Part of a healthier lifestyle means making a lot of what most people would buy at the store. Homemade soup is the perfect example of that and this tasty recipe for canned soup keeps well for almost three years on a shelf! I really wanted to learn How to Make Chicken and Vegetable Canned Soup!

I had done a quick search for how to can chicken soup on Google and found a concept of layered soup in a jar. One problem: I didnt want green beans and corn in my soup. One more problem: it isnt safe to can noodles, rice or creamy based items. This recipe for canned chicken noodle soup solves a bunch of problems it is tasty, easy, and safe to can.

As with any good recipe or canning job, the key to it is the preparation. In this case, the canned soup needs a lot of diced veggies potatoes, carrots, onions, and celery. Why potatoes? Noodles dont can well at all and the potatoes add that nice little bit of starch.

I liked to use cooked chicken that I got from Costco. They actually sell packaged breast meat from the extra rotisserie chickens! By dicing that up, it saves a lot of work from cooking and prepping the chicken myself.

In a large pot, I make a batch of chicken broth and keep it on the side, ready to go. This leaves us ready to make a big batch of canned chicken vegetable soup.

Can I Start With Raw Chicken

Yes! If you dont have shredded chicken on hand, there are a couple of ways to make this soup if youre starting with raw chicken breasts:

Chop & saute: Chop the chicken breasts into bite-sized pieces. Heat 2 teaspoons of olive in the saucepan set over medium-high heat. Alternatively, spray the saucepan with olive oil cooking spray. Cook, stirring occasionally, until the chicken is cooked through. Transfer the chicken to a bowl and cook the rest of the soup according to the directions. Add the cooked chicken back in at the end to reheat.

Poach the chicken:Poaching chicken is a fantastic way to achieve tender, shred-able chicken by simmering in hot broth. In the soup, add the chicken at the same time the broth is added. Place 2 small-ish chicken breasts on top of the vegetables, pour in the chicken broth, bring the liquid to a boil, then reduce the heat so that the liquid is simmering. Simmer until the chicken breasts are cooked through, which takes about 15 minutes. Transfer the chicken to a cutting board, shred it, then add it back to the soup after the orzo is cooked.

You can also use shredded rotisserie chicken breasts.

What You Need For Chicken And Vegetable Soup:

These are the main components of this recipe :

  • Chicken: As mentioned above, I used my Instant Pot Shredded chicken. Its great to have on hand for easy meals. Alternatively, keep reading for my directions for starting with raw chicken breasts .
  • Pasta: Almost any pasta shape will do. I used orzo, but ditalini and or elbow macaroni are other good small pasta options. If you want something a little bulkier, I recommend farfalle or rotini .
  • Vegetables: The standard mirepoix mixture onion, celery and carrots is the base for this soup. Frozen peas are added in at the end – no need to defrost them first.
  • Broth: Use your favorite chicken broth, either homemade or store-bought. I used low sodium, then adjusted the seasoning at the end, but regular chicken broth works perfectly well.
  • Seasoning:Italian seasoning, fresh garlic, parsley, salt and pepper are all you need.

What To Serve It With

  • A Loaf of Crusty Bread : If you have the time, I highly recommend baking your own crusty bread like my No-Knead Bread. Theres nothing better than dunking a chunk of homemade bread into homemade soup!
  • Savory Cornbread Muffins: These are so good that I typically keep a batch of them in the freezer during the winter months to serve with soups and chilis. Flavored with scallions and cheddar cheese, these go well with anything, but especially brothy dishes!
  • A Simple Salad: If youre wanting an extra serving of veggies with your soup, a simple salad like my Brussels Sprout Kale Salad or my Fall Harvest Salad would be delicious!
  • Wild Rice: While wild rice is delicious all on its own, it also works wonderfully with soups, especially chicken soups. Its nutty, earthy flavors would pair well with the veggies in this chicken tomato soup, as well as the cumin and paprika. Just cook it ahead of time, portion it into bowls, and ladle the hot soup on top.   • Your Favorite Crackers: Oyster crackers, Saltines, or even tortilla chips would be a delicious, salty, crispy treat to enjoy with this soup.

Shred The Chicken Into Pieces

Once the chicken thoroughly cooks, break it down by shredding it with a fork. Smaller pieces make it easy to fit on a spoon. Alternatively, you can chop the chicken into cubes if preferred. For the soup, I seasoned the veggies with some ground cumin. It pairs well with the paprika used on the meat and gives the soup a warm flavor that works beautifully with the vegetables and stock.

Suppose you have it and love the taste you can also add in a tablespoon of Italian seasoning, which is basically a combination of oregano, basil, thyme, rosemary, parsley garlic powder.

This chicken vegetable soup makes a good candidate for the freezer. Just be aware, when you thaw the soup some of the vegetables and potatoes may be softer, but the flavor is still delicious.

Chicken vegetable soup is on my table almost every week during the colder months. Its super filling and I love that its really a complete meal in one pot. Best of all, it helps my kids to get their veggies in!

How To Make Chicken And Vegetable Soup:

Healthy Vegetable Chicken Soup

Start by sautéing the celery, onion, and carrots in a soup pot, then add in the garlic and Italian seasoning. Stir in the tomato sauce, chicken broth, and potato. Bring the soup to a boil and simmer for 15 minutes. Add in the chicken and remaining veggies and cook for another 5-10 minutes. Easy peasy!

Can You Put Raw Chicken In Soup

This recipe calls for cooked, diced or shredded chicken. I typically use the meat from a store-bought rotisserie chicken for a shortcut, but you can make your own chicken broth at home and use the meat from the broth if you prefer. By adding the chicken to the pot at the very end, it doesn’t get dried out while you wait for the veggies to cook.

You can also start with raw chicken for this soup. To do so, cut up about 2 pounds of raw, boneless, skinless chicken breasts or thighs into bite-size pieces. Season the chicken liberally with salt and pepper, and then brown the chicken in the Dutch oven with about 1-2 tablespoons of olive oil. Remove the chicken to a plate and set aside as you prepare the rest of the soup. Add the cooked, diced chicken back to the pot at the end of the cooking time, as instructed.

What If I Dont Have All The Ingredients

Dont let that stop you! You can use your favourite vegetables in this soup and feel free to substitute what I have used. I would keep the base vegetables onions, celery and carrots and freestyle on the rest.

If you leave the chicken out and use vegetable stock then this soup easily becomes vegetarian/vegan. By the way, if you are avoiding pasta you can easily leave it out or replace it with rice, beans or chickpeas.

How Do You Make Chicken Vegetable Soup

This soup starts with the classic base of onions, carrots and celery. You can use any type of cooked chicken here such as roasted cubed chicken, shredded rotisserie chicken or leftover chicken.

The veggies are sauteed in a little butter, and then more ingredients go into the mix including the chicken, tomatoes, and potatoes.

The soup should simmer until the potatoes are tender, and then you can stir in the last of the veggies which include corn and green beans. Add a little parsley and dinner is served!

Add A Variety Of Vegetables

Before adding veggies to this chicken and veggie soup, take stock of which ones take the longest to cook compared to those that cook quickly.

In general, vegetables like onions, carrots, celery, parsnips, leeks, and potatoes take longer to cook, so consider adding these first. For the best flavor, I even cook the onions, carrots, and celery in a little olive oil first before simmering.

About 20-30 minutes before your soup has finished cooking, add vegetables like tomatoes, corn, green beans, bell peppers, zucchini, and other squash, and mushrooms. These vegetables cook faster due to their high moisture levels.

Finally, leafy greens like kale, spinach, and chard are left until about 5-10 minutes before serving. These vegetables are the most delicate and most likely to lose their vibrant appearance.

We wouldnt recommend making this soup creamy. Its delicious as is. If you wanted to make it creamy you can follow 2 different methods:

  • Dairy Free: Add a peeled, halved russet potato to the soup while cooking. When the soup is finished cooking, remove the potato and blend it with 1 cup of broth. Return to the soup.
  • Dairy: Add 1/2 cup room temp heavy creamy or milk to the pot when finished cooking. Stir to combine.

Yes, you can make instant pot chicken vegetable soup. Heres how to make it:

  • Set your instant pot to sauté for 10 minutes. Sauté onions, garlic, and celery for 10 minutes.

  • Cover and set to sealing, manual pressure for 12 minutes.
