    Canning Homemade Chicken Soup

Place chicken broth and chopped chicken in a stock pot. Bring to a boil. Homemade broth makes superior homemade chicken soup.

Chop all your vegetables. I use about 1 cup each celery and onion and 2 cups carrots. You can alter the types of vegetables as long as you end up with about 4 cups total.

Add vegetables to stock pot and bring to a boil.

Add salt and pepper. I use about 1 Tbsp. salt. I dont really measure my pepper, just shake some in.

Add any seasonings that you prefer. We like ours with just the ingredients listed.

You might like to add dill or basil. Remember that fresh seasonings may get stronger as they are canned. If you add bay leaves, let the soup simmer for a bit to get the flavor throughout, but remove the bay leaves before filling jars. The only herb I read that is not a good idea for canning is sage. Apparently it gets very strong in the jars. But Ive never heard of adding sage to chicken soup anyway.

Using a slotted spoon, add your solid ingredients to the jars. Aim for no more than 1/2 filled with solids. Then go back and top off each jar with the cooking broth.

    Leave 1-inch headspace.

Place your lids on and process according to pressure canning instructions.

    • 3 parts dried thyme
    • 1 part onion powder

Mix it all up in a bowl or mortar and pestle before storing in a glass jar. You can also use this seasoning mix for other chicken dishes!

    Make With A Whole Chicken

Chicken Noodle Soup with Ethiopian Spices in Instant Pot ...

I love making my Grandma’s soup with a whole chicken. The raw chicken cooks in the soup! If you do not have a whole chicken on hand, you can easily use other chicken parts…it is best to use chicken with the bones as the bones add a lot of nutrients to the soup while cooking.

Add your raw whole chicken to a stockpot. Add in low sodium chicken broth, seasonings, vegetables, and water. Cover and bring the chicken soup to a boil. Turn down the heat and allow this chicken soup to simmer for two hours.

What Noodles Are Best For Chicken Noodle Soup

How To Make Spiced Winter Chicken Soup By Rachael

If you truly want a hearty chicken noodle soup, its a must to use those fat plump homemade noodles. My mom always made her own. Sadly to say, Ive never tried making them, so I purchase homestyle noodles from the freezer section at the grocery store.

Theyre thick, theyre chewy, the are already cooked and very reminiscent of homemade.

As far as dried noodles, if you can find Kluski noodles, thats also a very good choice. And specialty markets, and Amazon will have dried Amish noodles that also work very well.

Please try not to use dried thin egg noodles from the packaged pasta aisle at the market, they just dont have that same homemade comfort food feel. Theyre thin and the end result will have you feeling more like youre eating canned soup. With that said, they will work for this soup.

    Chicken Stock Vs Chicken Broth

Chicken stock and stock broth are very similar, and they can generally be used interchangeably. In a pinch, if you dont have one, use the other.

Broth and Stock are made in a similar way, but still, chicken stock and chicken broth are not exactly the same. Both are liquids made by boiling chicken bones and/or meat along with vegetables.

The difference is that chicken stock tends to be less seasoned, and is perfect as a base to make sauces, gravies, etc. Chicken broth, on the other hand, is well-seasoned and full of flavor, so its ready to consume as is.

This Chicken Broth recipe is perfect to use in soups and casseroles, or to just sip on its own.

Simple Tips For Making The Best Chicken Noodle Soup

    • Save Time: cook the chicken the day before and shred it before putting in the refrigerator. Refrigerate the broth, then scrape the âscumâ off the top before making the chicken noodle soup. Vegetables can be cut up in advance as well in order to save time on the day you plan to make the soup.
    • Vegetable Size: cut vegetable to 1/4â³ thick to avoid them getting mushy while simmering.
    • Add More Broth: the noodles will absorb a lot of broth so you may need to add additional broth as needed, especially when reheating as leftovers.
    • Seasonings: Adding seasonings is an essential part of making delicious chicken noodle soup. You can start with the amounts that I share in the recipe, but you may find that you need to alter the amounts for your taste.

    Easy Homemade Chicken Seasoning Recipe

If you have several hours available, making homemade chicken noodle soup from scratch is the best way to make soup. I like to start in the morning time, simmer the whole chicken, and allow it to cool. After lunch, I finish making the soup and it is ready for serving at dinner.

This recipe is a two step process. First, you make the broth, which is what takes the longest amount of time. The chicken takes about 2 hours to cook and several hours to cool. Then, the second step is making the soup, which does not take more than 30 minutes once everything is prepped.
