Instant Pot Vegan Broccoli Cheddar Soup | Low-fat, Plant-based

This recipe yields a substantial amount of soup . If you are serving two people or dont want a lot of leftovers, you could easily cut the ingredients in half. Heres what youll need to make it:

  • I swear that soups always taste better when theyre cooked in a Dutch oven. I used my 5.5-quart Le Creuset for this recipe. A large, heavy-bottomed soup pot will also work well.
  • Youll need a lid for the pot. In a pinch, you could use a metal baking sheet.
  • If you are making the full batch, youll need to blend it in batches in your stand blender. I could not blend the full batch at once in my Vitamix. Transfer the blended portion to a heat-proof pitcher or container as you blend the rest, then combine it all in the soup pot.
  • Or, you could use an immersion blender. The trouble with immersion blenders is that they never yield soup as creamy as you could accomplish in your stand blender. I wish it werent true!

Safety note: Never fill a stand blender past the maximum fill line, or you could end up with a giant mess . You need to know how your blender works. My lids design allows for steam to escape, but if yours doesnt, youll want to remove the center piece so the contents dont build pressure as they blend. Cover the hole with a tea towel, but dont place your hand over it because the steam is hot.

Cheesy Potato Soup With Broccoli

I was a bit of an anomaly as a kid.

I didnt care for peanut butter, opting for liverwurst instead. I loved oatmeal for breakfast and salad was one of my favorite snacks. And what was my pre-dinner ritual? Two tall glasses of milk before the food ever even hit the table.

I also liked broccoli. I mean I really, really, liked broccoli. When other kids wouldnt touch their green trees unless they were camouflaged under a blanket of cheddar cheese I loved them simply steamed with a little butter, salt and pepper and drizzled with vinegar. That side put me in heaven every time.

But even while I enjoyed my broc in that cleaner way, the soup that always rang my bell was a creamy cheddar cheese broccoli fusion. I dont know that my mom ever made it at home, but when we went out, it was my kryptonite.

Like most recipes you love as a kid, the cravings for them simply dont go away. And as things go as an adult, the extra lbs dont always go away as easily either. But this broccoli potato cheese soup recipe doesnt sacrifice flavor in its ingredient modifications, but instead is a healthyish version of my childhood fave.

Campbell’s Kitchen Broccoli And Cheese Casserole

Vegan Broccoli Cheese Soup
  • 1 can Campbell’s® Condensed Cream of Mushroom Soup
  • ½ cup milk
  • 1 package frozen broccoli flowerets, thawed
  • 1 cup shredded Cheddar cheese
  • cup dry bread crumbs
  • 2 teaspoons butter, melted
  • Stir the soup, milk, mustard, broccoli and cheese in a 1 1/2-quart casserole.

    Mix the bread crumbs with the butter in a small bowl and sprinkle over the broccoli mixture.

    Bake at 350 degrees F for 30 minutes or until hot.

This is a very tasty and easy side dish! Just a tip, I find this recipe to be much better if you leave out the milk and the mustard, and mix in a little garlic powder, paprika and fresh ground black pepper, along with a handful of grated parmesan cheese. I used Tex Mex cheese on top, which is a combination of chedder and jack. Omitting the milk makes it much less soupy. It will also firm up more if you let it sit for at least 10 minutes before serving.

The most important thing to note: theres a trick to adding the cheese so the soup doesnt break and turn into a chunky mess. Toss your freshly shredded cheese in a bit of flour first, then add it to the soup in small batches, stirring each batch until completely melted before adding another.

If you dump all of the cheese in at once, thats what youll havedumpy soup instead of creamy soup. And what kid of any age is gonna want to eat that?

Also note that you should use whole milk for this cheesy potato soup recipe. Whole milk has a good amount of fat, which will make this soup super creamy and flavorful. In a pinch, you could probably get away with 2% milk, but I dont recommend using a milk with less fat than that.

Cheesy vegan broccoli soup – this creamy, comforting soup is the perfect warming Autumn meal.

Broccoli cheese soup used to be one of my absolute favourite soups before going vegan.

Unfortunately I’m not a fan of the majority of vegan cheeses so it’s not a simple swap to make a vegan version.

Fortunately however, nutritional yeast exists! That along with a few other ingredients adds a delicious cheese-like flavour to make a cheesy vegan broccoli soup that I enjoy just as much as I used to.

Nearly every broccoli and cheese soup recipe Ive found calls for the initial step of making a base cheese sauce on the stove, including recipes designed for the crock pot.

Because I know we dont always have time to fuss with this kind of prep, I decided to see if I could create a slow cooker broccoli and cheese soup entirely via the dump and go method: dump the ingredients into your crock pot walk away return hours later to a dinner thats ready to serve.

I almost made it.

Although you can skip the cheese sauce, and Id still bet my last spoonful that this is the easiest broccoli and cheese soup recipe youll find, you do need to blend the soup with an immersion blender or food processor prior to serving.

Its a small extra step thats well worth the effort for the texture and body it provides.

The flavor of this soup is a dead-ringer for Paneras broccoli cheese soup, and although its texture is a bit thinner than Id originally envisioned , I still found it to be plenty cheesy and satisfying.

Tips For Making The Creamiest Vegan Broccoli Soup:

  • Using a combination of broth, almond and coconut milk gives you a creamy consistency.
  • Turmeric, paprika and nutritional yeast contribute to a cheesy, cheddar-like color. You can skip one or the other, but dont leave out all three.
  • Dont skimp on the salt. Cheese is naturally salty, so when youre missing it, youre missing out on that saltiness. Dont be afraid to add enough salt to make it taste right.

What Do I Need To Make Cheesy Vegan Broccoli Soup:

Broccoli: Obviously. For this soup I use a large head of broccoli, stem and all.

Leek, onion and garlic: These form the flavour base of the soup.

Potato: Adds body and creaminess.

Butter and olive oil: I use part vegan butter, part olive oil for frying the vegetables for the best flavour.

Stock: Use a good quality vegetable bouillon if possible. I like Marigold.

Nutritional yeast, lemon juice, mustard and bay leaf: These all contribute towards forming the ‘cheesy’ flavour in the absence of any actual cheese.

Cream: You can use any shop-bought vegan cream such as soy or oat based ones, or use home-made cashew cream. I generally use Alpro soy single cream.

You could use coconut cream instead but it may impart a bit of coconut flavour so it wouldn’t be my first choice in this instance.

Baby spinach: Adding in a big handful of baby spinach before blending the soup helps to keep the bright green colour as well as adding extra nutrition.
