How To Make This Recipe

Hot and Sour soup is simple to make! Here is how you make it in six steps:

  • Cook the vegetables. Add the onions, garlic, ginger, mushrooms, tomato paste, and chili paste to a large pot and cook the vegetables in the avocado oil and sesame oil until soft.
  • Add the stock. Deglaze the pot by adding a splash of chicken stock and scraping up any brown bits. Add the rest of the stock, bamboo shoots, soy sauce, and tofu.
  • Thicken the soup with a cornstarch slurry. Create a cornstarch slurry by adding the cornstarch to a small bowl and mixing with cold water. Stir the slurry into the soup, and simmer until thickened.
  • Make the egg ribbons. Create a whirlpool by stirring the soup. Slowly drizzle in the whisked eggs while stirring to create the egg ribbons.
  • Add the vinegar. Add both the rice wine vinegar and distilled vinegar. Taste, and adjust as desired by adding more vinegar for tang or chili paste for spice.
  • Serve. Ladle into bowls, top with green onions and serve!

    How To Customize A Hot And Sour Soup

    You dont have to stick to the above ingredients 100% of the time. In the photos, you can see that I added corn and shimeji mushrooms. I was omitting wood ear mushrooms, dried lily flowers, and bamboo shoots from my soup.

    Wood ear mushrooms are usually enjoyed for their crunchy texture, and since I already added corns, I decided to skip them.

    Dried lily flowers can be hard to find unless your Asian/Chinese market stocks them.

    And lastly, not everyone in my family is fond of bamboo shoot, so for me personally, I almost never add this into my hot and sour soup.

    As I said, hot and sour soup is really customizable. So feel free to omit some of the traditional ingredients, and add the ones you love instead. 🙂

    Hot & Sour Soup: Recipe Instructions

    1. Prepare your pork:

    Combine the 4 oz. julienned pork shoulder with 1 tablespoon water until the meat has absorbed the water. Add a pinch of salt, 2 teaspoons vegetable oil, and 1 teaspoon cornstarch and mix until combined. Set aside.

    2. Prepare your dry ingredients:

    Cut the dried chilies in half and discard the seeds. Mince them up and set aside.

    In separate bowls, soak the dried lily flowers, wood ears, and shiitake mushrooms in 1 cup of water each for 1-2 hours, until hydrated. Using hot water will significantly speed up the process.

    Once theyre ready, thinly slice the mushrooms and give the wood ears a rough chop. Trim the tough ends off the lily flowers and cut them in half.

    3. Prepare the tofu and the rest of the ingredients:

    Cut both the spiced tofu and the firm tofu into 2-inch long and ¼-inch thick pieces. Julienne the bamboo shoots. Beat the egg in a small bowl. Wash and chop the scallion and set aside.

    4. Assemble the soup:

    Bring the chicken stock to a boil in a wok or pot. If the pork has clumped and stuck together, it is best to add another tablespoon of water to loosen it up before adding it to the soup.

    Stir in the pork and quickly break up any clumps that may form. Once the soup is simmering again, skim off any foam that floats to the top with afine meshed strainer.

    Add the salt, sugar, dried chili pepper , white pepper, both soy sauces, and sesame oil.

    5. Taste and adjust to the way YOU like it:

    This easy Hot and Sour Soup is everything . Its our go to recipe when we need something warm, cozy, and comforting. Its always the first thing Neal requests when hes starting to feel under the weather , and I love it at any time!

    I became obsessed with Hot and Sour Soup when I was a student at Indiana University in Bloomington. There was this amazing hole in the wall Chinese restaurant called Dragon Express. I would trek there after class or sometimes skip class in the rain or shine, to grab a quart of their Hot and Sour Soup. I couldnt get enough of it! It had mushrooms, tofu, and bamboo shoots swimming in a spicy broth tinged with lots of red pepper flakes that would sink to the bottom of the quart. As a glutton for spicy punishment, I would always add more chili paste until it was almost unbearable to eat.

    Throwback to my first homecoming as an alumni when I insisted we go Dragon Express after tailgate for some Hot and Sour Soup. I was also obsessed with their family style bean curd!

    This recipe is my take on the Hot and Sour Soup youll find at your favorite Chinese restaurant. It may not be an authentic Chinese recipe, but its made with ingredients that are easy to find at a well stocked grocery story like Meijer, Kroger, or Walmart. Its so tasty and even rivals the Hot and Sour Soup I use to get at Dragon Express!

    What Makes Our Hot & Sour Soup Recipe Authentic

    Hot and sour soup. Simple, quick and delicious with chicken.

    My grandparents owned a takeout restaurant.

    It was called Sun Hing. They set up shop in a pretty rough New Jersey neighborhood, where my grandfather would churn out his famed fried chicken wings, shrimp with lobster sauce, and fried rice.
