How To Make White Bean Bacon Soup:

Dice the bacon, onion, carrots, and celery.

In a high-sided frying pan, cook the bacon over medium heat until crisp.

Remove bacon to a paper towel-lined plate leaving the bacon grease in the pan.

Add the onions, carrots, and celery to pan and cook until onions are translucent about 5 minutes.

Add the jarred minced garlic and tomato paste and cook, stirring, for another minute.

Add the chicken broth, water, canned beans, bay leaf, thyme, salt, pepper, and half of bacon.

Bring to a boil then reduce to a simmer and cook, partially covered, for about 20 minutes or until vegetables are soft.

Discard the bay leaf and remove half of the soup, and puree the remaining soup using a hand-held immersion blender.

Stir the unblended soup back into the pan and add the remaining bacon, reserving some for garnish, if desired.

If you want to thicken the soup, ladle out 2-3 tablespoons of broth from the soup. Stir in 1 tablespoon of cornstarch. Return the broth to soup and stir until thickened to desired consistency.

Serve in two large soup bowls and enjoy.

The Big Green Pot: Bendy Briar Label Bacon Soup

I love to cook and the Big Green Pot is my trusty enameled cast iron pot in which I experiment with soups, stews, sauces, you name it. Its become sort of a physical metaphor for all of my cooking and experimenting. I should mention, Im really bad at following recipes. To me recipes are more like jumping off points or reference, there to inspire or to be referred back to for a particular method, time, or temperature, but rarely if ever to be followed soup-to-nuts. Various members of our family also have different food intolerances so Im often avoiding and adapting to accommodate that when I cook.

In addition to reading cookbooks and food magazines for grown ups, I love to read childrens books with recipes in them. As a kid, I was enchanted by the CRANBERRY and OLD WITCH books by Wende and Harry Devlin. I remember being introduced to them one crisp fall afternoon, by my elementary school librarian, Mrs. Bright, who read us CRANBERRY HALLOWEEN.

Of course, as my sons get older, their tastes in books change, it feels like daily. Needless to say, I was completely on board when my ten-year old recently asked me to make him a recipe from a new book he was reading: BENDY & THE INK MACHINE JOEY DREW STUDIOS EMPLOYEE MANUAL.

SO, we pulled out the Big Green Pot and made the Bendy soup as we called it . It turned out great! My son was so thrilled that he gobbled it up and said he would definitely eat it againmusic to any cooking parents ears.

The Salt Question With Bean And Bacon Soup

The salt content of this soup will vary based on the saltiness of the bacon and the stock used. Taste for salt at different points. You’ll add salt in Step 3, but be sure to taste the soup again in Step 5, so you can adjust with more salt if needed.

If you’re concerned that the soup will be too salty, start with salt-free stock. You’ll need to taste along the way and add more salt than if you started with salted stock, but you’ll be able to control the sodium level more carefully.

  • 15 bean soup is SUPER filling and satisfying. Its full of protein, fiber, and healthy fats, all of which go a long way toward keeping you full. Unlike soups that are more broth than other ingredients, this one is packed with 15 different types of beans, bacon, celery, onions, and diced tomatoes.
  • Its a great option if youre on a budget, especially if youre trying to feed a group. Dry beans are typically pretty cost effective, and they keep well so you can buy in bulk to take advantage of better values. Replace the bacon with prosciutto or ham if you find a good deal for either, or use the leftover ham from your holiday dinners. You can even stretch it a little further by adding another cup or two of chicken broth or another can of diced tomatoes.
  • You can totally cook this for the weeks meal prep, or freeze a batch to enjoy later in the season. It keeps and reheats really well just make sure to let it cool completely first, then refrigerate or freeze it in an airtight container. 15 bean soup can be refrigerated up to 5 days, and frozen up to 3 months.

Start by browning the bacon in a large pot or Dutch oven. Once crisp, remove from the pan with a slotted spoon, leaving behind a few tablespoons of bacon fat. Add the flour and cook for a few seconds then pour in the chicken stock and cream.

Heres what you need to make Bendy Bacon Soup:

I knew from my Easy Slow Cooker Cheesy Potato Soup recipe that frozen hash brown potatoes work great in slow cooker soup recipes, and save a ton of time . For the beans, I used Great Northern, but other white beans like Navy or Cannellini would work as well.

You start this recipe by cooking the bacon. Since bacon is a key ingredient in this soup (it is called Bacon Soup, after all, I used a whole 12 oz. pack. Cut the bacon into 1 pieces, then cook in a skillet until just crisp. Cool on a paper towel-lined plate to soak up some of the excess bacon grease.

Place the frozen hash brown potatoes, beans , diced onion, chopped celery, chopped carrots, and cooked bacon in a slow cooker.

Pour in a 28 oz. carton of beef broth, then stir into the vegetable and bacon mixture along with salt, pepper, and garlic powder.

Cover and cook on low for 4-5 hours, until the celery and carrots are tender.

Here is what it looks like after it is ready. Since we had some leftovers, we noticed that the broth actually thickened as it cooled in the fridge, and made delicious leftovers for lunch the next day.

Heres the recipe! Dont forget to pin this one for planning your own Bendy and the Ink Machine birthday party.
