It is what she always picked for her birthday dinner. With a wheat intolerance and a dairy intolerance there was no way she could eat it as it contained cream of chicken soup which has both in it.
After a little experimenting I was able to come up with a dairy free and gluten free cream of chicken soup that tasted great and worked perfect. Cali was happy and I was happy that she could now, once again enjoy one of her favorite family meals! Yeah!!!

How To Make Cream Of Mushroom Soup
- Chop the mushrooms to your liking. I personally like mine finely chopped, and I use my food processor.
- In a large saucepan, heat the butter over medium-high heat saute the mushrooms and minced garlic until tender.
- Sprinkle the gluten-free flour and onion powder over mushrooms and stir to coat the mushrooms.
- Stir in the gluten-free chicken broth, salt, pepper, and nutmeg . Stir the mixture until the flour dissolves. Bring the mushroom soup to a boil and stir it until thickened .
- Reduce the heat to low/simmer and stir in the milk . Simmer, uncovered for about 10-15 minutes.
- Make sure you stir it occasionally and remove the soup from the heat as soon as it becomes as thick as you want it.
- To make a garnish for your soup if you are planning on serving it, sautee mushrooms in a small pan with olive oil or butter until golden brown.
- Store leftovers in an airtight container and refrigerate.

How Do You Make Vegan Cream Of Mushroom Soup
Add the butter, onions and a pinch of salt and pepper to a large soup pot . Sauté over medium heat for 5 minutes or so until onions are softening and browning. Stir in garlic.
Now add the mushrooms, 1 cup of the broth, thyme, fennel, and granulated garlic to the pot. Sprinkle the flour over the mushrooms. Stir frequently and cook for 5 minutes until the mushrooms are cooked down and tender.
Add in the rest of the ingredients . Bring to a boil on high heat.
Cover and reduce to a simmer on medium-low heat. Cook for 10 minutes.

How To Thicken The Roux Without Superfine White Rice Flour
I really recommend using Authentic Foods brand superfine white rice flour. Vitacost also has a superfine white rice flour that has a relatively fine grind, too.
If you dont have a truly superfine white rice flour, you can try using arrowroot in its place. You can also try using tapioca starch/flour, but it may make the sauce gummy so try using 20 grams instead of 30.
If you use too little thickener in your soup, you can continue to cook the soup over medium-low heat to thicken it further. The more water that evaporates, the thicker the soup will be.
Is Bouillon The Same As Stock Concentrate
While nothing can top the flavor of homemade chicken broth, the taste of bouillon does a great job mimicking the salty goodness of chicken broth. Bouillon is a great broth substitute, but the main drawback is going to be the ingredients. - Heavy Cream For dairy-free or vegan, you can use coconut cream instead. If you would like to lower the fat content, try using whole dairy milk.

I have literally boycotted so many recipes in the past for containing a can of cream of something soup. Mostly because I have read the ingredients on those cans and I am not the biggest fan. Instead of skipping out on recipes, I learned how to make my own Cream of Chicken Soup Substitute and it is AMAZING!
How Do You Make Gluten Free Cream Of Chicken Soup
First, saute your chicken in the oil or butter.
Even if you uare using already cooked chicken, this will help to flavor your cream of chicken soup.
Add your gluten free flour to the oil and chicken to make a gluten free roux.
Stir the gluten free flour into the fat and cook until it starts to turn golden and smells slightly nutty.
Youre still making a blonde roux, and not cooking it to a dark brown color.
You want your gluten free roux to have lots of thickening power , while taking advantage of the flavor that you get from toasting the flour.
Cooking the flour keeps your cream of chicken soup from tasting like a floury paste.
Then add the broth and milk and bring it to a simmer.
Let it simmer until thickened,
It will thicken up even more as it cools.

It could NOT be easier to make this vegan condensed cream of chicken soup. Youll start by throwing all five ingredients into a medium sauce pan. Then, bring it to a boil and let it simmer for 10 minutes.
Next up, carefully add the contents of that simmering pot to your Vitamix or other high-powered blender. Blend on high until smooth and luxuriously creamy. Its basically mandatory to take a taste at this point, both to test and adjust seasonings and also to marvel at the beauuutiful creation you just made!
Because the soup thickens quickly as it cools, I like to immediately pour it into three 8-oz mason jars and put the lids on each right away. Then, I let them cool completely on the counter before transferring them to the fridge.

I know that kinda sounds weird, but if youve ever opened one of those Cream of cans, you know exactly what I mean. shallotâ These are in the onion family, but are considered milder in flavor and aroma. If you donât have shallots, my second favorite option is the almighty green onion.
fresh garlicâ I highly recommend fresh garlic but garlic powder would work fine too.
chickpea flourâ also called garbanzo flour is how we roll for this gluten-free mushroom soup recipe. If youâre not gluten restricted, you can use all-purpose flour, youâll need to cut the amount in half.
dry sherryâ Optional ingredient, but highly recommended. I love the flavor and aroma dry sherry brings to this mushroom soup recipe.
unsweetened almond milkâ you can use any non-dairy milk for this recipe. My readers have offered testimonials for various types of milk and they all win! You can also do 1/2 milk and 1/2 vegetable broth for a lower calorie option. It wonât be quite as creamy but it will still be delish!
