Tuscan Bean & Rice Soup

If I had a cold or the flu, this deliciously warming soup would be my go-to nourishment. It has a wonderful tomato plus vegetable soup-base with a hint of spice that adds interest without too much heat. The rice within the soup was very fine, almost like small pieces of barley. I added some more pinto beans and frozen corn as I felt the soup was still light on add-ins. Both Tony and I enjoyed it I only wish I had another can on hand for my husband who now has a cold! Light In Sodium Lentil

Sadly, my first thought was, hmm, needs salt. Resisting the urge I reached for the pepper grinder instead. Both Tony and I thought this was a good move. While I often find Amys Chili a bit too spicy, this soup was on the bland side and lacked zing. Even after the peppering, the soup was still shouting for an additional herb or spice, but I couldnt quite make out which one. Cumin? Paprika? Rosemary? Perhaps some future experimentation will tell. Beyond the flavor, I liked the heartiness of this soup. Rich with lentils, and light on liquid, I could easily fill up on a whole can. But instead, I served it over brown rice, making a little lunchtime meal for two.

I have passed this place more times than I can count as I have never been a fan of peas in general so I assumed the same would be valid for the soup version. However, in the name of adventure, I made the stop and sat down to a bowl of green soup. Here is the review.

History

Andersens was founded in 1924 when Anton Andersen got the property and created Andersens Eclectic Cafe. After only a few months, they added a family recipe for split pea soup to the repertoire, which quickly became the favorite on the menu. In the 30s and 40s, they acquired rights to a cartoon that eventually became the logo and started advertising up and down the state. They have been doing the same thing ever since, making pea soup and getting people to stop with their funny signs on the highway, with more locations coming each year.

After pulling off Highway 101 on the Avenue of Flags, I made my way down to Andersons massive Danish building right off the freeway. Parking was easy in the lot behind the restaurant, right under the iconic logo that I have seen so many times on the drive.

I was on a mission though, so I headed into the massive restaurant to get my soup on.

The menu is overwhelming and reminds me of a diner with a wide range of options. I went with the pea soup in a bread bowl with toppings.
