This easy chicken soup takes about 30 minutes to make. The SECRET to amping up the flavor happens in the last 2 minutes of cooking. Adding dill and a pressed clove of garlic is what my Mother does for nearly all of her soups and I have adopted this in my own kitchen. Canning Homemade Chicken Soup
Place chicken broth and chopped chicken in a stock pot. Bring to a boil. Homemade broth makes superior homemade chicken soup.
Chop all your vegetables. I use about 1 cup each celery and onion and 2 cups carrots. You can alter the types of vegetables as long as you end up with about 4 cups total.
Add vegetables to stock pot and bring to a boil.
Add salt and pepper. I use about 1 Tbsp. salt. I dont really measure my pepper, just shake some in.
Add any seasonings that you prefer. We like ours with just the ingredients listed.
You might like to add dill or basil. Remember that fresh seasonings may get stronger as they are canned. If you add bay leaves, let the soup simmer for a bit to get the flavor throughout, but remove the bay leaves before filling jars. The only herb I read that is not a good idea for canning is sage. Apparently it gets very strong in the jars. But Ive never heard of adding sage to chicken soup anyway.
Using a slotted spoon, add your solid ingredients to the jars. Aim for no more than 1/2 filled with solids. Then go back and top off each jar with the cooking broth.
Leave 1-inch headspace.
Place your lids on and process according to pressure canning instructions.
The Best Chicken Soup Seasoning Blend
Many cooks prefer to pre-prepare a blend of seasonings for a variety of dishes. You can save time in the kitchen by doing this for your chicken soup! Make up a large batch of this mix and keep it in your pantry in an airtight glass jar.
- 3 parts dried thyme
- 1 part onion powder
- ½ part garlic powder

I love making my Grandma’s soup with a whole chicken. The raw chicken cooks in the soup! If you do not have a whole chicken on hand, you can easily use other chicken parts…it is best to use chicken with the bones as the bones add a lot of nutrients to the soup while cooking.
Add your raw whole chicken to a stockpot. Add in low sodium chicken broth, seasonings, vegetables, and water. Cover and bring the chicken soup to a boil. Turn down the heat and allow this chicken soup to simmer for two hours.
