan over medium-high heat until the mushrooms release their liquid, the liquid cooks off, and the mushrooms become tender, 5-7 minutes. Scoop the mushroom mixture into a bowl then set aside.
  • Melt butter or vegan butter in the pan then sprinkle in gluten free flour and whisk for 1 minute.
  • Slowly stream in chicken or vegetable broth while whisking to create a smooth sauce then add milk plus salt, garlic powder, and pepper.
  • Simmer until thickened, 3-4 minutes. then stir the mushrooms back into the soup.

    Now Start Adding The Liquid

    Once youve added all of the flour, you can start adding the liquids. In fact, I think that I had already started adding vegetable stock in the picture above and the roux had started to expand a bit. When youre making a bechamel sauce you should either add cold liquid to a hot roux, or cold roux to a hot liquid. In this case our roux is hot, so the liquids should be cold. In the recipe that Im making in the picture, I added vegetable stock and then cream. Many bechamel sauces will only call for cream. After I had whisked in all of the stock my sauce looked like this:

    When you add the liquids its important to just add a little bit and then whisk it in. Once that liquid is incorporated, add a little bit more. At first the roux will absorb all of the liquid and it will seem to be making something almost like dough. Just keep adding liquid a little at a time, and keep whisking. If you think youve added too much liquid, keep whisking. Roux is an amazing thickener and it will keep thickening as you cook. The only times Ive gotten in trouble with a Bechamel sauce is when Ive added more flour at this point dont do that unless its been cooking for a really long time and is just not getting thick again.

    I really recommend using Authentic Foods brand superfine white rice flour. Vitacost also has a superfine white rice flour that has a relatively fine grind, too.

    If you dont have a truly superfine white rice flour, you can try using arrowroot in its place. You can also try using tapioca starch/flour, but it may make the sauce gummy so try using 20 grams instead of 30.

    If you use too little thickener in your soup, you can continue to cook the soup over medium-low heat to thicken it further. The more water that evaporates, the thicker the soup will be.

Slowly stream in 3/4 cup chicken broth while whisking to create a smooth sauce then add 1/2 cup milk plus 1-1/2 teaspoons poultry seasoning, scant 1/2 teaspoon salt, and 1/8 teaspoon pepper.     The only animal products in this soup recipe are the dairy. Theres butter, and evaporated milk, and youll have to replace them bothbut its really easy.

    How to replace the butter in this soup

    To replace the butter, I always recommend vegan butter instead of Earth Balance buttery sticks. But I think you could actually use Earth Balance here, too.

    Earth Balance will add more moisture, though, and more color. You should allow the roux to cook lower and slower, so it doesnt burn but the moisture cooks off.

    How to replace the evaporated milk in this soup

    To replace the evaporated milk, Carnation makes a small carton of nondairy cooking milk that has reduced moisture. Theres also evaporated coconut milk made by a company called Natures Charm that might be worth trying.

    I dont recommend using regular nondairy milk, unless youre willing to reduce it separately in a saucepan first over very low heat. Otherwise, youll really just water down your soup.

    Instead of evaporated coconut milk, you can try using light coconut milk in the can. Its really just coconut milk with added water.

    Are Campbells Gluten Free Soups

    Who does not like canned soups? Canned soups are practical, you just need to reheat it. However, people who are suffering from celiac disease or allergic to gluten must be really careful in consuming canned soups. It is because quite many canned soups are not gluten-free. They contain gluten ingredients which are mostly in the form of thickeners. Especially, cream-based soups which usually contain more wheat flour than cream.

    But, do not be worried. Along with the popularity of the gluten-free diet, there are some canned soup brands which offer gluten-free canned soups.
