Ive been making this homemade Chicken Noodle Soup for years, so I thought it was time I actually write it down and share it with you all because everyone needs the BEST Chicken Noodle Soup recipe in their soup repertoire its comfort food at its best that warms you from the inside out. Its 1000X better than anything from a can and you can make it in your slippers and slurp it curled up in a cozy blanket for breakfast, lunch and dinner.

    This comforting Chicken Noodle Soupis delicious as is or you can add a little body with a cornstarch slurry.

    • Remove some stock from the soup and whisk in 1-2 tablespoons cornstarch with a fork until smooth then whisk it back into the soup.
    • Simmer for 5 minutes or so, stirring occasionally.
    • Dont add the cornstarch directly to the soup or it will clump and never dissolve.

    Method

    1. In a deep pot, heat olive oil over a medium to high heat.

    2. Add leek, brown onion, garlic, celery, parsley, chives and carrot into the pot and cook for 5 minutes, or until they have lightly softened.

    3. Add chicken stock, bay leaves, oregano and lemon juice into the pot and cook for 15 minutes to enhance flavour.

    I call this dish my bowl of hugs as its so comforting. Its a foolproof recipe that you can make without too much effort when you get home from work. You can swap the pak choi with lots of other greens, such as kale, spinach, chard or even frozen peas.

    SERVES 4

    5cm piece of fresh ginger, peeled and grated

    3 spring onions, thinly sliced

    1 lemongrass stalk, thinly sliced

    1 green chilli, deseeded and finely chopped

    1 celery stick, thinly sliced

    500ml hot, good quality chicken stock

    2 boneless, skinless chicken breasts, cut into 7.5cm strips

    250g egg noodles

    1 tbsp fresh coriander leaves

    sea salt and freshly ground black pepper

    • Place a saucepan or casserole over a low-medium heat with the oil. Stir in the garlic, ginger, spring onions, lemongrass, chilli and celery, cover and simmer for 2 minutes, stirring after a minute. Remove the lid, stir and pour in the hot chicken stock. Stir in the chicken, season with salt and pepper and cook for 10 minutes.
    • Stir in the noodles and pak choi and cook for 2 minutes, stirring constantly. Ladle the soup into warmed bowls and sprinkle the fresh coriander on top.
