Can You Make Potato Soup Ahead
Potato Soup can absolutely be made ahead of time! Its a great option to make in the morning for dinner that night, or a day in advance. Prepare as directed, allow to cool, then store in an airtight container for about 3-5 days in the refrigerator. Over time, the white sauce in the soup will start to break down and make it a little more watery with each passing day, so the best quality will be within the first few days. Reheat on the stove over low heat, stirring occasionally, or in the microwave.

Proper Storage And Reheating Tricks
In case you have leftovers, do not worry because you can keep your potato soup in the fridge for later use. Use a high-quality and air-tight food container to store them.
- In the fridge: Your food will be safe for up to 4 days, so mark the date carefully so you can consume it safely.
- In the freezer: Though the texture of potato soup is not too ideal for freezing, you can still do it if needed. For the best result, the soup should be smooth, not chunky, and your soup can last for up to 3 months in the freezer if stored properly.
Once you want to enjoy it, you can reheat the soup by:
- A stovetop: Set the medium-low heat to reheat the dish. Do not forget to stir the soup.
- A microwave: Cover the soup with a plastic wrap or a lid so it will not splat during the heating. Heat them for 30 seconds to 1 minute until hot.
Important trick: As the soup is cool, it will be a bit thicker than the freshly-made one so you might want to add more liquid to make them thinner when reheating.

Should Potatoes Be Cooked Before Adding To Soup
Nope, they go in the pot raw, along with the carrots.
Add all the vegetables to a pot, at least 3 quart capacity. Add about 3 cups of water to the vegetables. You want the water to just barely cover them, so if its a little short you can add more.
Next add the heaping tablespoon of Better Than Bouillon Chicken Base and 1/4 cup chopped parsley. Dried parsley is a totally fine substitute!
Bring the pot to a boil on high, and then reduce to a simmer and cook for about 20 minutes, or until the vegetables and carrots are extremely tender. Like, slide a fork in with no resistance level tender. No cheating. We dont want any crunchy, undercooked potatoes in our soup thankyouverymuch. Vent the lid while cooking to let some of the steam escape.
While that cooks, get out another mediumish pot and make your bechamel. Thats a fancy word for white sauce.

Chicken And Dumpling Soup

You need just 30 minutes for our chicken and dumpling soup that will satisfy a cold weather comfort food craving. With pillowy dumplings that come together in a snap, healthy veggies, and a rich-tasting chicken broth floating with chunks of chicken meat, it’s a lighter but still satisfying version of the classic chicken and dumplings.
Other Additions To Vegetable Soup
I like to add herbs, either dried herbs at the beginning of the cooking process or fresh at the end. Or both.
I also find that vegetable soup needs a bit of brightness and zing. I therefore always put in a bit of lemon juice just before serving. It makes the biggest difference. Really. Taste the soup before adding lemon juice and then add a bit and taste again. Its a whole different world.
Same goes with Worcestershire sauce . Add a little bit of it just before serving. It has a meaty warm flavor that bulks up the soup. Worcestershire is a great ingredient to add to any soup or sauce when you feel its just missing something. Worcestershire sauce fixes it.
Note that Worcestershire sauce is not vegetarian since it contains anchovies. To make this soup vegetarian, you can skip the Worcestershire or try out a vegan brand of the sauce.

Thai Chicken Soup With Butternut Squash & Bok Choy
Why We Love It: Butternut squash makes an appearance again! This time, instead of the typically creamy take, its cubed and mixed together with plenty more vegokra, baby bok choy, and mushroomsplus all my favorite Asian-inspired flavors. Its weekend fall comfort food at its finest.
Hero Ingredient: While the final touch of thinly-sliced red chili pepper or jalapeño is technically optional, in my heat-loving book, its a necessity.
Mistake : Adding Pasta And Grains Too Early
This is related to the first mistake and can result in mushy and overcooked pasta and grains.
An easy way to prevent this is to cook pasta and grains separately, then scoop them into the soup when ready to eat.
This strategy works well, particularly if there lots of leftover soup it prevents the pasta from sitting in broth for too long and getting soggy.
While its trickier to cook grains in the soup, its doable! Remember to add more liquid into the pot.
Then, add the grains with just enough time to cook. Keep in mind this is different depending on the grain.
Barley or wild rice can take up to an hour. Brown rice can go in with about 25 minutes remaining, and pasta only needs about 10 minutes.

Vegan Potato Soup From Well Plated By Erin
Why We Love It: Potato soup, while one of my favorites, has been known to weigh down diners with its copious amounts of cream. Thankfully, cashews made their way into the plant-based cooking scene, and our vegan soups have been beautifully creamy ever since. Combine their luscious mouthfeel with a bit of nutritional yeast, and youll have a cheesy soup thats just as good as the real, dairy-laden deal.
Hero Ingredient: Nutritional yeast is my secret weaponits the star ingredient you didnt know your pantry needed. That is, until now of course.
To Blend Or Not To Blend
It’s really up to you if you blend your soup or not and when you do it. It can be nice to blend a leek and potato soup but then throw in a few finely sliced bits of leek a few minutes before the end to give a little texture. Chicken can become a bit grainy when blended, in this recipe for Thai chicken and sweet potato soup, the sweet potato is blended and then the chicken added and cooked after. If you’re not planning to blend, cut chunks into no more than bite-sized pieces to make it easy to eat.

Favorite Autumn Soup Recipes
In Chicago, soup season lasts from September towell, way later than it should. I make soup recipes the whole way through, but I especially crave them now, in the heart of autumn. These 4 easy soup recipes are my favorites at this time of year. Theyre cozy, comforting, and filled with aromatic flavor from herbs like rosemary, sage, and thyme.
If you see a bunch of beautiful fall leeks at the farmers market or store, snatch them up to make this recipe. Its a lighter version of the classic soup, made with blended white beans instead of heavy cream.
What Vegetables Go In The Soup
Whatever vegetables are in the fridge, go into my soup. Carrots, celery, that lonely half of a bell pepper, the leftover steamed green beans. Then I add some frozen vegetables, if I have them. And usually a can of drained beans and a can of diced tomatoes.
Thats pretty basic. But whats most important to the vegetable soup is the extra flavors that you add. You need to make sure that there are layers of flavor to boost up the veggies and make them shine.
