Mistake : Adding Too Much Salt
As soup cooks, some of the liquid will evaporate, concentrating the saltiness of your ingredients.
To prevent over-salted soup, add just a small amount of salt to season ingredients at the start. Once the broth is in, taste and adjust accordingly.
If youre watching your sodium intake, its wise to season soup just before serving. And try to avoid adding other high-sodium ingredients, says Morningstar.
Canned beans or veggies can add a lot of sodium to a dish, which can be reduced by rinsing in a strainer before adding to the pot. If you over season your soup, adding unsalted liquid, like water, almond milk, or lite coconut milk will help dilute it, she adds.

The Aromatics And Seasonings
Now that youve chosen your soup, youll want to start building its foundation. Choose a cooking fat based on the cuisine that inspired your choice: butter for a French soup, olive oil for an Italian one. And use the same thinking to select an aromatic base of chopped vegetables, whether versatile garlic and onions, classic mirepoix, Italian soffritto, or Southeast Asian shallots and ginger. Then, select your seasonings, sticking to three or fewer to keep from muddying flavors.
- Onions and Garlic
For a basic aromatic foundation, heat 4 tablespoons of a neutral-tasting oil, like grapeseed or peanut, or olive oil in a soup pot over medium heat. Add 2 diced medium yellow onions and a generous pinch of salt. Stirring occasionally, cook until the onions are tender and the meat is just starting to brown. Add 3 cloves thinly sliced garlic and cook for another 20 seconds, just until the garlic gives off a savory aroma.
For a Mexican tortilla soup or pozole, crumble 1 tablespoon dried oregano into a base of onions and garlic. Add 1/4 cup basic pepper paste or canned chipotle peppers in adobo sauce and 1 cup chopped tomatoes.
For an Indian soup, turn a simple onion and garlic base into the foundation for an Indian soup by stirring 1 teaspoon cumin seed in with the garlic. Sizzle together for 20 seconds, then add 1/2 teaspoon turmeric powder.

Vegetable Soup Smooth Vs Chunky
This really comes down to personal taste and preference. With vegetable soup I usually opt to blend it and get it nice and smooth As I mentioned at the beginning of this post, soup is a cunning way to increase and consume a wider variety of vegetables.
Having said that, chunky vegetable soup is equally tasty and serves a purpose if you like the texture and chew of more solids in your soup. A happy medium could be to partially blend your soup, whether this is with a hand blender , or by using the manual blend button on a soup maker having cooked it on the chunky setting.
One thing to note though, if you are making a chunky soup, make sure you use a flavoursome stock or be prepared to add more seasoning to stop it tasting too bland.
The Secret To Restaurant
That elusive flavor that you cant quite name? The one that makes you crave sip after sip? Its dashi. Japanese dashi is a very simple broth made from kombu, a dried seaweed, and dried bonito fish flakes. The kombu and the bonito are rich with umami and give this simple soup an extra layer of savory flavor.
Vegetarian Tip: If youre vegetarian, use the kombu in your dashi, but skip the bonito flakes.
Making dashi takes just a few minutes a bit of extra time thats totally worth it for the trade off in flavor. When making it, be sure to remove the kombu before the water comes to a boil boiling the kombu can give the broth a bitter flavor and slimy texture. You can also make the dashi ahead of time and keep it in the fridge for up to a week or so.
Add Fresh Minced Garlic Curry Powder And Dried Thyme
Sautéing these ingredients for about 1 minute wakes up their flavors, but isnt long enough to risk burning the garlic .
Curry powder is the secret to making this soup so delicious. We arent adding much. You probably wont be able to pinpoint the flavor, but it adds some subtle intrigue and warmth to this soup. Ive also used curry powder in my lentil soup and chickpea noodle soup as well, and it always works like a charm.

Which Topping Can You Add Into Your Soup
The possibilities are endless when it comes to toppings! The best way to my opinion is to have a large variety of them and sliced or chopped properly! You can put thinly sliced leeks, carrots cut in juliennes, fresh green onions, fresh coriander, fresh dill, blanched broccoli floret, roasted mushrooms, fried onions, small cherry tomatoes cut in half, thin slices of steaks, steam fish, boiled eggs and much more! Tell Me More About Beef Pho Tasting Spicy
See, thats the thing about beef pho. Whether you order it at a restaurant or make it home, you can temper the spice to fit your personal taste. Traditionally, beef pho is made with ginger, garlic, cinnamon, black peppercorns and star anise. The salty taste comes from beef brother, fish sauce, Sriracha and hoisin sauce. Traditionally, hoisin sauce is made using toasted mashed soybeans with a bit of vinegar, sugar, garlic, starch, and various spices. Its quite delicious. And, in case you wondering, hoisin sauce is different than soy sauce, which is made of soybeans, wheat, salt, and water. Tamari sauce is similar to soy sauce, only without the wheat. Shew, thats a lot of soybeans creating delightful condiments! Oh, one more thing although not technically spices layering vegetables to this soup brings out the deliciousness. No Pasta Rice Dairy Or Thickeners In The Soup
While commercial canners can include things like pasta, rice, dairy and thickeners in their canned soups, home canners cannot. We dont have the right equipment to do it safely.
If I have a recipe that I usually add noodles or rice to like chicken soup then I can that recipe and just leave out the noodles and rice. When it comes time to serve the soup, Ill cook up some noodles or rice and add it to the soup just before serving.
If I have a recipe that uses dairy or needs thickening, I leave that out when I can the soup. When I heat it up to serve, Ill add a thickening agent and the dairy.
What Kind Of Miso
Miso is obviously the central ingredient to making miso soup. It is a fermented paste thats usually made from soybeans, but can also be made from brown rice, barley, and many other grains and legumes. It has a deeply savory, salty flavor very intense on its own, but perfect when mixed into a little hot dashi.
For restaurant-style miso, use red miso made from soybeans. If you like that flavor, try branching out into white miso , yellow miso , or any other kind of miso you find and feel like trying!

Dry Beans And Peas Must Be Cooked
Its so tempting to think, The pressure canner will cook the beans. So Ill just add them raw to the soup. But dont.
Those beans will absorb all the liquid and youll be left with a jar of thick soup with no liquid. Who knows if the heat was able to penetrate the interior?
Dried beans and peas will need to be completely rehydrated before adding to soup, just like you do when youre canning dry beans.
If dried beans or peas are used, they must first be fully rehydrated .
