Mum Reveals How To Cook Perfect Roast Potatoes Using Just Two Ingredients

Potato Bake with French Onion Soup

An Aussie mum has sent the Internet into meltdown after sharing her recipe for perfect, crispy and super-simple roast potatoes online.

While potatoes are good in any form whether you love them baked, mashed or chunky there is no going past some crispy roast potatoes and wedges. Theyre the perfect side dish to a hearty meal, such as a juicy steak or a roast chicken.

Just how you season them remains up to you, with some using thyme or rosemary and others opting for some garlic salt. But now, one mum has shared her genius hack for a delicious flavouring, with only two ingredients needed potatoes and French Onion dry soup mix, which can be found at your local supermarket for a dollar or less.

The recipe, which the mum said was passed down to her by her own mother, garnered a lot of attention on the Mums Who Clean Facebook page, and within hours was spread right across the Internet between others who are looking to save both time and money on their weekly meals.

According to 7 News, Vicki described it as the best food hack, writing: When doing roast spuds, peel, cut and place in a baking dish then get French Onion dry soup mix and sprinkle over the top of spuds. Then sprinkle your oil over that and bake. Its the only way I do roast spuds now.

She added: Its the bomb, my mum taught me!

But thats only half the battle you also need to remove as much moisture as possible, and the best way to do this is to bung your potatoes in the fridge or freezer.

Ingredients For French Onion Scalloped Potatoes

  • Yellow potatoes
  • Campbells cream of mushroom soup
  • Dry onion soup mix
  • Whole milk
  • Cheddar cheese
  • Frenchs crispy onions

In my never-ending love for potatoes, Ive found that every variety of potato has its very own purpose.

Red potatoes are great for roasting. I love me some roasted potatoes with breakfast, but theyre not the best for dishes like these homemade scalloped potatoes. Theyre just not starchy enough.

Thats why I stick with Yukon gold potatoes for this recipe. Theyve got the perfect amount of starch to help thicken up the creamy sauce while everything bakes.

What Temperature To Roast Potatoes

How To Make French Onion Potato Soup By Rachael

You might be surprised the temperature range of roasting potatoes is a bit narrow. Anything below 350 degrees the insides of the potatoes dry out completely long before the outsides brown.

Cooking potatoes above 450 means the outsides can cook and burn leaving you with insides that arent quite done. Ideally, I like to roast potatoes between 375 to 425 degrees.

How Do You Make French Onion Potatoes

French onion potato bake

Once youve gathered all your ingredients and sliced your onions, its time to get down to the business of mouth watering food makin.

Preheat your oven to 400 degrees or to a low broil if you have that option. Take the potatoes out of the package and place them into a large bowl. Cover the bowl with a paper towel and microwave it on high for 5 minutes. Take it out of the oven, stir up the potatoes, and put it back in the microwave for another 5 minutes.

If youre like me and you can multitask like nobodys business, then while your potatoes are microwaving, you can go ahead and start to cook the onions. First, melt the butter in a large, oven-safe skillet over medium-high heat. Add the onions and a bit of broth and saute about 3-4 minutes or until they start to go all see-through and smell up the whole house . Keep cooking another 15 minutes until they start to caramelize and become super tender. Use tongs to transfer them to a bowl. Cover the bowl to keep those yummy onions all nice and warm.

Turn your attention back to the pan and add in the oil and potatoes and cook them for about 5-8 minutes. The goal is to get all the potatoes warmed through and also crispy on the edges. When you achieve that, put them on a plate and cover them as well to keep them warm.

The onions go back in the pan, along with flour. Stir that a bit, then add in the beef broth, cooking and stirring until your mixture comes to a boil. Season with salt and pepper to taste.
