How To Make White Bean Bacon Soup:

Dice the bacon, onion, carrots, and celery.

In a high-sided frying pan, cook the bacon over medium heat until crisp.

Remove bacon to a paper towel-lined plate leaving the bacon grease in the pan.

Add the onions, carrots, and celery to pan and cook until onions are translucent about 5 minutes.

Add the jarred minced garlic and tomato paste and cook, stirring, for another minute.

Add the chicken broth, water, canned beans, bay leaf, thyme, salt, pepper, and half of bacon.

Bring to a boil then reduce to a simmer and cook, partially covered, for about 20 minutes or until vegetables are soft.

Discard the bay leaf and remove half of the soup, and puree the remaining soup using a hand-held immersion blender.

Stir the unblended soup back into the pan and add the remaining bacon, reserving some for garnish, if desired.

If you want to thicken the soup, ladle out 2-3 tablespoons of broth from the soup. Stir in 1 tablespoon of cornstarch. Return the broth to soup and stir until thickened to desired consistency.

Serve in two large soup bowls and enjoy.

Start by browning the bacon in a large pot or Dutch oven. Once crisp, remove from the pan with a slotted spoon, leaving behind a few tablespoons of bacon fat. Add the onion and mushrooms to the pot and cook until the onions have softened. Add the fresh thyme and crushed garlic and cook for another 30 seconds. Add the flour and cook for a few seconds then pour in the chicken stock and cream.

Bring the soup to a simmer and cook for 10-15 minutes until the soup has thickened slightly. While the soup is simmering, cook the gnocchi in a large pot of salted water until it floats to the surface. Drain the gnocchi then add to the soup along with half of the bacon. Cook for another 5 minutes then season with salt and pepper. Serve the soup in serving bowls topped with the rest of the bacon. I also added fried sage leaves but that is optional.

  • 1 leek, trimmed, halved, washed, thinly sliced
  • 2 garlic cloves, crushed
  • 4 rashers middle bacon, chopped
  • 1 celery stalk, trimmed, chopped
  • 1 medium carrot, peeled, chopped
  • 1 small swede, peeled, chopped
  • 1/3 cup pearl barley
  • 6 cups Massel chicken style liquid stock
  • 1 medium , halved, sliced
  • 1 medium desiree potato, peeled, chopped
  • 1 tbsp chopped fresh basil leaves
  • Select all ingredients
  • Step 1 Heat oil in a large saucepan over medium heat. Cook leek and garlic , stirring, for 2 to 3 minutes or until leek has softened. Add bacon , celery , carrot and swede . Cook, stirring, for 5 minutes or until bacon is golden.
  • Stir in zucchini and potato . Simmer for 20 minutes or until vegetables are tender. Add basil . Stir to combine. Serve.

I knew from my Easy Slow Cooker Cheesy Potato Soup recipe that frozen hash brown potatoes work great in slow cooker soup recipes, and save a ton of time . For the beans, I used Great Northern, but other white beans like Navy or Cannellini would work as well.

You start this recipe by cooking the bacon. Since bacon is a key ingredient in this soup (it is called Bacon Soup, after all, I used a whole 12 oz. pack. Cut the bacon into 1 pieces, then cook in a skillet until just crisp. Cool on a paper towel-lined plate to soak up some of the excess bacon grease.

Place the frozen hash brown potatoes, beans , diced onion, chopped celery, chopped carrots, and cooked bacon in a slow cooker.

Pour in a 28 oz. carton of beef broth, then stir into the vegetable and bacon mixture along with salt, pepper, and garlic powder.

Cover and cook on low for 4-5 hours, until the celery and carrots are tender.

Here is what it looks like after it is ready. Since we had some leftovers, we noticed that the broth actually thickened as it cooled in the fridge, and made delicious leftovers for lunch the next day.
