  • Use the right kind of potatoes. I prefer Russets or Idaho potatoes in this but red potatoes or Yukon gold also work well.
  • Make sure the potatoes are cut into even pieces. This will help the potatoes cook evenly.
  • Dont forget to flip the potatoes halfway through. If you dont flip the potatoes, they will overcook on the side thats against the sheet pan.

Rain, rain go away! Enough already! Thats what I really want to say to this weather. But I feel a little guilty when I say that. Rain is such a blessing for us most of the time. We usually welcome the rain down here in Louisiana. Our climate down here usually gives us a good amountnot too muchnot too little. But lately we have needed it.

Just not on Halloween week. So many of our events around town were cancelled due to our weather. All that prep workand no fall festivals, carnival at our church, air show in our town . And no family pictures scheduled to happen for us

Now I just hope the rain can give us a little break for trick-or-treating soon. Because my little insects and our baby Monkey will be ready to stroll the neighborhood this weekend. I just adore Halloween and the kid it brings out in us! So Ill be hoping there is a break in all that weather so we can enjoy it and all the yummy Halloween treats!

Making this onion soup potato recipe is a snap! You dont even have to peel the potatoes if you dont want to, which makes prep so much faster.

To make these onion soup potatoes, start by washing the potatoes. If you want to peel the potatoes, you can do that now. Otherwise, just go ahead and cut the potatoes into roughly equal sized pieces.

Sometimes I peel them, but if Im just making them for my crew I often skip that step. The skins get extra crispy when roasted, and theyre full of nutrients Im happy to have my guys enjoy.

Then put the potatoes in a large mixing bowl and add the oil. Give the potatoes a good toss to get them evenly coated in the oil.

Sprinkle in the onion soup mix and toss again to distribute the onion soup mix, making sure all the potatoes are as evenly coated as possible.

Pour the potatoes out onto a large sheet pan that youve sprayed with nonstick spray. Then pop them into the oven and bake them for 20-25 minutes, turning them half way through.

My husband LOVES potatoes. Pretty sure he could eat them with every meal. He enjoys soups, too, but finds that they dont tend to keep him full while working. Understandable: I can easily inhale 5 bowls of soup myself! So it got me thinking. What kind of soup could I make that would leave him satisfied?

The answer? French onion soup with potatoes! Why havent I thought of this sooner?! Not only is it a great, hearty soup, but it also eliminates the bread portion, making this meal completely gluten-free. Sure, you could sub in gluten-free bread but I have tried my mother-in-laws and I think I will stick to the traditional stuff

I decided to go with the Blushing Belle varietal here because I love the colour it adds and they have such a wonderful flavour. I totally forgot to slice them in half before I boiled them, but that just left me with the task of halving them while still hot Still hoping to find that Something Blue varietal because I KNOW they would have looked awesome here!

Creamy Au Gratin Potatoes

Creamy Potato Bake vs Scalloped Potatoes and even Potatoes Au Gratin are all very similar dinner side dishes. Au Gratin typically has a cheesy bread-y topping, and quite often only with cheese. Scalloped Potatoes are just usually cooked in cream. This Au Gratin Potato Bake with French Onion Soup is a combination of the two. In the video I use a Monterrey Jack Cheese, but you can add any cheddar cheese you like. I also call this my French Onion Scalloped Potatoes, so if you’re confused, you’re not alone!

Potatoes are my favorite comfort food staple. Its always fun to find new ways to make them. Today its French onion potato bake. Similar to scalloped or au gratin potatoes, but easier and with a flavor twist.

  • Sour cream
  • French onion soup mix

How to make these potatoes

Whenever you make a potato dish like this, the important step is to get evenly sliced potatoes. If you have a mandolin, this is a good time to use it. Even better if you have a food processor thatll make very short work of the job!

In a large bowl, mix together the sour cream, half and half and soup mix. Add in the potatoes and a little shredded cheese. Give it all a good stir to evenly coat those potato slices.

Transfer to a casserole dish. I use a 2.5-quart dish but anything up to a 9×13 will work. Cover and bake for 50-55 minutes. Then uncover, sprinkle with more shredded cheese, and bake another 10-15 minutes . The potatoes should be warm and bubbly and the top a beautiful golden brown.

Allow the potatoes to rest for 10 minutes before serving.

French Onion Baked Potatoes

These potatoes are KILLER. If you want to make ’em a meal, go for big russets. If you’d like to serve them as hors d’oeuvres, choose a smaller potato like a fingerling or Yukon Gold.

  • Preheat oven to 350° and line a small baking sheet with parchment paper. Pierce potatoes all over with a fork. Rub with oil and season generously with salt and pepper.
  • Bake until potatoes are easily pierced with a fork, 1 hour to 1 hour 30 minutes.
  • Meanwhile, make onion soup filling: In a large pot over medium heat, melt butter. When melted, add onions and thyme and season with salt and pepper. Cook, stirring occasionally, until onions are soft and caramelized, about 20 minutes.
  • Remove thyme and add wine. Bring to a simmer and cook until wine is mostly evaporated. Add in flour and garlic and cook until garlic is fragrant, 2-3 minutes. Add in broth and bring to a simmer. Let simmer until thickened slightly, 5 minutes. Season with more salt and pepper to taste.
  • When potatoes are tender, cut a slit lengthwise on the top of the potato, then press ends together to create an opening. Spoon soup into each potato and top with a slice of gruyere. Place on prepared baking sheet and bake until cheese is melted. If you would like more color, broil on high for 1 minute. Garnish with more thyme sprigs and serve.

    Everyone looks for time saving tips when making dinner. All you need is a dry French Onion Soup packet from your grocery store. Mix that with whipping cream and pour over your sliced potatoes. Then add grated cheese. This is not diet food, but should be renamed Heart Attack Potatoes. That doesn’t have a very marketable name, everyone is so healthy and vegan these days!

    How Do You Make French Onion Potatoes

    Once youve gathered all your ingredients and sliced your onions, its time to get down to the business of mouth watering food makin.

    Preheat your oven to 400 degrees or to a low broil if you have that option. Take the potatoes out of the package and place them into a large bowl. Cover the bowl with a paper towel and microwave it on high for 5 minutes. Take it out of the oven, stir up the potatoes, and put it back in the microwave for another 5 minutes.

    If youre like me and you can multitask like nobodys business, then while your potatoes are microwaving, you can go ahead and start to cook the onions. First, melt the butter in a large, oven-safe skillet over medium-high heat. Add the onions and a bit of broth and saute about 3-4 minutes or until they start to go all see-through and smell up the whole house . Keep cooking another 15 minutes until they start to caramelize and become super tender. Use tongs to transfer them to a bowl. Cover the bowl to keep those yummy onions all nice and warm.

    Turn your attention back to the pan and add in the oil and potatoes and cook them for about 5-8 minutes. The goal is to get all the potatoes warmed through and also crispy on the edges. When you achieve that, put them on a plate and cover them as well to keep them warm.

    The onions go back in the pan, along with flour. Stir that a bit, then add in the beef broth, cooking and stirring until your mixture comes to a boil. Season with salt and pepper to taste.
