  • Preheat the oven to 350 degrees F .
  • Mix hash browns, cream of chicken soup, Cheddar cheese, sour cream, butter, onion, salt, and pepper together in a bowl. Arrange in a 9×13-inch baking dish. Sprinkle on top. Drizzle butter over the cornflakes.
  • Bake in the preheated oven until the sauce is bubbly and the top is golden brown, 1 to 1 1/2 hours.

Hash Brown Potato Casserole is a fabulous potatocasserole recipe. It has lots of hash browns in a creamy sauce of cream of mushroom soup, sour cream, and rich cheddar cheese, then sprinkled with sour cream and onion potato chips to give it a little more zip. Its amazing with the luscious interplay of flavors. Its also fairly quick and easy to make too. Its one of our favorite holiday side dishes.

One holiday my daughter-in-law brought this casserole for dinner and it is a keeper! Im not claiming this is low in caloriesits rather more of a comfort foodbut it sure is delicious. While I received this recipe from my daughter-in-law, it is all over the Internet in many versions. Perhaps this is a recipe from Ore-Ida Potatoes, but I really have no idea who created the recipe. This is the version we like.

When I first posted this recipe in June of 2012, and then reposted the pictures in November 2013, my camera is just a cheap iPhone quality so the pictures were blurry, grainy, not properly positioned or presented, and dark and dreary. Pretty bad, huh?

Its amazing this recipe had any pins, yet it did. I recently remade this recipe for a Christmas party , and redid the pictures which depict this casserole in a much better light. ha, ha!

  • Make and assemble according to directions up to thepoint of baking. You can add the topping if you want the casserole 100%assembled OR for crispier topping, store it separately and add rightbefore baking.
  • Let casserole cool completely .
  • Wrap casserole securely with plastic wrap, then withaluminum foil.
  • Label and freeze for up to 3 months.
  • When ready to eat, defrost casserole in therefrigerator for 24-48 hours until completely thawed.
  • Let casserole stand at room temperature for 30minutes before baking.
  • Bake at 350 degrees F for 45 minutes, uncover, andbake an addition 15-20 minutes or until hot and bubbly and cheese ismelted.

How To Make Chicken Hashbrown Casserole:

  • Preheat oven to 400 degrees.
  • In a large bowl combine together cheddar cheese, hashbrown, salt, pepper, sour cream, cream of chicken soup, milk and chicken.
  • In a small mixing bowl, mix together the crushed cornflakes with the melted butter. Sprinkle over the hash brown potato casserole.
  • Bake for 30 minutes to an hour or until golden brown.

Salt and pepper to taste. Let set before serving.

Absolutely! This recipe is very similar to the recipe for funeral potatoes, which you may know got its name since it is regularly served at many funeral luncheons. To turn this easy hash brown casserole into funeral potatoes, you simply add a topping! Ive listed a few topping options below.

  • Corn Flakes many people use buttered corn flakes as the topping.
  • Ritz Crackers when I make it, I prefer to use Ritz Crackers for the topping like I do for my squash casserole.
  • Panko you can also use Panko crumbs for the crispy topping.

This Hash Brown Casserole with Corn Flakes is one my most popular dishes and with good reason. Shredded hash browns, cream of chicken soup, sour cream and shredded cheese are topped with buttery corn flakes to make a dish that is the ultimate comfort food. This recipe was inspired by my Cheesy HashBrown Casserole which is great to try if you want another variation on this dish. Cracker Barrel does an amazing hash brown casserole that also inspired me. You may have also heard this dish referred to as funeral potatoes since it is a dish people will often bring over after a funeral.

Do I Have To Use Gruyere

Why We Love This Classic Cheesy Hash Brown Casserole

Hash brown casserole is a big hit in our household. Its the most asked for a side dish to serve on Easter, Thanksgiving, and Christmas Eve. There is just something so festive and comforting about sharing a warm, delicious casserole loaded with creamy potatoes and cheese!

Our love of this hash brown potato casserole recipe began at a Christmas potluck many years ago. Someone brought this wonderfully cheesy dish and it was love at first bite. She called it a copycat Cracker Barrel hash brown casserole recipe. I asked for the recipe and over a decade later, Im sharing it with you here.

Although we call it hash brown casserole, some know this potato dish as funeral potatoes. According to Southern Living, funeral potatoes are a potato-based dish in casserole formthe ultimate comfort foodthat is usually served hot at potlucks. Its a widespread tradition to serve them at gatherings held after funerals, hence the name.

By any name, it is impossible to resist the cheesy potato goodness in this casserole. You only need one bowlto make it in under an hour with a handful of pantry staples like frozen shredded potatoes, cream of chicken soup, and simple spices. Plus, as we might have mentioned, plenty of cheese!

How To Make The Hashbrown Casserole Recipe

Start the dish by adding the shredded cheddar cheese and diced onions to a bowl.

I used a very large bowl because once you get all of the ingredients in there, youll want plenty of room to be able to stir the hashbrowns and get them covered.

Next, add the cream of chicken soup and sour cream to the bowl and mix all of the ingredients together.

I like to mix these ingredients together before adding the hashbrowns because it just makes stirring and coating the hashbrowns that much easier.

Cream of chicken soup is going to add so much flavor to this dish. If youre not a big fan of chicken, try some cream of celery or mushroom for a different flavor.

Now that youve mixed everything well, add the hashbrowns.

Finally, pour the melted butter over the hashbrowns, sprinkle the salt and pepper on top, and stir until coated.

Spread it all into a greased 9 x 13 casserole dish and bake for 45 minutes.

You do not need to cover the dish while baking. Youll want the top to get nice and brown and crunchy.

How To Freeze Cooked Chicken Hashbrown Casserole

  • Casserole may be stored in an airtight container or freezer bag for up to three months.
  • Uncooked: Wrap tightly in foil and store in the freezer for up to three months. For best results, thaw in the refrigerator for at least 24 hours before baking. Bake time will most certainly need to be extended if the dish is still cold when its put in the oven
  • The glass in a prebaked casserole or leftovers Chicken Hashbrown Casserole in a baking dish should not be put directly in a hot oven because it might shatter. Ensure that the dish is at room temperature for at least 30 to 50 minutes before placing it in the oven

Are Frozen Hash Browns Just Shredded Potatoes

Frozen hash browns are not just shredded potatoes and that is why you cant simply swap them with shredded potatoes in this Hash Brown Casserole recipe. Frozen hash browns are steamed, shredded, blanched in water or oil and then individually flash frozen. This multi-step process removes excess moisture from the potatoes and makes them superior to use in this Hash Brown Casserole recipe than freshly shredded potatoes.

  • Soften onion or leeks and cabbage in the bacon drippings until tender per the recipe below.
  • Mash the potatoes with cream and butter. Taste and season with salt and black pepper. Fold in the cabbage and onion mixture.
  • Top this tasty dish with lots of butter, a sprinkle of parsley and/or crisp bacon. Heavenly.

    How To Make Ahead Hash Brown Casserole Instructions

    Cheesy Potato Casserole Recipe

    This copycat Cracker Barrel casserole is ideal as a make-ahead freezer meal recipe to keep on hand for meal trains, the holidays, potlucks, BBQs, or as a dish to share. Double the recipe and freeze one in the freezer so its always at the ready.

    If you plan to make this dish in advance and freeze, I suggest you use a foil container: Not only is it freezer-safe, but the container can be safely used in the oven as well to reheat it. Plus it is the ideal way to share this casserole with others for a meal train or when you need a dinner to share.

    Prepare the casserole as directed, without baking, and refrigerate for up to 3 days.

    Or prepare casserole without baking in a freezer-safe container, cover with a layer of aluminum foil, and freeze for up to 3 months. Again, a foil casserole pan works really well here. Then bake from frozen as directed, plus an extra 15 minutes or so until its heated throughout and the cheese is golden.
