I like simplicity and thats one thing I loved about those little ramen packets, they were just noodles and broth. Apparently lots of people add chunks of veggies to their ramen noodle soups, which I find kind of odd. However, I guess thats just because all Ive ever known are the packet kind, lol. So, that is how I created mine, with lots of fresh ginger and garlic thrown in. I topped with my favorite thing ever, green onions.

My version is not bombarded with gobs of sodium like the store versions, but it has a delicious, yummy and addicting soup base. In other words, its healthy and delicious.

My daughter is a huge fan of this soup. My daughter exclaimed, This is the best pasta of my whole life! haha. Furthermore, she even asked for it in her school lunch.

Yes, you can If you want to use a boneless chicken that is fine, but your broth might not have as much depth of flavor . I would use all broth and omit the water! Also, you can change the time to 15 minutes instead of 30!

And to add some veggies, I chopped up some baby bok choy, which is becoming one of my new favorite greens. You could easily sub kale, but the bok choy has such a mild flavor, I think you should try it! And you could put up to two cups in the soup, but if you arent sure, start with one cup.

I also used matchstick carrots and some scallions for garnish. You could easily add bell peppers, mushroom, or any other veggie you want to try out!

So when one of my amazing readers shared these organic, gluten free brown rice ramen noodles with me, I kind of died a little and immediately ordered some.

Recipe Step By Step Directions:

Step 1: Chop up the peppers and other vegetables. .)

Step 2: Sauté the peppers and scallions with olive oil over medium heat. If you want to arrange your gluten free ramen bowl in a fancy way, sauté the veggies separately. In a hurry? Sauté all of your vegetables together in the pan.

Step 3: Sauté the maitake mushrooms. Make sure to break them apart as they cook.

If you can’t find maitake mushrooms, feel free to use shiitake or another Asian mushroom.

Step 4: I am all about simplicity and this easy ramen broth is ready in just minutes. In a large pot, add the ramen broth ingredients. Bring to a boil, then reduce the heat, cover and allow to simmer so that the flavors all cook in together.

Step 5: Arrange all of your ramen ingredients in the bowl and pour the broth on top. Enjoy!

How To Make Homemade Gluten

I looked into how to make ramen noodles from scratch and it left me scratching my head. I cannot imagine duplicating that process to make gluten-free ramen noodles no way!

Ramen noodles are more alkaline than regular pasta. This means they have a higher pH, which gives the noodle the taste, color, and texture youre accustomed to.

To make wheat-based ramen noodles, you need a high-protein flour, which means a high-gluten flour. Alternatively, some people add additional vital wheat gluten to make their ramen noodles hold together well. Well, we cant do that in gluten-free cooking so the point is moot!

Additionally, you need sodium carbonate to alkalize the noodles. If you live near an Asian supermarket, you should be able to easily find some sort of alkaline salt to use.

Of course, will also need a pasta machine or cutter to cut thin spaghetti-like strands of the ramen.

This blogger attempted to make homemade gluten-free ramen noodles, and was successful. But man does it look like a lot of work!

I decided this arduous task was best left to the experts, and I simply buy gluten-free ramen at the supermarket without want or desire to make my own.

How To Make This Gluten Free Ramen Noodle Recipe

  • In a medium sized pot heat the oil. Add the kombu, mushrooms, onion and garlic. Sauté over medium low heat until the onions are translucent. Then, add the carrots and celery, continue to sauté for another few minutes.
  • Add tamari, miso paste, and water. Whisk until the miso is dissolved. Add some lemon juice, nutritional yeast and cilantro. Bring the soup to a simmer for 10-15 minutes. Add the gluten free noodles and cook for another four minutes. Stir to break apart the noodles. Serve immediately.
