Why Is Potato Milk Better
Here is where it gets interesting. Potato milk is far more sustainable than any other plant-based milk currently available. Growing potatoes is according to DUG very kind to the environment. Compared to soybeans, almonds, oats, or regular dairy, potatoes are twice as land efficient, which reduces the climate impact by 75%. And compared to almonds, potatoes use 56 times less water in order to be produced. Preserving water is important to prevent shortages and droughts.
And potatoes contain a lot of minerals, vitamins, but also carbs and fiber. Its an amazing food and definitely something thats on my weekly grocery list.
However, just like any other at-home plant-based milk recipe, the recipe below is not fortified with extra vitamins, such as the store-bought version.

How Do You Wash Leeks
Leeks can have some dirt and grit in them, so you do want to clean them thoroughly before you use them in a recipe.
Just trim off the dark green ends, and the root end of the white part. Then slice the leeks into rings and rinse under water. Place the sliced leeks in a bowl of water and swirl them around, then drain.
You can read more about how to clean leeks here.

When I say this 30 Minute Dairy Free Potato Soup is creamy I mean its really truly very creamy. Its a blended soup and that blender makes everything perfectly smooth. Youll also set aside one cup of diced potatoes to add back in after youve blended the rest. We need a few chunks of potato too, right?
Did you catch the part about this being dairy free? I typically avoid potato soup in restaurants because I know theyre full of milk and cheese. Not this one! This means my version is less calories but Im betting you wont be able to tell.
Since Im not using milk the creaminess of this soup comes from a cup of unsweetened canned coconut milk. It doesnt give the soup any coconut flavor at all!
For this recipe youll need :
- Dried herbs
Add the diced potatoes back. Season. Youre done!

Why Did My Dairy Free Potato Soup Turn Out Brown
Potato are finicky little creatures when cooking. If you cut them along with the other vegetables, throw them in a bowl of water until you are ready to throw them in the pot. Then drain and put them in. Its also really important when making this dairy free potato soup that once you add the potatoes you turn the heat down to low. The enzymes in potatoes react to air and cooking temperature, so its important to do these things.
If your soup did turn a darker color than what you see in the photos, it will not affect the taste of your dairy free potato soup. So still enjoy it!

The Key Ingredients For Loaded Baked Potato Flavor
Whole30 Compliant Chicken Broth: I love making my own homemade compliant chicken broth and keeping a container in the freezer to use whenever I want to make a batch of soup. If you are all out of homemade broth and dont have time to make a batch, there are a few great Whole30 compliant shelf-stable options available. Just make sure to check the ingredients label before purchasing. You want to make sure that the broth does not have any sugar, yeast extract, or non-compliant oils.
Full-Fat Coconut Milk or Cream: Coconut milk and coconut cream are common ingredients used frequently when making dairy-free versions of traditional recipes. Full-fat coconut milk is rich, creamy, and entirely plant-based which makes it a great alternative in recipes that usually call for half and half or heavy cream. When you are purchasing coconut milk for this recipe, make sure it is full-fat and that it comes in a shelf-stable can. The ingredients should be coconut and water.
Ghee: This ingredient is optional, but it gives the soup that rich buttery flavor that we all love in traditional baked potato soup. I have made this soup with and without ghee and both versions taste great!
Green Onions: last but certainly not least are green onions. You can use sliced green onions simply for garnish, or if you really love the flavor, stir a good amount directly into the soup before serving.

Let me start by saying that as a vegan I think there are already plenty plant-based milk options available. Oat milk, soy milk, almond milk, hazelnut milk, and coconut milk are just a few delicious examples. When new plant-based milk hits the shelves Im usually not super excited. Until I heard about potato milk.

Are Potatoes Healthy
Potatoes way too often get a bad rap for being unhealthy because they are a carb. But, fear not, potatoes have some amazing health benefits. Now come on, the carbs that are in potatoes are hardly the equivalent of carbs in junk food or sugary desserts. Remember, there are healthy carbs and unhealthy carbs. How To Make It:
- Wash the potatoes thoroughly and chop in ½-1 inch cubes.
Pro Tip: You dont necessarily need to peel them if using organic potatoes, but make sure to wash them thoroughly.
- Chop the broccoli in very fine florets. I find it a bit cumbersome to eat this soup if the broccoli comes in too large pieces.
- Heat a large pot with olive oil. Add the onion and garlic and sauté for 3 minutes.
- Add the potatoes and vegetable broth, pop on the lid, and let it simmer for 10 minutes.
- Add broccoli florets.
- Now add the plant-based milk. I used oat milk.
- Let the soup simmer for another 5 minutes until the broccoli has your desired bite.
- Season with nutritional yeast, lemon juice, salt, and pepper.

Ingredients In This Oat Milk Smoothie
This oat milk smoothie recipe works for any type of frozen fruit. But you cant go wrong with strawberry banana! Its our favorite way to load up on healthy fruit that tastes like a dessert. Here are the ingredients youll need:
- Frozen strawberries : Strawberries are our go-to, but there are many more ways to mix and match this recipe.
- Fresh banana: All you need are two room temperature bananas. No need to remember to freeze them!
- Oat milk : Use plain or unflavored oat milk. You can use vanilla if you like, but sometimes vanilla flavors are overly sweet or artificial tasting.
- Ice: Ice adds just the right frozen texture.
- Maple syrup or honey : Whether you need it depends on the ripeness of the bananas. Sometimes frozen strawberries can also be very tart and need a little sweetener. Add a touch to taste.
